Gaspacho à Alentejana | Alentejo-style gazpacho

Numa semana com mais dias cinzentos do que o resto do ano, deu-me para isto: um dia cheguei a casa e a única coisa que me apetecia verdadeiramente comer era um Gaspacho à Alentejana. Talvez por me fazer lembrar os dias de calor tórrido que apanhamos em Monsaraz, em férias na viragem de Junho para Julho. Talvez um gaspacho assim me fizesse voltar à piscina com vistas para a linda cidade altaneira, rodeada de campos dourados ponteados de oliveiras.... "Oh tempo volta p'ra trás..."
Moral de história: não, não fui teleportada para o meu adorado Alentejo, o tempo não voltou para trás (como, aliás, nunca volta!) mas o gaspacho soube-me pela vida! E tenho a certeza que vocês também vão gostar, até porque o sol já voltou a brilhar!

Gaspacho à Alentejana

500g tomate-cereja
250g pimentos tricolores
1 pepino
1/2 meloa cantaloupe
750g água fria
250g cubos de gelo
6 c.sopa azeite
3 c.sopa vinagre vinho branco
Oregãos
Sal
Pimenta moída na hora

Cortar os tomates-cereja em quartos e colocar numa taça.
Retirar as pevides aos pimentos, picar e juntar aos tomates.
Partir o pepino em quartos e retirar as sementes. Fatiar finamente cada tira (quarto) e juntar aos restantes ingredientes.
Remover as pevides da meloa, retirar a polpa com uma colher formando bolinhas e colocar na taça.
Temperar a gosto com sal, pimenta e oregãos, adicionando o azeite e o vinagre e envolvendo bem. Cobrir com a água e com os cubos de gelo, rectificar os temperos, se necessário, e servir.

On the greyest week of the year all I wanted was an Alentejo-style gazpacho. Go figure my cravings! Maybe it reminded me of the lovely, peaceful and scorching hot days when we spent our holidays in Monsaraz, while June turned into July. And maybe it would make me feel like I was back in that pool facing the majestic towering city surrounded by golden olive fields...
Nop! I didn't get transported to my beloved Alentejo, I still don't master the art of turning back the time, but this gazpacho surely made my day! And I'm pretty sure it'll make your day too, especially because the sun is shining again!

Alentejo-style gazpacho

500g cherry tomatoes
250g tricolor peppers
1 cucumber
1/2 cantaloupe melon
750g cold water
250g ice cubes
6 tbsp evoo
3 tbsp white wine vinegar
Oreganos
Salt
Freshly ground pepper

Slice the tomatoes in quarters and set aside in a large serving bowl.
Remove the core and seeds from the peppers, slice them in small cubes and add to the bowl.
Slice the cucumber, lengthwise, in quarters ad remove the seeds from each part. Slice very finely and add to the bowl.
Remove the melon core and seeds and scoop small portions of the pulp into the bowl.
Season to taste with salt, pepper and oreganos as well as with the measured eve and vinegar, mixing thoroughly. Top with the water and ice, rectify the seasoning if necessary and serve.

Focaccia de tomate-cereja, azeitonas e alecrim | Cherry-tomato, olive and rosemary focaccia

Tudo o que é bom demora o seu tempo. E cabe-nos esperar o tempo que for necessário para nos podermos deliciar. Os passos são poucos e simples. O descanso, esse, é grande. Uma receita para os dias em que o tempo estica até ao infinito.


Focaccia de tomate-cereja, azeitona e alecrim
(retirado de How to Make Bread por Emmanuel Hadjiandreou)

200g farinha T65
4g sal
1g fermento bio seco
150g água morna
50g azeite
1 punhado tomates-cereja cortado ao meio
2 punhados azeitonas
Raminhos de alecrim
Sal grosso

Numa tigela pequena misturar a farinha com o sal e reservar.
Numa tigela maior colocar o fermento e adicionar a água, mexendo para dissolver o fermento.
Adicionar a mistura seca à mistura líquida e misturar bem com uma colher de pau até se obter uma mistura pegajosa. Colocar 1/3 do azeite, cobrir com a tigela mais pequena e deixar levedar por 1h. Findo esse tempo, dobrar gentilmente a massa duas vezes. Cobrir com a tigela e repetir por mais 3 vezes os passos de levedar 1h, dobrar gentilmente a massa 2 vezes (adicionando um pouco de azeite para evitar que a massa cole às paredes da tigela) e cobrir com a tigela mais pequena.
No final dos ciclos de repouso a massa deve estar bem levedada e repleta de bolhas.
Transferir gentilmente a massa para um tabuleiro evitando danificar as bolhas de ar. Cobrir (com outro tabuleiro) e deixar descansar por 10mins.
Com os dedos, estender a massa até se obter um rectangulo grosseiro. Voltar a cobrir e aguardar 10mins.
Preparar os toppings e espalhá-los pela massa, pressionando suavemente com os dedos. Polvilhar com sal grosso. Cobrir novamente com outro tabuleiro e deixar levedar para o dobro - cerca de 20mins.
Entretanto, pre-aquecer o forno a 240º C. Cozer a focaccia durante cerca de 15-20mins ou até estar douradinha (para ver se estar pronta, deve fazer um som oco quando se bate no fundo). Deixar arrefecer sobre uma rede.


All that is good takes time. And it's our job to wait for as long as it takes until we can savour. The steps are few and easy. The resting time is long. A recipe for those days when time stretches infinitely.


Cherry-tomato, olive and rosemary focaccia
(from How to Make Bread by Emmanuel Hadjiandreou)

200g bread flour
4g salt
1g active dry yeats
150g warm water
50g evoo
1 handful cherry-tomatoes, cut in half
2 handfuls olives
Rosemary sprigs
Coarse sea salt

In a smaller bowl mix the flour with the salt. 
In another larger bowl put the yeast and pour the water, mixing with a wooden spoon to dissolve the yeast.
Add the dry mixture to the wet, mixing with a wooden spoon until you have a fairly sticky dough.
Add 1/3 of evoo, cover and let rest for 1h. Gently fold the dough twice. Cover with the bowl. Repeat the 1h rest, folding (and adding more evoo to prevent dough from sticking) and covering with bowl for 3 more times. 
At the end of the resting cycle the dough should be well risen and bubbly.
Gently tranfer the dough to a baking tray to avoid damaging bubbles. Cover with another tray and let rest for 10mins. 
Push the dough with your fingertips to flatten and widen it to a rough square. Cover and let rest for 10mins.
Prepare toppings and place them around the dough, gently pressing with your fingers. Sprinkle with salt. Cover and let rest until about doubled in volume - around 20mins.
Meanwhile pre-heat the oven to 240º C. Bake the focaccia for about 15-20mins or until golden (the bottom should sound hollow when tapped). Leave to cool in a wire rack.

Guest post: Tarte Tatin de Tomate Cherry | Cherry Tomato Tatin Tart

A Ginja é especial. Serena, delicada, divertida, amiga. Quando entrei pela primeira vez no seu Ananás e Hortelã, ainda nos inícios, fiquei rendida à simplicidade e bom gosto das receitas. Fui ficando cada vez mais feliz à medida que as fotografias foram fazendo juz à comida e à pessoa. E ainda mais feliz por ver o seu trabalho apreciado e reconhecido.
Hoje traz-nos uma sugestão bem mediterrânica, acompanhada pelas suas fotos sempre inspiradoras.

Gosto de morar no campo e ter uma horta. Cada vez mais. É onde me sinto em casa, onde me sinto mais eu, onde respiro e caminho ao sabor das estações. Gosto de estar aqui, às vezes longe de tudo. Mas sempre bem rodeada. Por aqui há ajuda e partilha entre vizinhos. Podemos contar uns com os outros, um verdadeiro apoio e amizade.
E das nossas hortas há boas partilhas. De nossa casa saem ovos caseiros e limões, e os marmelos para a época das marmeladas. Do quintal da L. chegam as nabiças para a sopa, do pomar da T. chegam uvas docinhas para a sobremesa e da casa da S. e da C. chegam ainda morangos e tomates cherry. Mesmo muitos! Que alegria em tons de vermelho.
Quando a Ondina me convidou para um guest post não tive dúvidas. Quis com ela partilhar um pouco disto. Destas histórias e sabores. Sei que se ela morasse mais perto ia adorar que eu lhe batesse à porta e oferecesse um saco de fruta do pomar ou uma destas tartes acabadinhas de fazer.


Tarte Tatin de Tomate Cherry

Ingredientes:
1 placa de massa folhada
3 chávenas de tomates cherry
Azeite q.b.
Sal q.b.
Manjericão fresco q.b.

Preparação:
Pré-aquecer o forno a 200ºC.
Poderá optar por fazer uma tarte grande ou 3 mini tartes.
Colocar os tomates cherry numa frigideira grande (cabo da frigideira deve poder ir ao forno) ou em pequenas tarteiras redondas (se fizer as mini tartes), com um fio de azeite e um pouco de sal por cima. Arranjar os tomates de forma a que fiquem bem juntinhos e a encher o fundo das tarteiras.
Em seguida, cortar a massa folhada com o mesmo diâmetro da frigideira grande ou das mini tarteiras e colocar sobre os tomates, aconchegando bem a massa nas laterais.
Levar ao forno por uns 20-25 minutos ou até a massa folhar. Retirar do forno e deixar arrefecer um pouco. Virar ligeiramente sobre o lava-loiças, com cuidado, para escorrer o excesso de líquido que os tomates largam.
Colocar um prato sobre a tarte ou mini tartes e inverter, com cuidado. Servir com folhas de manjericão e um fio de azeite.

Ginja is a special person. Peaceful, delicate, funny and friendly. When I first stumbled in her Ananás e Hortelã, right in the beginning, I was rendered by the simplicity and good taste in the recipes. I became happier as the photos started making justice to the food and the person. And even happier to see her work apreciated and recognized by many others.
Today she brings us a very mediterranean meal, well illustrated by her always inspiring photos.

I like living in the counry side and having a garden. More and more. It's where I feel at home, here I feel I'm myself, where I breathe and walk to the taste of seasons. I like being her, away from everything. Mas always well surrounded. Here we have help and share amoinsgt neighbours. We can count on each other, a true support and friendship.
And from all gardens there's plenty to share. From ours there are eggs and lemons, quince for the marmelade season. From L's we have turnips for the soup, from T's we have the sweetest grapes for dessert and from S's and C's there are strawberries and cherry tomatoes. A lot of them! Joy painted in red.
When Ondina invited me for a guest post I had no second thoughts. I wanted to share with her a bit of all this. The stories and flavors. I know that if she lived closer she would love having me knocking on her door offering a bag of fruit or one of this pies right out of the oven.


Cherry Tomato Tatin Tart

Ingredients:
1 roll puff pastry
3 cups cherry tomatoes
Evoo
Salt
Fresh basil

Preparation:
Pre-heat the oven at 200ºC.
You can make a large pie or 3 mini pies.
Place all the tomatoes in a frying pan (that can go to the oven) or in small round pie dishes (if you are making the mini pies) with a drizzle of evoo and sprinkled with salt. Arranje the tomatoes in order to get them close together, completely feeling the bottom of the pie dishes or the frying pan.
Cut the party with the same size of the frying pan or pie dishes and cover the tomatoes with it, tucking the pastry on the sides.
Place in the oven for about 20-25 mins or until the pastry puffs. Remove from the oven and leave to cool down a bit. Slightly turn the pie(s) over the sink to drain the excess of liquid from the tomatoes. 
Place the pie(s) on a dish to remove from the frying pan or from the pie dishes. Server with the tomatoes side up, drizzled with a bit of evoo and garnished with basil leaves.

Salada disto e daquilo | This and that salad

Há refeições que nascem assim: do que há em casa e é necessário gastar. Porque em qualquer casa sobra sempre um bocadinho disto e outro daquilo que, sozinhos, não vão a lado nenhum mas, quando combinados com mais outros bocadinhos, podem ir muito, muito longe. E assim foi!


Salada de frango

2 peitos de frango de churrasco, desfiados
1 chávena de arroz branco cozido (take away churrasco)
300g de milho doce cozido
250g tomate cereja, em quartos
2 endívias, em juliana
1/2 pimento vermelho, em cubinhos
80g azeitonas verdes recheadas com pimento, às rodelas
2 c. sopa de oregãos secos
2 c. sopa de sementes de sésamo brancas
1 c. sopa de sementes de sésamo pretas
Pimenta moída na hora
Azeite

Colocar todos os ingredientes numa saladeira e misturar. Regar com um fio de azeite, incorporar muito bem e reservar durante 5 mins. Servir polvilhado com folhas de rúcula selvagem.


There are meals made like this: of what's around and it's necessary to eat. Because in every home there's always a little bit left of this and that that, alone, would go nowhere but, when combined with other little bits, can go a long, long way. And so they went!


Chicken salad

2 barbecue chicken breast, shredded
1 cup white rice, boiled (barbecue take away leftovers)
300g sweet corn, boiled
250g cherry tomatoes, in quarters
2 endives, cut in julienne
1/2 red pepper, in small cubes
80g green olives stuffed with red pepper, sliced
2 tbsp dried oregano
2 tbsp white sesame seeds
1 tbsp black sesame seeds
Freshly ground pepper
EVOO

Place all ingredients in a bowl and mix. Drizzle with evoo, mix to incorporate well and keep aside for 5 mins. Serve sprinkled with arugula leaves.

Linguine vendido ao camarão | Linguine sold out to the prawn

Os sabores do Verão. Esse Verão atrasado que chegou avassalador, com toda a pujança e todo o calor da estação. Como se S. Pedro nos quisesse ensinar uma lição: choravam pelos cantos que era só chuva e frio e nevoeiro, pois agora tomem lá o calor infinito da morte para ver se gostam! Com o santo irado, resta-nos remetermo-nos à nossa insignificância e tirar o melhor partido daquilo que nos coube em sorte. Os sabores do Verão. Frescos. Vibrantes. Simples. Aromáticos.


Linguine vendido ao camarão

Camarões qb
2 a 3 dentes de alho
1 cubo de caldo de marisco
Azeite
1/4 c. chá de chili em pó

Numa panela larga, alourar o alho picado (no esmagador de alho) com o chili e caldo de marisco numa boa quantidade de azeite. Adicionar os camarões e cozinhar em lume médio até estarem cor de laranja. Reservar.


500g linguine al nero di sépia
100g tomate-cereja caseiro, em quartos
1 tomate coração de boi, em cubinhos
50g rúcula
Folhas de manjericão fresco

Cozer o linguine em água abundante com sal até estar quase al dente. Escorrer e devolver ao tacho, regando com molho dos camarões. Misturar bem, adicionar os tomates, a rúcula e o manjericão, envolvendo muito bem para apurar os sabores. Servir acompanhado pelos camarões.

Linguine sold out to the prawn

Prawns for 4
2 to 3 garlic cloves
1 cube seafood stock
Olive oil
1/4 tsp chili powder

In a large saucepan, cook the minced garlic with the stock and chili in a generous amount of olive oil until golden. Add the prawns and cook in medium heat until orange. Reserve.


500g linguini al nero di sépia
100g homemade cherry-tomatos, in quarters
1 heirloom tomato, cubed
50g arugula
Fresh basil leaves

Boil the linguine in salted water until almost al dente. Drain and return to the pan, drizzle with the sauce from the prawns and mix well. Add the tomatos, arugula and basil and mix thoroughly to enhance all flavors. Serve with the prawns.

Penne de azeitona com mozzarella e tomate | Olive penne with mozzarella and tomato

Estamos de regresso. Uma semana de intenso passeio. De laurear a pevide até não poder mais. De calcorrear muitos kilómetros. Porto. Setúbal. Troia. Porto Covo. Vila Nova de Milfontes. Almograve. Zambujeira do Mar. Odemira. Beja. Évora. Guarda. Vermiosa. Castelo Rodrigo. Porto. No coração trazemos cores, cheiros, sabores. Trazemos a alegria de rever pessoas queridas. Trazemos a barriga cheia de boa comida, mesa farta, copo cheio de vinho bom.
Mas estamos de regresso. E trazemos a vontade das comidas que são nossas e que sabem a casa. É bom passear. Muito bom. Mas também é bom voltar.


Penne de azeitona com mozzarella e tomate

500g de penne de azeitona
300g tomate-cereja
3 bola de mozzarella
1 punhado de rúcula
Folhas de manjericão a gosto
Sal e pimenta moída na hora
Azeite extra virgem Gallo Reserva

Cozer a massa em água abundante com sal. Cortar os tomates em quartos e o mozzarella em cubinhos. Escorrer a massa e devolver ao tacho. Regar com o azeite e temperar com sal e pimenta e o manjericão. Adicionar o tomate, o queijo e a rúcula. Misturar bem e servir.

We bring our bellies filled with good food, abundant tables, glass full of great wine.
But we're back. And we bring the desire for foods that are ours, that taste like home. It's great to travel. Really great. Mas it's also great to come back.


Olive penne with mozzarella and tomato

500g olive penne 
300g cherry tomatos
3 mozzarella balls
1 arugula handfull
Basil leaves to taste
Salt and pepper freshly ground
Extra virgin olive oil

Boil the pasta in abundant water with salt. Slice the tomatos in quartes and the mozzarella in small cubes. Drain the past and return to the pan. Drizzle with olive and season with salt, pepper and basil. Mix well with the tomatos, cheese and arugula and serve.

Salada vermelha de cevadinha e bruschettas aldrabadas para acompanhar | Barley red salad and fake bruschettas to go with it

Os dias crescem compassados. A luz entra que entra em casa distrai-nos das horas e o tempo rende como se não houvesse amanhã. As temperaturas ainda não nos permitem jantares ao ar livre, mas as refeições a lembrar o verão já fazem parte do nosso cardápio diário. Tentamos assim convencer as estações a tomarem conta do que é delas e dar-nos o prazer da sua companhia...


Bruschettas aldrabadas

4 fatias de pão de centeio de Padronelo
1 tomate coração de boi
Azeite Gallo extra-virgem frutado
Oregãos secos
Sal e pimenta moída na hora

Numa taça, colocar o tomate partido em cubinhos. Temperar com o sal, pimenta e oregãos e regar com o azeite. Misturar e reservar enquanto se prepara a salada. Na altura de servir, cobrir as fatias de pão com o tomate.


Salada vermelha de cevadinha

1 chávena de cevada (demolhada 8h)
1 cenoura, raspada
250g de tomate mini-alongado, em quartos
2 beterrabas cozidas, em cubinhos
250g queijo feta
Azeite Gallo extra-virgem frutado
Vinagre framboesa Gallo
Oregãos, tomilho e salsa, secos
Sal e pimenta moída na hora

Enxaguar bem a cevada demolhada até a água sair limpa. Cozer em água abundante, com sal durante 25mins. Escorrer e passar por água fria. Numa saladeira grande, misturar a cevadinha com a cenoura raspada, o tomate, as beterrabas e o queijo feta esfarelado. Temperar com as ervas, sal e pimenta e regar com o azeite e o vinagre. Servir acompanhado pelas bruschettas.

The weather does not allow outdoor dinners yet, but summer meals are already part of our daily menu. It's a way of inviting the seasons to take matters into their own hands while giving us the pleasure of their company...


Fake bruschettas

4 slice of Padronelo rye bread
1 heirloom tomato, in small cubes
Extra virgin fruity olive oil
Dried oregano
Salt and pepper freshly ground

Place the cubed tomato in a bowl. Season with salt, pepper and oregano and drizzle generously with olive oil. Mix well and keep aside while preparing the salad. When it time to serve, top the bread slices with generous amouts of tomato and olive oil.


Barley red salad

1 cup barley (8h soaked)
1 carrot, grated
250g mini tomatos, in quartes
2 boiled beetroots, in small cubes
250g feta
Extra-virgin fruity olive oil
Raspberry vinegar
Dried oregano, thyme and parsley
Salt and pepper freshly ground

Wash well the barley until the water comes out clean. Boil it in plenty water with salt for about 25mins. Drain and rinse with cold water. In a large bowl, mix the barley with the carrot, tomatos, beets and the crumbled feta. Season with the herbs, salt and pepper and drizzle with the olive oil and vinegar. Serve with the bruschettas.

Salada de tortellini e tomate-cereja | Tortellini and cherry tomato salad

Para os dias com pouco tempo. Ou para os dias em que o tempo rende mas valores mais altos se "alevantam". Ou simplesmente porque nos apetece massa fresca sem metermos mãos à obra e farinha pela cozinha. Sabores simples e uma refeição de lamber os beiços que se prepara em 5 mins. E sobra todo o tempo do mundo para fazermos o que quisermos!


Salada de tortellini e tomate-cereja

500g tortellini (massa fresca) recheado com espinafres e ricotta
Sal grosso
300g tomate cereja
Oregãos secos
Pimenta moída na hora
Azeite frutado Gallo

Cozer os tortellini em água abundante com sal durante cerca de 3-5mins. Entretanto, cortar os tomates em quartos. Escorrer a massa, colocar numa taça grande e juntar os tomates, temperar com os oregãos e a pimenta e regar com o azeite. Misturar bem e servir imediatamente.


For the days we're a hurry. Or for the days with plenty of time for us to other than cooking. Or simply because we feel like having fresh pasta without kneading it or flouring the kitchen. Simple flavors and a wonderful meal prepared in 5 mins. And we have all the time in the world to do what we want!


Tortellini and cherry tomato salad

500g ricotta and spinach tortellini
Sea salt
300g cherry tomatos
Dried oregano
Freshly ground pepper
Fruity olive oil

Boil the tortellini in water and salt for about 3-5mins. Meanwhile, slice the tomatos in quarters. Drain the pasta and place in a large bowl. Add the tomatos, season with the oregano and pepper and drizzle with olive oil. Mix thoroughly and serve imediatly.
