Gaspacho à Alentejana | Alentejo-style gazpacho

Numa semana com mais dias cinzentos do que o resto do ano, deu-me para isto: um dia cheguei a casa e a única coisa que me apetecia verdadeiramente comer era um Gaspacho à Alentejana. Talvez por me fazer lembrar os dias de calor tórrido que apanhamos em Monsaraz, em férias na viragem de Junho para Julho. Talvez um gaspacho assim me fizesse voltar à piscina com vistas para a linda cidade altaneira, rodeada de campos dourados ponteados de oliveiras.... "Oh tempo volta p'ra trás..."
Moral de história: não, não fui teleportada para o meu adorado Alentejo, o tempo não voltou para trás (como, aliás, nunca volta!) mas o gaspacho soube-me pela vida! E tenho a certeza que vocês também vão gostar, até porque o sol já voltou a brilhar!

Gaspacho à Alentejana

500g tomate-cereja
250g pimentos tricolores
1 pepino
1/2 meloa cantaloupe
750g água fria
250g cubos de gelo
6 c.sopa azeite
3 c.sopa vinagre vinho branco
Oregãos
Sal
Pimenta moída na hora

Cortar os tomates-cereja em quartos e colocar numa taça.
Retirar as pevides aos pimentos, picar e juntar aos tomates.
Partir o pepino em quartos e retirar as sementes. Fatiar finamente cada tira (quarto) e juntar aos restantes ingredientes.
Remover as pevides da meloa, retirar a polpa com uma colher formando bolinhas e colocar na taça.
Temperar a gosto com sal, pimenta e oregãos, adicionando o azeite e o vinagre e envolvendo bem. Cobrir com a água e com os cubos de gelo, rectificar os temperos, se necessário, e servir.

On the greyest week of the year all I wanted was an Alentejo-style gazpacho. Go figure my cravings! Maybe it reminded me of the lovely, peaceful and scorching hot days when we spent our holidays in Monsaraz, while June turned into July. And maybe it would make me feel like I was back in that pool facing the majestic towering city surrounded by golden olive fields...
Nop! I didn't get transported to my beloved Alentejo, I still don't master the art of turning back the time, but this gazpacho surely made my day! And I'm pretty sure it'll make your day too, especially because the sun is shining again!

Alentejo-style gazpacho

500g cherry tomatoes
250g tricolor peppers
1 cucumber
1/2 cantaloupe melon
750g cold water
250g ice cubes
6 tbsp evoo
3 tbsp white wine vinegar
Oreganos
Salt
Freshly ground pepper

Slice the tomatoes in quarters and set aside in a large serving bowl.
Remove the core and seeds from the peppers, slice them in small cubes and add to the bowl.
Slice the cucumber, lengthwise, in quarters ad remove the seeds from each part. Slice very finely and add to the bowl.
Remove the melon core and seeds and scoop small portions of the pulp into the bowl.
Season to taste with salt, pepper and oreganos as well as with the measured eve and vinegar, mixing thoroughly. Top with the water and ice, rectify the seasoning if necessary and serve.

Salada nórdica de salmão e batata | Salmon and potato nordic-style salad

Não são raras as vezes que me perguntam de onde vem a inspiração para cozinhar. É simples: vem de todo o lado! A verdade é que gosto tanto de comida que passo uma boa parte dos dias a pensar em tudo o que com ela se relaciona. Nos meus tempos livres, além de adorar passear e fotografar, uma das coisas que me dá grande prazer é folhear livros sobre comida. E se há uns aos quais recorro frequentemente em busca de inspiração, outros há que raramente lhes pego. E isso é que não pode ser, pelo que resolvi que, ao preparar o menu semanal, tenho que folhear um dos livros "esquecidos". Oh, que chatice tão grande!
Mas o que é que isto tem a ver com a receita de hoje? Rigorosamente nada! Até porque a inspiração para ela veio dos programas de cozinha nórdica que o 24 Kitchen tem apresentado.

Salada nórdica de salmão e batata

1 kg batatas, descascadas e em cubos
2 filetes de salmão 
300g delícias do mar, descongeladas, em cubos
2 endívias, em juliana
500g tomate, em cubos
Sal
1 ovo
150g azeite
1 c.chá mostarda (Savora, claro!)
1 c.chá de vinagre de vinho tinto
100g ketchup
50g brandy
1 mão-cheia de endro fresco (ou seco) picado

Num tacho médio, cozer as batatas em água com sal. Quando as batatas estiverem quase prontas, adicionar o salmão e cozer por mais 5mins. 
Entretanto, preparar o molho colocando no copo misturador o ovo, azeite, mostarda, vinagre, ketchup e brandy. Misturar com a varinha mágica até obter uma consistência tipo maionese. 
Retirar o salmão para uma saladeira desfazendo com as mãos e adicionar as delicias do mar, as endívias e o tomate. Escorrer as batatas e devolver ao tacho, já com o fogão desligado, para as secar. Juntar as batatas à saladeira com metade do molho e o endro, envolvendo bem. Servir morna ou fria.

Very often I'm asked where from comes the inspiration for cooking. Simple: it comes from anything! The truth is I love food so much that I spend a fair amount of time thinking about all things food-related. On my free time, apart from walking around and photographing, I love to read books about food. But while some books are always on the spotlight, others rarely see the light of day. I that cannot be! So, I have decided that while I'm writing down the weekly menu, I have to browse one of those "forgotten" books. Life's tough, I know...
But what does this have to do with today's recipe? Nothing at all! Even because inspiration came from the lovely nordic food programs at the 24 Kitchen channel :)

Salmon and potato nordic-style salad

1 kg potatoes, peeled and diced in cubes
2 salmon filets
300g crab sticks
2 endives, julienne sliced
500g tomatos, in cubes
Salt
1 egg
150g evoo
1 tsp mustard
1 tsp red wine vinegar
100g ketchup
50g brandy
1 handfull fresh (or dried) dill, finely chopped

In a medium pan, cook the potatoes in water with salt. When the potatoes are nearly cooked, add the salmon and boil for 5 more mins.
Meanwhile, prepare the sauce by mixing the egg, evoo, mustard, vinegar, ketchup and brandy with a hand immersion blender until you have a mayonnaise-like consistency.
Remove the salmon into a serving bold, tearing it apart with your hands, and add the crab sticks, endives and tomatoes. Drain the potatoes and return to the pan (over the turned off heat) to dry off. Add the potatoes to the bowl with half of the sauce and the chopped dill. Mix thoroughly and serve warm or cold.
