Halloumi, grão de bico e Z'aatar | Halloumi, chickpeas and Z'aatar

Ultimamente temos andando ausentes. Com o blogue a meio-gás. Primeiro foram as férias de Junho. Depois 2 meses de muito trabalho. Depois as férias de Setembro. Pelo meio, as tentativas frustadas de coincidir os horários. E as tentativas frustadas de aproveitar o bom tempo. E com isto o outro tempo fugiu-se-nos por entre os dedos e damos por nós no Outono sem que o Verão alguma vez tenha chegado. E, nós que até somos mega-fãs do Outono, ainda não nos sentimos preparados para as sopas de abóbora, para os camisolões, para as mantas no sofá e as chávenas fumegantes. E por isso presenteamos a estação das estações com um petisco que ainda puxa a brasa para outras sardinhas!


Wraps de alface com grão de bico, Z'aatar e halloumi

1 barra queijo halloumi
400g grão de bico cozido
1 c.sopa z'aatar
Pimenta moída na hora
2 c.sopa azeite
1 alface muito fria

Separar as folhas da alface, lavar muito bem e colocar no centrifugar de legumes para retirar a água. Manter as folhas dentro de uma caixa, no frigorífico, até à hora de servir.
Cortar a barra de halloumi em fatias com cerca de 1 cm de espessura e grelhar numa frigideira anti-adererente pincelada com umas gotinhas de azeite.
Entretanto, colocar o grão de bico numa taça e temperar com o azeite, a pimenta e o z'aatar (não necessitar de levar sal pois o queijo já é bastante salgado).
Virar as fatias de queijo e, quando douradinhas de ambos os lados colocar num prato.
Colocar as folhas de alface num outro prato e servir.
Para degustar fazem-se wraps de folha de alface com o grão de bico e as fatias de halloumi.


Lately we have been a bit absent. With the blog simmering away. First it was the June holidays. Then 2 months of intense work. Afterwards the September holidays. In between, the frustrated attempts to synchronize schedules. And the frustrated attempts to get hold of Summer. And so time slipped through our fingers and we find ourselves in the presence of Autumn without having met Summer. So, even though we are Autumn lovers, we're not quite ready for the pumpkin soups, jumpers, couch blankets nor smoking hot cups. And that's why we welcome our beloved season with a snack that still feels quite summery.


Halloumi, chickpeas and Z'aatar with lettuce wraps

1 halloumi slice
400g boiled chickpeas
1 tbsp z'aatar
Freshly ground pepper
2 tbsp evoo
1 lettuce (very cold)

Separate de lettuce leaves, wash very well and centrifuge to remove the excess water. Keep the lettuce leaves in a box, in the fridge until serving time.
Cut the halloumi in 1cm slices and grill in a frying pan previously greased with evoo until golden.
Put the chickpeas in a bowl, drizzle with the evoo and season with pepper and Z'aatar (no salt is needed and the cheese is already quite salted).
Turn the halloumi slices and, when golden on both sides, set aside on a plate.
Place the lettuce leaves on another plate.
For the wraps, place a generous amount of chickpeas a slice of halloumi in each lettuce leaf and fold it.

Wraps de couve com ovos de galinhas felizes | Kale wraps with happy chicken eggs

Gostamos de construir a nossa alimentação com base na sazonalidade. Hoje em dia isso não é algo muito fácil: os supermercados e hipermercados, e até mercearias e mercados, têm vários produtos à nossa disposição durante todo o ano. E por isso foi com grande alegria que recebi, numa noite tardia, uma sms da Helena com uma generosa oferta dos seus pais: da horta deles vinha um carregamento. No dia seguinte, foi com genuínos prazer e alegria que abri o saco enorme para descobrir ovos de galinhas felizes, couve portuguesa, alface e alface roxa, espinafres e uma courgette giganórmica. E claro, mal me pude conter até começar a utilizar os produtos que me chegaram às mãos!!
Helena, manda um beijinho enorme de agradecimento aos teus pais. Temos que combinar uma visita à famosa horta :)


Wraps de couve com ovos de galinhas felizes

4 folhas grandes de couve portuguesa
6 ovos caseiros
Sal e pimenta moídos na hora
8 fatias de queijo gouda
8 fatias de fiambre de frango

Bater os ovos com o sal e a pimenta. Numa frigideira, aquecer uma noz de Becel líquida e colocar os ovos, em lume brando, até a omelete estar quase cozinhada. Quando a parte superior estiver semi-líquida, virar a omelete para terminar a cozedura.
Numa superfície de trabalho, estender as folhas de couve. Colocar 2 fatias de queijo e duas de fiambre em casa couve. Cortar a omelete em tirinhas e distribuir pelas folhas de couve. Temperar com pimentar e cobrir com a compota de malagueta. Enrolar as folhas de couve e servir.


We like to design our meals based on sazonality. Nowadays that's something hard to achieve because supermarkets and even groceries or markets are flooded with the same products all year-round. And that is why it was with great joy that I received an sms from Helena, one late night, with a generous offert from her parents: a load was coming from their garden. Next day, it was with genuine pleasure and happiness that I opened the bag to find eggs from happy chicken, kale, lettuce (green and purple) spinach and a giganormic courgette. And I could barely hold myself to start cooking with my presents!
Helena, give your parents a big kiss from me. We have to schedule a visit to the famous garden :)


Kale wraps with eggs from happy chicken

4 large kale leaves
6 eggs
Salt and pepper freshly ground
8 gouda cheese slices
8 chicken ham slices

Beat the eggs with salt and pepper. In a frying pan, cook the eggs in low-medium heat with a nut of liquid margerine. On a working surface, display the kale leaves and top each leaf with two slices of cheese and two slices of ham. Slice the omelet in strands and divide them by the leaves. Top with the red chilli jam, roll the leaves and serve.

Wraps de frango com compota de malagueta | Chicken and hot chilli jam wraps

São bons os dias passados em casa, na preguiça. Jardinar só mesmo nos intervalos do descanso, porque o corpo também precisa de recuperar da lufa-lufa do dia-a-dia. E enquanto se recarregam as baterias resta muito pouca energia para o que quer que seja, inclusivé para preparar refeições. Mas quem disse que um almoço preguiçosamente simples não pode ser absolutamente delicioso?


Wraps de frango com compota de malagueta

Wraps de trigo
Rúcula qb
Queijo fresco para barrar (simples ou com alho e ervas finas - o meu preferido)
Sobras de frango de churrasco
Compota de malagueta

Colocar a rúcula no centro dos wraps e barrar com o queijo. Dividir as sobras de frango por cada wrap e cobrir com compota de malagueta. Fechar os wraps em envelope e servir.

Compota de malagueta
(adaptado de Chilli Jam, de Nigella Lawson)

150g de malaguetas pequenas frescas (sem sementes e cortadas em 4)
150g de pimento vermelho (sem sementes e cortado em pedacinhos)
1kg de acúcar
600ml de vinagre de cidra

Esterilizar os frascos e deixar arrefecer.
Colocar as malaguetas no processador de alimentos e pulsar até estarem finamente cortados. Adicionar o pimentos e pulsar novamente, até se obter uma pasta vermelho-viva.
Numa panela larga, dissolver o açúcar no vinagre, em lume baixo e sem mexer. Adicionar a pasta vermelha, aumentar o lume e deixar ferver por 10 mins. Retirar a panela do lume e deixar arrefecer durante cerca de 40 mins ou até as partículas vermelhas ficarem dispersas pela geleia. Colocar nos frascos e fechar.

Nota: utilizar luvas para trabalhar com as malaguetas!!!!
The days spent at home, in slumber, are just perfect. Gardening is only during the breaks of resting, because the body needs to recover from the rats race.And while we charge batteries there's not much energy left, even to feed ourselves. Who said a lazily simples lunch couldn't be absolutely delicious?


Chicken and hot chilli jam wraps

Wheat wraps
Arugula
Cottage cheese (simple or with garlic and fine herbs - my fave)
Barbecue chicken leftovers
Hot chilli jam

Cover the wraps with arugula and spread the cheese. Place the chicken leftovers and top with the jam. Fold as an envelop and serve.

Hot chilli jam
(adapted from Chilli Jam by Nigella Lawson)

150g bird eye fresh red chilli peppers (deseeded and cut into 4 pieces)
150g red peppers (cored, deseeded and cut into rough chunks)
1kg jam sugar
600ml cider vinegar

Sterilize your jars and leave to cool.
Put the cut-up chillies into a food processor and pulse until they are finely chopped. Add the chunks of red pepper and pulse again until you have a vibrantly red-flecked processor bowl.
Dissolve the sugar in the vinegar in a wide, medium-sized pan over a low heat without stirring.
Scrape the chilli-pepper mixture out of the bowl and add to the pan. Bring the pan to the boil, then leave it at a rollicking boil for 10 minutes. Take the pan off the heat and allow it cool. The liquid will become more syrupy, then from syrup to viscous and from viscous to jelly-like as it cools. After about 40 minutes, or once the red flecks are more or less evenly dispersed in the jelly (as the liquid firms up, the hints of chilli and pepper start being suspended in it rather than floating on it), ladle into your jars. If you want to stir gently at this stage, it will do no harm. Then seal tightly.

Note: use gloves when handling the hot chillies!!!!

Wraps de queijo fresco e rabanetes para dar a boas-vindas à Primavera | Cottage cheese and radishe wraps to welcome Spring

Chegou de mansinho, sem dar muito nas vistas. Tímida e envergonhada, trouxe consigo a chuva e o frio que o Inverno lhe deixou de herança. Mas não tarda nada revelará todo o seu esplendor. Na varanda, é tempo de renovação: plantam-se novos vasos, ainda protegidos das geadas, retiram-se os elementos moribundos, poda-se, alimenta-se, escolhem-se os rebentos que vão ficar. Os nossos cinco metros quadrados de agricultura acordam lentamente do seu torpor e saúdam a Primavera nas suas melhores farpelas. E nós escolhemos um simples mas colorido repasto para nos juntarmos à festa.
Wraps de queijo fresco e rabanetes

2 wraps/tortilhas de trigo
4 rabanetes
2 queijos frescos para barrar
2 mãos-cheias de rúcula selvagem
Sal e pimenta moída na hora
Coentros frescos ou secos

Colocar um wrap em cada prato. Adicionar a cada wrap uma mão-cheia de folhas de rúcula e espalhar um queijo por cima. Laminar os rabanetes e dividir as fatias por cima do queijo. Temperar com sal e pimenta moída na hora. Para quem quiser, polvilhar com coentros frescos ou secos. Dobrar os wraps em envelope para poder comer.

Cottage cheese and radishe wraps

2 wheat wraps
4 radishes
2 cottage cheeses
2 handfulls of arugula
Salt and pepper freshly ground
Fresh or dry coriander leaves

Place each wrap in a place. Top with the arugula and spread the cottage cheese. Laminate the radishes and distribute for each wrap. Season with salt and pepper and, if to your liking, sprinkled with fresh or dry coriander leaves. Fold like an envelope to eat.

Wraps de presunto serrano e ovo | Serrano prosciutto and egg wraps

Simplificar é a palavra de ordem nos dias que correm. Com pouco tempo durante a semana para refeições mais elaboradas, optamos por pratos simples. Muitas vezes desenrascamos. Ainda assim não descuramos os nossos ingredientes favoritos, a qualidade e o sabor das refeições. Porque menos também é mais: menos trabalho é mais tempo para estarmos juntos, menos ingredientes são sabores mais apurados. 
Wraps presunto serrano e ovo

2 wraps de trigo
4 fatias de queijo Gouda
4 fatias de presunto serrano
2 ovos
Rúcula selvagem q.b.
Becel líquida
Sal e pimenta moída na hora

Estrelar os ovos numas gotículas de Becel líquida, temperados com sal e pimenta moída na hora. Entretanto, num grelhador, aquecer os wraps 2 mins de cada lado. Colocar os wraps no prato, colocar duas fatias de queijo e duas de presunto em cada wrap, cobrir com um ovo estrelado e finalizar com um punhado de rúcula selvagem. Dobrar cada wrap e prender com palitos para servir.
Simplify is the watchword of the day. With little time for more elaborate meals during the week, we choose simple options. Many times we do what's possible. Still, we do not give up on our favourite ingredients, quality nor flavour. Because less is more: less amount of work is more time to spend together, less ingredients are more flavour.
Serrano prosciutto and egg wraps

2 wheat wraps
4 Gouda slices
4 Serrano prosciutto slices
2 eggs
Arugula
Líquid margerine
Salt and pepper freshly ground

Fry the eggs with a few droplets of margerine and season with salt and pepper. In a grill pan, heat the wraps 2 mins each side. Place the wraps in the serving dish, lay two slices of Gouda and two of prosciutto in each wrap, cover with an egg and top with a handfull of arugula. Fold each wrap and pin with toothpicks before serving.
