"Fade to Black"

O preto é sem dúvida a nossa cor favorita, pelo menos a nível de vestuário. Já no que toca à comida, as refeições são o mais coloridas possível. E embora a nossa sugestão de hoje seja monocromática q.b., não significa no entanto que seja menos deliciosa. Ficamos muito fãs deste risotto e sem dúvida que vamos repetir com frequência! "Fade to Black" faz parte do album "Ride the Lightning" dos Metallica, que de certeza iriam apreciar esta refeição, e nós a presença deles :)

Risotto nero

900g choco limpo e em rodelas
2 saquinhos de tinta de choco
1 cebola, picada
2 dentes de alho, picados
Azeite
1 copo vinho tinto
300g arroz arborio
1 c.sopa pasta de tomate
Caldo de peixe (quente!) qb
Sal
Pimenta moída na hora

Numa panela larga e funda alourar a cebola picada e os alhos com um pouco de azeite. Juntar os chocos, regar com a tinta e o vinho, deixando ferver sobre lume forte para evaporar o alcool. Reduzir o calor e deixar cozinhar durante cerca de 20mins. Adicionar o arroz, mexer bem e adicionar a pasta de tomate juntamente com um pouco de caldo de peixe. Misturar bem e ir juntando o caldo, concha a concha, quando o liquido do arroz desaparecer, mexendo sempre, e até o arroz estar cozido "al dente".

Black is, without a doubt, our favourite colour, at least when it comes to clothing. However, when is comes down to food, our meals are small private rainbowns. And even though today's recipe falls on the monochromatic side, it does not mean it's not equally delicious. We became fans of this wonderful risotto and we'll be cooking it very often! "Fade to Black" is part of the Metallica album "Ride the Lightning" and we're pretty sure they would enjoy this meal and we would love their company :)

Risotto nero

900g cuttlefish, clean, sliced in rings
2 ink bags
1 onion, chopped
2 garlic cloves, chopped
Evoo
1 glass red wine
300g arborio rice
1 tbsp tomato purée
Fish stock (hot!)
Salt
Freshly ground pepper

In a large pan, sautée the onion and garlic with the evoo. Add the cuttlefish, ink and wine and cook on a high heat to evaporate the alcohol. Reduce the heat, and let simmer for 20mins. Add the rice, mix well and add the tomato purée along with a soup ladle of stock. Mix thoroughly and keep adding soup ladles of stock whenever the rice liquid disappears, while constantly stirring and until the rice is cooked "al dente".

Pizza enrolada de "spanakopita" | "Spanakopita" rolled pizza

Esta zona Atlântico-Mediterrânica onde vivemos é sem dúvida é nossa preferida, tanto para viajar como para comer. Perdemo-nos pelos sabores ancestrais, pela sua riqueza e variedade, pela componente saudável. Temos sem dúvida o nosso coração bem enraizado nesta terra, nas suas gentes tão diferentes e mas de costumes e valores tão iguais, nas suas comidas que, apesar do ar por vezes moderno, são tão tradicionais. E foi assim que nasceu esta receita. Da nossa vontade de uma spanakopita sem massa filo. Era para ser uma quiche mas fomos assaltados pelo desejo de pizza e voilá! Cá está ela! Sem dúvida uma receita que vai passar a ser um dos clássicos cá de casa pois ficamos absolutamente fãs da combinação da base da pizza e o recheio da tradicional spanakopita.

Massa de pizza

220g água
1 c.chá açúcar amarelo
2 c.chá fermento padeiro seco
400g farinha T65
30g azeite
1 c.chá sal
3 c.chá sementes de nigella
6 c.chá sementes de sésamo
1 ovo batido

No copo da Bimby colocar a água, o açúcar e o fermento e misturar tudo durante 20s / 37º C/ vel 2.
Adicionar a farinha, o azeite e o sal e amassar 2min/vel espiga. Retirar a massa para uma taça polvilhada com farinha (rodar a lâmina para soltar melhor a massa) e cubrir com película aderente. Deixar levedar até dobrar de volume (aprox. 1 hora) dentro do microondas desligado (que tinha sido aquecido, vazio, durante 1min na potencia máxima).

Recheio tipo Spanakopita

400g espinafres frescos
10 cebolinhas com rama
50g azeite
500g queijo feta
Pimenta moída na hora
3 c.chá endro seco

No copo por lavar, colocar 500g de água e cozer os espinafres a vapor na varoma durante 20min / varoma ºC / vel 1. No final, escorrer bem os espinafres e reservar. Descartar a água do copo e colocar as cebolinhas juntamente com o azeite. Picar durante 5s / vel 5 e, com a ajuda da espátula, baixar o que tiver ficado nas paredes do copo. Seguidamente, refogar durante 5min / 100º C/ vel 2. Adicionar os espinafres e cozinhar durante 2min / 100º C / vel 1 e reservar no copo.

Assim que a massa da pizza tiver levedado, juntar o feta em pedaços, o endro e a pimenta ao preparado de espinafres e misturar 4s / vel 4. Entretanto, untar um tabuleiro de forno com azeite e estender nele a massa da pizza com as mãos. Deitar o recheio por cima da massa e enrolar a partir de um dos lados pequenos. Neste momento a pizza pode ir ao forno ou pode levedar durante mais 30min. Antes de colocar no forno pré-aquecido a 200º C, pincelar o rolo com o ovo batido e polvilhar com sementes de sésamo. Cozer durante cerca de 45min (verificar cozedura com o teste do palito) e servir ainda morna.


This Atlantic-Mediterranean area where we live in is by far our favourite, wether for traveling as for eating. We loose ourselves in the ancestral flavours, its richness and variety, its healthiness. We surely have our hearts well deep-rooted into this land, in its people that are so different but with similar traditions and values, in its food that, despite the sometimes modern look, is so traditional. And that's how this recipe was born. From our cravings for a spanakopita without the philo pastry. It was supposed to have been a quiche but we got hit by a pizza desire and voilá! Here it is! Definitely a recipe that will become a classic at our house was we became instant fans of the pizza and spanakopita filling combo.

Pizza dough

220g water
1 tsp golden caster sugar
2 tsp active dry yeast
400g strong bread flour
30g evoo
1 tsp salt
3 tsp nigella seeds
6 tsp sesame seeds
1 egg, beaten

In the Thermomix mixing bowl place the water, sugar and yeast and mix for 20s / 37º C/ vel 2. Add the flour, evoo and salt and knead for 2min/vel dough. Remove the dough (rotate the blade to loosen the dough) into a bowl sprinkled with flour and cover with cling film. Leave to rise until doubled in size (about 1h) inside the microwave (that had been previously heated, empty, for 1 min in the max potency).

Spanakopita-type filling

400g fresh spinach
10 spring onions
50g evoo
500g feta cheese
Freshly ground pepper
3 tsp dried dill

In the unwashed mixing bowl pout 500g of water and steam the spinach in the varoma for 20min / varoma ºC / vel 1. Remove the spinach, drain well and set aside. Dispose of the cooking water and put the spring onions with the evoo in the mixing bowl. Chop for 5s / vel 5 and, with the spatula, lower the bits left int he mixing bowl walls. Braise for 5min / 100º C/ vel 2. Add the drained spinach and cook for more 2min / 100º C / vel 1. Leave in the Thermomix to cool down.

When the dough has risen, add the feta in pieces, the dill and the pepper to the spinach paste and mix for 4s / vel 4. Meanwhile, grease a oven tray with more evoo and spread the dough in it with your hands. Top the dough with the filling and roll from one shorter side to the other. The pizza is now ready for the oven or it can be left to rise for 30 more mins. Before placing into the pre-heated oven at 200º C, swab the roll with the beaten egg and sprinkle with sesame seeds to your liking. Bake for about 45min or until golden and cooked (check with a skewer). Serve while warm.

Focaccia de cebola roxa, azeitonas pretas e feta | Red onion, black olives and feta focaccia

Enquanto os dias se esticam preguiçosos pela noite dentro, o ar fresco ainda pede conforto e calor. Liga-se o forno e petisca-se de forma relaxada, com as receitas de sempre. Os copos dançam envoltos num manto de veludo rubi enquanto a conversa flui para paragens distantes de férias que demoram a chegar...


Focaccia de cebola roxa e azeitonas pretas

Massa de focaccia
1 cebola roxa grande
Azeitonas pretas
Queijo feta
Alecrim

Preparar a massa da focaccia de acordo com esta receita. Entretanto, cortar finamente a cebola roxa em meias-luas, descaroçar as azeitonas, esfarelar o feta e dividir os alecrim em pequenos pés. Distribuir os ingredientes pela focaccia e prosseguir com a receita. Servir ainda quente, acompanhada com um belo copo de um bom vinho tinto.


While the days lazily stretch into the night, the chill breeze still calls for warmth and comfort. The oven is on and we relax and nibble our all time favourites. The glasses dance wrapped in a ruby velvety cloak and our words travel to faraway places from holidays that never seem to come...


Red onion and black olive focaccia

Focaccia dough
1 large red onion
Black olives
Feta cheese
Rosemary sprigs



Prepare the focaccia dough following this recipe. Meanwhile, finely slice the onion in half-moons, pit the olives, crumble the feta and divide the rosemary in small sprigs. Spread the toppings and proceed with the recipe. Serve still warm, with a glass of a good red wine.

Focaccia de tomate-cereja, azeitonas e alecrim | Cherry-tomato, olive and rosemary focaccia

Tudo o que é bom demora o seu tempo. E cabe-nos esperar o tempo que for necessário para nos podermos deliciar. Os passos são poucos e simples. O descanso, esse, é grande. Uma receita para os dias em que o tempo estica até ao infinito.


Focaccia de tomate-cereja, azeitona e alecrim
(retirado de How to Make Bread por Emmanuel Hadjiandreou)

200g farinha T65
4g sal
1g fermento bio seco
150g água morna
50g azeite
1 punhado tomates-cereja cortado ao meio
2 punhados azeitonas
Raminhos de alecrim
Sal grosso

Numa tigela pequena misturar a farinha com o sal e reservar.
Numa tigela maior colocar o fermento e adicionar a água, mexendo para dissolver o fermento.
Adicionar a mistura seca à mistura líquida e misturar bem com uma colher de pau até se obter uma mistura pegajosa. Colocar 1/3 do azeite, cobrir com a tigela mais pequena e deixar levedar por 1h. Findo esse tempo, dobrar gentilmente a massa duas vezes. Cobrir com a tigela e repetir por mais 3 vezes os passos de levedar 1h, dobrar gentilmente a massa 2 vezes (adicionando um pouco de azeite para evitar que a massa cole às paredes da tigela) e cobrir com a tigela mais pequena.
No final dos ciclos de repouso a massa deve estar bem levedada e repleta de bolhas.
Transferir gentilmente a massa para um tabuleiro evitando danificar as bolhas de ar. Cobrir (com outro tabuleiro) e deixar descansar por 10mins.
Com os dedos, estender a massa até se obter um rectangulo grosseiro. Voltar a cobrir e aguardar 10mins.
Preparar os toppings e espalhá-los pela massa, pressionando suavemente com os dedos. Polvilhar com sal grosso. Cobrir novamente com outro tabuleiro e deixar levedar para o dobro - cerca de 20mins.
Entretanto, pre-aquecer o forno a 240º C. Cozer a focaccia durante cerca de 15-20mins ou até estar douradinha (para ver se estar pronta, deve fazer um som oco quando se bate no fundo). Deixar arrefecer sobre uma rede.


All that is good takes time. And it's our job to wait for as long as it takes until we can savour. The steps are few and easy. The resting time is long. A recipe for those days when time stretches infinitely.


Cherry-tomato, olive and rosemary focaccia
(from How to Make Bread by Emmanuel Hadjiandreou)

200g bread flour
4g salt
1g active dry yeats
150g warm water
50g evoo
1 handful cherry-tomatoes, cut in half
2 handfuls olives
Rosemary sprigs
Coarse sea salt

In a smaller bowl mix the flour with the salt. 
In another larger bowl put the yeast and pour the water, mixing with a wooden spoon to dissolve the yeast.
Add the dry mixture to the wet, mixing with a wooden spoon until you have a fairly sticky dough.
Add 1/3 of evoo, cover and let rest for 1h. Gently fold the dough twice. Cover with the bowl. Repeat the 1h rest, folding (and adding more evoo to prevent dough from sticking) and covering with bowl for 3 more times. 
At the end of the resting cycle the dough should be well risen and bubbly.
Gently tranfer the dough to a baking tray to avoid damaging bubbles. Cover with another tray and let rest for 10mins. 
Push the dough with your fingertips to flatten and widen it to a rough square. Cover and let rest for 10mins.
Prepare toppings and place them around the dough, gently pressing with your fingers. Sprinkle with salt. Cover and let rest until about doubled in volume - around 20mins.
Meanwhile pre-heat the oven to 240º C. Bake the focaccia for about 15-20mins or until golden (the bottom should sound hollow when tapped). Leave to cool in a wire rack.

Conchiglie verdes | Green conchiglie

Sábado. Almoço. Duas bocas famintas. No frigorífico uma quantidade generosa de espinafres e na mente a receita da Mª João. Meter mãos à obras e, de repente, há um cheirinho delicioso que se espalha pela casa.
Sábado. Depois do almoço. Duas barrigas bem recheadas e duas pessoas muito felizes.


Conchiglie com pesto de espinafres e pistácios
(adaptado de Clavel's Cook)

500g espinafres
3 dentes de alho
1 c. chá sal
Pimenta moída na hora
80g pistácios
100g queijo da ilha ralado
120g azeite
200g queijo Emmental ralado
500g Conchiglie tricolores

Num robot de cozinha colocar 1/3 dos espinafres, o alho, o sal, a pimenta, os pistácios, o queijo e 1/3 do azeite. Processar muito bem até obter uma mistura homogénea. Adicionar mais 1/3 de espinafres e de azeite e voltar a processar. Repetir com os restantes terços, provar e, se necessário, ajustar os temperos.
Entretanto, cozer a massa em água abundante com sal. Escorrer, devolver ao tacho e misturar bem com metade do pesto de espinafres (reservar a restante metade no frigorífico para outra refeição). Polvilhar com o Emmental ralado, com pimenta moida na hora e servir.


Saturday. Lunchtime. Two hungry people. In the fridge a generous amount of spinach and in the mind Mª João's recipe. Off we go to the kitchen and, suddenly, a delicious smell spreads around the house.
Saturday. After lunch. Two very satisfied tummies and two very happy people.


Conchiglie with spinach and pistachio pesto
(adapted from Clavel's Cook)

500g spinach
3 garlic cloves
1 tsp salt
Freshly ground pepper
80g pistachios
100g Azores Island cheese
120g evoo
200g Emmental cheese, grated
500g Conchiglie tricolor

In a food processor place 1/3 spinach, garlic, salt, pepper, pistachios, cheese and 1/3 evoo. Process well until you have a smooth misture. Add another spinach and evoo 1/3 and process again. Repeat with the remaining spinach and evoo, taste and, if necessary, adjust the seasoning.
Meanwhile, boil the pasta in plenty salty water. Drain, return to the pan and mix with half of the pesto amount (keep the other half in the fridge for another meal). Sprinkle with the grated Emmental, season with more freshly ground pepper and serve.

Spaghetti Bolognese

Assim como quem conta um conto acrescenta um ponto, quem cozinha uma receita acrescenta um ingrediente (ou modifica qualquer coisa). Cá em casa não é diferente: há refeições que se repetem mas quase nunca da mesma forma. E cada um tem as suas versões do mesmo prato. Por exemplo, se o Spaghetti Bolognese for cozinhado pela menina, leva aipo, se for cozinhado pelo menino leva canela! Portanto, sintam-se à vontade para acrescentar à nossa versão os pontos que vos aprouver :)

Spaghetti Bolognese

1 cebola grande, picada
1 dente de alho, picado
Azeite
1/2 pimento vemelho, em cubinhos
1 cenoura grande, raspada
800g de carne de vitela, picada
1 lata grande (800g) de tomate pelado
500ml de polpa de tomate
1/2 copo de vinho branco 
1 pau de canela ou 1 talo de aipo, picado, ou ambos
Sal e pimenta moída na hora
200g de queijo Emmental ralado
500g esparguete

Num tacho grande, refogar a cebola e o alho em azeite. Adicionar o pimento, a cenoura, o aipo (se for o caso) e carne, cozinhando até a carne estar dourada. De seguida, desfazer os tomates para dentro do tacho juntamente com a polpa de tomate e o vinho branco. Temperar com sal, pimenta e o pau de canela (se utilizar). Deixar a cozinhar durante cerca de 30mins, com o tacho destapado para reduzir o líquido. No final do tempo, se o molho ainda estiver um pouco líquido, adicionar 1 c. chá de amido de milho misturado numa c. sopa de sumo de limão.
Entretanto, cozer o esparguete al dente em água abundante com sal. Escorrer e juntar ao picado de carne, mexendo bem para incorporar os sabores.
Servir polvilhado com queijo ralado.

 

In the same way that one telling a story always adds some new factor, also one who cooks always adds (or changes) an ingredient. In our home its no different: there are meals that we repeat over and over again but are almost always done differently. And each of us cooks accordingly to its own style. For instance if the Spaghetti Bolognese is cooked by the girl, there's always celery involved, if it is cooked by the boy cinnamon takes the celery's place! So, please feel free to use our version and adapt it to your likings :)


Spaghetti Bolognese

1 large onion, chopped
1 garlic clove, minced
EVOO
1/2 red pepper, diced
1 carrot, grated
800g veal meat, minced
1 large can (800g) peeled tomato
500ml tomato puree
1/2 glass white wine
1 cinnamon stick or 1 celery stalk, chopped, or both
Salt and pepper freshly ground
200g Emmental cheese, grated
500g spaghetti

In a large pan, sauté the onion and garlic in evoo. Add the pepper, carrot, celery (if using) and meat, cooking until golden and soft. Crush the tomatoes into the pan together with the tomato puree and the wine. Season with salt, pepper and the cinnamon stick (if using). Leave to cook for 30mins with the lid open, to reduce the juices. By the end, if the sauce is a bit liquid, add 1 tsp of corn starch mixed in a tbsp of lemon juice and mix very well.
Meanwhile, cook the spaghetti al dente in plenty boiling and salty water. Drain and mix well in the mince to incorporate the flavors.
Serve sprinkled with grated cheese.

Guest Post: Bruschetta de Pimentos Vermelhos | Red Bell Pepper Bruschetta

O guest post de hoje é um mimo da Rosa. Simpática, conversadora e espirituosa, partilha connosco iguarias acompanhadas de fotos que nos deixam com água na boca. Por isso, sejam simpáticos, façam um bolo (Be Nice, Make a Cake) e vão conhecer o excelente trabalho da Rosa! :)

Bruschetta de Pimentos Vermelhos

2 pimentos vermelhos
1 pimento verde
1 courgette pequena
1 colher de chá de orégãos secos
1 punhado de folhas de hortelã
1 limão
Vinagre q.b.
Pimenta Preta moída na hora q.b.
Azeite q.b.
Sal q.b.
Fatias de broa de milho branco (tantas quantas o nível de fome)
Dentes de alho (a gosto)

Comece por ligar o forno a 220ºC. Lavar os pimentos e a curgete e coloçar numa travessa para ir ao forno. Adicione a hortelã finamente picada, e os orégãos secos. Regue com azeite, temperar com sal, pimenta.
Leve ao forno, entre 30 a 45 minutos, ou até os legumes ficarem bem dourados.

Retire do forno e deixar arrefecer. Assim que estejam frios o suficiente, picar os legumes até formar uma pasta com uma consistência própria para barrar. (Pode deixar pedacinhos maiores se gostar)
Numa taça, misture bem a pasta com vinagre e o sumo de limão em quantidades q. b., rectifique o sal e a pimenta se for necessário.

Entretanto, torre as fatias de broa e esfregue meio dente de alho numa das faces. Sirva as fatias regadas com um fio de azeite na superfície do alho, e barrar com a pasta de pimentos.

É delicioso como entrada ou um lanche tardio!
Acompanhe com um bom vinho para aquecer estes dias mais cinzentos.

Red Bell Pepper Bruschetta

2 red bell peppers
1 green pepper
1 small courgette
1 tsp dried oregano
1 handful mint leaves
1 lemon
Vinegar to taste
Freshly ground black pepper
Evoo to taste
Salt to taste
White corn bread slices (as many as your hunger)
Garlic cloves to taste

Turn the oven at 220º C. Wash the peppers and courgette and put in a baking tray. Add the finelly chopped mint and the oregano. Drizzle with evoo and season with salt and pepper.
Put in the oven for about 30 to 45 mins, or until the vegetables are golden.

Afterwards, remove from the oven and leave to cool down. When cold, chop the vegetables as thin as possible, until you have a smooth spreadable paste (you can leave larger bits if you prefer).
In a bowl, mix the paste with vinegar and lemon juice and rectify the seasoning, if necessary.

Meanwhile, toast the bread slices and rub the garlic in each slice. Drizzle the slices with evoo and spread the paste on top.

It is delicious as a starter or a late-snack!
Pair it wit a good wine to warm up these cold grey days.

Esparguete cor de rosa | Pink spaghetti

É bom quando a cor invade a vida. Nas folhas das árvores, no céu pintalgado de nuvens, no casario da cidade. Dentro de casa as cores aconchegam e confortam, quer seja através de pequenos detalhes ou de outros bem mais evidentes. Mas se há algo onde as cores ganham outra vida e dimensão é no prato. Porque também comemos com os olhos!
O pesto de beterraba foi uma descoberta que veio para ficar. Depois de muitas pesquisas online, acabei por fazer a minha receita e estou mortinha por experimentar com avelãs em vez de nozes.
Surpresa das surpresas, não sabe a beterraba, portanto é perfeito mesmo para aqueles que torcem o nariz a esta herbácea!


Esparguete cor de rosa

400g de beterraba cozida, em cubos
1 chávena de nozes partidas
1 dente de alho, grande
1 lima (sumo)
1 chávena de queijo da ilha ralado
Azeite qb
Sal e pimenta (5 bagas) moída na hora
500g de esparguete
2 queijos de cabra Bilores, esboroados
Pistácios ralados

Para preparar o pesto, colocar a beterraba, as nozes, o alho, o sumo da lima e o queijo num processador de alimentos. Pulsar 3 ou 4 vezes e depois deixar a processar em velocidade baixa enquanto se adiciona o azeite. Parar quando se obtiver a consistência desejada. Colocar metade da quantidade do pesto no frigorífico e reservar a outra metade para utilizar.
Entretanto, cozer a massa em água abundante com sal. Escorrer a massa, devolver ao tacho e misturar bem com o pesto - a massa vai absorver a cor da beterraba por completo!
Servir polvilhada com o queijo de cabra, os pistácios e mais pimenta ralada na hora.


It's wonderful when color invades life. On the tree leaves, in the cloudy sky, on the city skyline. Indoors the colors cuddle and comfort, wether through small or larger details. But if there's a place where colors have another dimension, it's on the plate. Because we also eat with our eyes!
Beetroot pesto was a great finding and it's here to stay. After searching online for recipes, I ended up with one of my own and I'm also looking forward to try it with hazelnuts instead of walnuts.
The biggest of the suprises it that this pesto does not taste of beetroot so it's perfect even for those who are not very fond of this herbaceous!


Pink spaghetti

400g boiled beetroot, cubed
1 cup crumbled walnuts
1 large garlic clove
1 lime (juice)
1 cup grated Azorean cheese
Evoo
Salt and pepper (5 berries) freshly ground
500g spaghetti
2 goat hard cheeses, crumbled
Grated pistachios

For the pesto, place the beetroot, garlic clove, lime juice and cheese in a food processor. Pulse 3 or 4 times and then blend in a medium-slow speed while adding the evoo. Stop when you have the desired consistency. Divide the pesto in two: reserve one half in the fridge to use on another day and the other half to use immediatly.
Meanwhile, cook the spaghetti in boiling water with salt. Drain, return to the pan and mix with the pesto - the spaghetti will absorve the pink color!
Serve topped with the crumbled goat cheese, sprinkled with the pistachios and seasoned with more freshly ground pepper.

Guest post: Lasanha mediterrânica | Mediterranean lasagna

Descobri o Frango do Campo ainda nos seus primeiros suspiros de vida. O nome intrigou-me e achei que a pessoa por detrás dele devia ter um excelente sentido de humor, para além do evidente talento. Leitora assídua, não perco pitada das partilhas da Naida, que nunca deixa de me surpreender quer com as receitas deliciosas quer com as fotos maravilhosas. Hoje trago-a de viagem connosco pelo Mediterrâneo e ela, na sua generosidade infindável, trouxe-nos uma belíssima lasanha vegetariana.

Por vezes é difícil dizer adeus ao Verão.
Começa a apetecer as bolachinhas, o chá a acompanhar, a mantinha a tapar os pés mas os ingredientes da horta não deixam esquecer o Verão por completo.
Ainda há beringelas, tomates e as últimas courgettes que precisam urgentemente de um rumo.


Lasanha meditarrânica

(receita ligeiramente adaptada da revista Continente Magazine nº 36)

Ingredientes:
cerca de 8 placas de lasanha
1 courgette
1 beringela
2 alhos picados
2 queijos frescos (pode usar mozzarella para um toque ainda mais mediterrânico)
Vinagre de maracujá, sal, azeite e manjericão q.b

Preparação:
Coza as placas de lasanha conforme as instruções da embalagem. Depois de cozidas, escorra-as e coloque-as em água fria.
Num grelhador, grelhe a courgette e a beringela previamente cortadas em fatias finas.
Corte o queijo em fatias e reserve.
Num prato disponha uma placa de lasanha, em cima uma camada de legumes grelhados polvilhados com alho picado e temperado com um pouco de sal, vinagre e azeite.
Coloque por cima uma placa de lasanha e em cima o queijo. Mais uma camada de lasanha e legumes temperados e repita o processo até acabarem os ingredientes.
Decore com manjericão e azeite.


I have found Frango do Campo during it's first steps. The name caught my attention and I wondered if the person behind it really had an excellent sense of humor, apart from the evident talent. As a fan reader, I never miss all the good things that Naida shares and she never stops to amaze me wether with the delicious recipes or the tasty photos. Today she is coming with us on our journey through the Mediterranean and, for that, she brought us an amazing vegetarian lasagna.

Sometimes is hard to say farewell to Summer.
We feel start craving for cookies, tea to go with it, a blanket on the couch to tuck our feet that the garden still reminds us of Summer.
There are aubergines, tomatoes, and the last courgettes that desperately need to be consumed.


Mediterranean lasagna

(recipe slightly adapted from Continente Magazine nº 36)

Ingredients:
around 8 lasagna sheets
1 courgette
1 aubergine
2 garlic cloves, chopped
2 cottage cheeses (or mozzarella for a more mediterranean flavour)
Passion fruit vinegar, salt, evoo and basil to taste

Method:
Boil the lasagna sheets accordingly to the instructions in the package. Drain and place them in cold water.
On a grill, grill the courgette and aubergine finelly sliced.
Slice the cheese and keep aside.
On a plate, place one lasagna sheet, top with a layer of grilled veggies sprinkled with garlic and seasoned with salt, vinegar and evoo.
Top with another lasagna sheet and then a bit of cheese. Repeat the layers again until there's no ingredients left.
Garnish with basil and drizzle with evoo.

Uma espécie de pizza grega | A kind of Greek pizza

Não é novidade para ninguém que somos fãs de comida grega. Também não será novidade que somos fãs da Dieta Mediterrânica. E, mesmo correndo o risco de nos repetirmos vezes e vezes sem conta, há bandeiras que nunca deixaremos de empunhar bem lá no alto.
E num desses dias, em que nos apetecia uma pizza feita com os nossos ingredientes favoritos, lá fomos, de viagem pela cozinha, munidos dos sabores que nos são tão familiares. E que viagem! Por momentos demos por nós num desses lanches-ajantarados com todo o tempo do mundo, numa pitoresca casa caiada de branco, com uma linda mesa azul com toalha aos quadrados, de frente a uma praia de areia branca e fina, água cristalina. Demos por nós nessa vida em que o tempo é infinito, imenso e nosso.

Pizza à moda da Grécia

Pão pita congelado (à venda nos supermercados El Corte Inglés) ou fresco (ver a nossa receita aqui)
Molho básico de tomate e manjericão
Revilla picante em fatias
Queijo Gouda ralado
Oregãos secos
Azeite extra-virgem

Numa frigideira, aquecer bem umas gotinhas de azeite. Dourar o pão pita e virar. Cobrir com molho de tomate, dispor as fatias de revilla, polvilhar com o queijo ralado e com os oregãos. Tapar com uma tampa e deixar em lume médio baixo até o queijo estar derretido.


It not new to anyone that we are fans of greek food. It's not new either that we are fans of the Mediterranean Diet. And, taking the risk of repeating ourselves over and over again, there are flags we'll keep on branding high up on the air.
And in one of those days where we were craving for a pizza with our favorite ingredients, there we went, traveling through our kitchen with familiar flavors. And what a journey! For moments, we found ourselves in one of those meals with all the time in the world, in a picturesque white house, with a blue table and square linen cloth, right in front of a white-sand beach with turquoise waters. We found ourselves in that life, where time is infinite, immense and ours. Care to join us?


Greek-style pizza

Pita bread (for frozen go to El Corte Inglés, for fresh, check our recipe here)
Tomate and basil basic sauce
Spicy revilla, sliced
Gouda cheese, grated
Oregano, dried
EVOO

In a frying pan, heat some drops of EVOO, place the pita bread and leave until it's golden. Turn the pita and top with the sauce, display the revilla slices, sprinkle with the cheese and season with the oregano. Cover with a lid until and leave in a low-medium heat until the cheese melts.

Penne de azeitona com mozzarella e tomate | Olive penne with mozzarella and tomato

Estamos de regresso. Uma semana de intenso passeio. De laurear a pevide até não poder mais. De calcorrear muitos kilómetros. Porto. Setúbal. Troia. Porto Covo. Vila Nova de Milfontes. Almograve. Zambujeira do Mar. Odemira. Beja. Évora. Guarda. Vermiosa. Castelo Rodrigo. Porto. No coração trazemos cores, cheiros, sabores. Trazemos a alegria de rever pessoas queridas. Trazemos a barriga cheia de boa comida, mesa farta, copo cheio de vinho bom.
Mas estamos de regresso. E trazemos a vontade das comidas que são nossas e que sabem a casa. É bom passear. Muito bom. Mas também é bom voltar.


Penne de azeitona com mozzarella e tomate

500g de penne de azeitona
300g tomate-cereja
3 bola de mozzarella
1 punhado de rúcula
Folhas de manjericão a gosto
Sal e pimenta moída na hora
Azeite extra virgem Gallo Reserva

Cozer a massa em água abundante com sal. Cortar os tomates em quartos e o mozzarella em cubinhos. Escorrer a massa e devolver ao tacho. Regar com o azeite e temperar com sal e pimenta e o manjericão. Adicionar o tomate, o queijo e a rúcula. Misturar bem e servir.

We bring our bellies filled with good food, abundant tables, glass full of great wine.
But we're back. And we bring the desire for foods that are ours, that taste like home. It's great to travel. Really great. Mas it's also great to come back.


Olive penne with mozzarella and tomato

500g olive penne 
300g cherry tomatos
3 mozzarella balls
1 arugula handfull
Basil leaves to taste
Salt and pepper freshly ground
Extra virgin olive oil

Boil the pasta in abundant water with salt. Slice the tomatos in quartes and the mozzarella in small cubes. Drain the past and return to the pan. Drizzle with olive and season with salt, pepper and basil. Mix well with the tomatos, cheese and arugula and serve.
