Arroz de feijão, couve e morcela | Bean, cabbage and black sausage rice

Este arroz é tudo de bom. É o conforto que falta nos dias frios, chuvosos e cinzentos. É o abraço apertado daqueles que amamos. É as mãos enrugadas da avó Nandinha enquando escolhia escolhia os feijões. O sorriso dos meus pais. O beijo do Vel.
Este arroz é a lembrança dos dias passados e dos que estão para vir. É o ritual terapêutico de demolhar e cozer feijão e sentir-me 25 anos mais nova (tempo para onde foste???) na cozinha da avó Nandinha. É o cheiro a cevada acabada de fazer em casa da avó Ana nas visitas de domingo. É o sorriso do babe (será sobrinho ou sobrinha?) que vai nascer em Abril.
Este arroz é tudo. Somos nós. E vocês.


Arroz de feijão, couve e morcela

1 cebola grande, picada
3 dentes de alho, picado
Azeite
1 morcela da Guarda, sem pele, fatiada
1 couve portuguesa, em juliana
8 bagas de zimbro
500g arroz vaporizado
350g feijão maravilha, demolhado e cozido em apenas água
Sal e pimenta

Num tacho largo suar a cebola com o azeite durante 5 mins. Adicionar o alho e dourar. Colocar as fatias de morcela no azeite e "fritar" de ambos os lados. Juntar a couve e saltear durante 5mins. Adicionar a água onde o feijão cozeu com água suficiente para perfazer 1,5L, o zimbro e temperar com sal e pimenta. Assim que ferver, adicionar o arroz e mexer. Após 10mins, juntar o feijão e deixar cozinhar. Rectificar os temperos antes de servir.

This rice is the memory of the days gone by and the ones still to come. It's the therapeutic ritual of soaking and boiling beans to feel 25 years younger (time where art thou???) in grandma Nandinha's kitchen. It's the smell of fresh barley drink at grandma Ana's house on Sunday visits. It's the smile of the cute little baby (nephew or niece?) due in April.
This rice is all that. It's us. And you.


Bean, cabbage and black sausage rice

1 large onion, finely chopped
3 garlic cloves, finely chopped
Evoo
1 black sausage from Guarda, without skin and sliced
1 portuguese cabbage, Julianne cut
8 juniper berries
500g parboiled rice
350g wonder bean, soaked and boiled in water only
Salt e pepper

In a large pan, soften the onion in the evoo for 5mins. Add the garlic and mix until golden. Place the sausage slice and "fry" both sides. Add the cabbage and sautée for 5mins. Pour in the water from boiling the beans together with enough water to make 1,5L, the juniper berries and season with salt and pepper. Bring it to a boil add the rice, mixing and leave to cook for 10mins. Add the beans and finish cooking. Adjust the seasoning before serving.

Wraps de couve com ovos de galinhas felizes | Kale wraps with happy chicken eggs

Gostamos de construir a nossa alimentação com base na sazonalidade. Hoje em dia isso não é algo muito fácil: os supermercados e hipermercados, e até mercearias e mercados, têm vários produtos à nossa disposição durante todo o ano. E por isso foi com grande alegria que recebi, numa noite tardia, uma sms da Helena com uma generosa oferta dos seus pais: da horta deles vinha um carregamento. No dia seguinte, foi com genuínos prazer e alegria que abri o saco enorme para descobrir ovos de galinhas felizes, couve portuguesa, alface e alface roxa, espinafres e uma courgette giganórmica. E claro, mal me pude conter até começar a utilizar os produtos que me chegaram às mãos!!
Helena, manda um beijinho enorme de agradecimento aos teus pais. Temos que combinar uma visita à famosa horta :)


Wraps de couve com ovos de galinhas felizes

4 folhas grandes de couve portuguesa
6 ovos caseiros
Sal e pimenta moídos na hora
8 fatias de queijo gouda
8 fatias de fiambre de frango

Bater os ovos com o sal e a pimenta. Numa frigideira, aquecer uma noz de Becel líquida e colocar os ovos, em lume brando, até a omelete estar quase cozinhada. Quando a parte superior estiver semi-líquida, virar a omelete para terminar a cozedura.
Numa superfície de trabalho, estender as folhas de couve. Colocar 2 fatias de queijo e duas de fiambre em casa couve. Cortar a omelete em tirinhas e distribuir pelas folhas de couve. Temperar com pimentar e cobrir com a compota de malagueta. Enrolar as folhas de couve e servir.


We like to design our meals based on sazonality. Nowadays that's something hard to achieve because supermarkets and even groceries or markets are flooded with the same products all year-round. And that is why it was with great joy that I received an sms from Helena, one late night, with a generous offert from her parents: a load was coming from their garden. Next day, it was with genuine pleasure and happiness that I opened the bag to find eggs from happy chicken, kale, lettuce (green and purple) spinach and a giganormic courgette. And I could barely hold myself to start cooking with my presents!
Helena, give your parents a big kiss from me. We have to schedule a visit to the famous garden :)


Kale wraps with eggs from happy chicken

4 large kale leaves
6 eggs
Salt and pepper freshly ground
8 gouda cheese slices
8 chicken ham slices

Beat the eggs with salt and pepper. In a frying pan, cook the eggs in low-medium heat with a nut of liquid margerine. On a working surface, display the kale leaves and top each leaf with two slices of cheese and two slices of ham. Slice the omelet in strands and divide them by the leaves. Top with the red chilli jam, roll the leaves and serve.
