Gaspacho à Alentejana | Alentejo-style gazpacho

Numa semana com mais dias cinzentos do que o resto do ano, deu-me para isto: um dia cheguei a casa e a única coisa que me apetecia verdadeiramente comer era um Gaspacho à Alentejana. Talvez por me fazer lembrar os dias de calor tórrido que apanhamos em Monsaraz, em férias na viragem de Junho para Julho. Talvez um gaspacho assim me fizesse voltar à piscina com vistas para a linda cidade altaneira, rodeada de campos dourados ponteados de oliveiras.... "Oh tempo volta p'ra trás..."
Moral de história: não, não fui teleportada para o meu adorado Alentejo, o tempo não voltou para trás (como, aliás, nunca volta!) mas o gaspacho soube-me pela vida! E tenho a certeza que vocês também vão gostar, até porque o sol já voltou a brilhar!

Gaspacho à Alentejana

500g tomate-cereja
250g pimentos tricolores
1 pepino
1/2 meloa cantaloupe
750g água fria
250g cubos de gelo
6 c.sopa azeite
3 c.sopa vinagre vinho branco
Oregãos
Sal
Pimenta moída na hora

Cortar os tomates-cereja em quartos e colocar numa taça.
Retirar as pevides aos pimentos, picar e juntar aos tomates.
Partir o pepino em quartos e retirar as sementes. Fatiar finamente cada tira (quarto) e juntar aos restantes ingredientes.
Remover as pevides da meloa, retirar a polpa com uma colher formando bolinhas e colocar na taça.
Temperar a gosto com sal, pimenta e oregãos, adicionando o azeite e o vinagre e envolvendo bem. Cobrir com a água e com os cubos de gelo, rectificar os temperos, se necessário, e servir.

On the greyest week of the year all I wanted was an Alentejo-style gazpacho. Go figure my cravings! Maybe it reminded me of the lovely, peaceful and scorching hot days when we spent our holidays in Monsaraz, while June turned into July. And maybe it would make me feel like I was back in that pool facing the majestic towering city surrounded by golden olive fields...
Nop! I didn't get transported to my beloved Alentejo, I still don't master the art of turning back the time, but this gazpacho surely made my day! And I'm pretty sure it'll make your day too, especially because the sun is shining again!

Alentejo-style gazpacho

500g cherry tomatoes
250g tricolor peppers
1 cucumber
1/2 cantaloupe melon
750g cold water
250g ice cubes
6 tbsp evoo
3 tbsp white wine vinegar
Oreganos
Salt
Freshly ground pepper

Slice the tomatoes in quarters and set aside in a large serving bowl.
Remove the core and seeds from the peppers, slice them in small cubes and add to the bowl.
Slice the cucumber, lengthwise, in quarters ad remove the seeds from each part. Slice very finely and add to the bowl.
Remove the melon core and seeds and scoop small portions of the pulp into the bowl.
Season to taste with salt, pepper and oreganos as well as with the measured eve and vinegar, mixing thoroughly. Top with the water and ice, rectify the seasoning if necessary and serve.

Bebida de cajú | Cashew drink

Muito trabalho. Férias. Regresso ao muito trabalho. Assim se fez a nossa ausência de 1 mês. Quem nos acompanha no Instagram sempre vai estando mais a par do que por cá se passa. Mas não pensem que temos estado parados. Não senhor! Até foram testadas muitas receitas novas e remodelamos antigas. Mas estivemos a aproveitar bem o tempo (o das férias, que já passou mas há-de voltar em Setembro, e o livre, que é cada vez mais curto) daí que o blogue tenha ficado mais parado. Estamos de volta mas com calma. Com muita calma :)

Bebida de cajú

1 chávena (250ml) de cajús
4 chávenas (1L) de água

Demolhar os cajús em água overnight (8 a 12h). Escorrer e lavar muito bem até a água sair transparente. Colocar os cajús com 2 chávenas de água no liquidificador e misturar bem. Adicionar as restantes duas chávenas de água e voltar a misturar até obter um liquido homogéneo e macio. Está pronto a servir (pode ficar no frigorífico até 4 dias!).
Nota 1: a bebida de cajú não necessita de ser coada pois o cajú dissolve-se totalmente na água.
Nota 2: pode ser aromatizado com o que quisermos  - a imaginação é o limite! A minha versão favorita é fazer um batido com banana e cacau :)

Loads of work. Holidays. Coming back to loads of work. This is why we were away for over a month. Those who follow our Instagram account are a bit more updated to what's going on around here. But don't go thinking that we have been lazy. No Sir!  We have tested a good batch of new recipes and revamped old ones. But we kept ourselves busy enjoying our time together (the holidays, gone by but hopefully back in September, and the leisure, which grows shorter like the days!) so we left the blog unatended. We're back but taking it easy. Deadly easy :)

Cashew drink

1 cup (250ml) raw cashews
4 cups (1L) water

Soak the cashews in water overnight (8 to 12h). Drain and rinse well until the water runs clear. Place cashews and 2 cups of water in a blender and blitz until smooth. Add the remaining 2 cups of water and blitz again until the liquid is smooth and homogenous. It is ready to serve (it'll keep in the fridge until 4 days!).
Note 1: there's no need to drain the cashew drink as cashews totally dissolve in the water.
Note 2: you can flavour it as you wish - the sky is the limit! My favourite is using it in a milkshake with banana and cacao :)

Mousse de café e chocolate negro | Coffee and dark chocolate mousse

Como devem ter reparado, andamos meio fugidos. Nesta altura de pré-férias o tempo desaparece num buraco negro e para além do trabalho pouco conseguimos adiantar. Mas não queriamos partir (naquela estrada!!!) sem vos deixar uma sugestão perfeita para estes dias de calor abrasador. E que sugestão!!!! Inspirados pela talentosa dupla Green Kitchen Stories, deixamo-nos levar por uma das suas mais recentes criações até chegarmos a esta mousse densa e repleta de sabor. Ah, claro, e repleta de coisas boas! :)

Mousse de café e chocolate negro

400g feijão preto cozido
10 tâmaras carnudas, descaroçadas
2 c.sopa óleo de côco
180ml café forte (3 "cimbalinos")
160ml de leite (da vossa preferência)
200g chocolate negro 70% partido
Pistácios picados
Cerejas

No copo da Bimby colocar o chocolate e ralar 10s na vel. 8. Baixar das paredes do copo com a ajuda da espátula e adicionar o leite. Derreter 2mins a 50º C na vel. 3. Juntar os restantes ingredientes e misturar muito bem durante 20s na vel. 7. Distribuir a mousse por tacinhas e levar ao frigorifico pelo menos 2h. Polvilhar com pistácios picados e enfeitar com cerejas antes de servir.

As you probably might have noticed, we have been quite silent. During this pre-holiday weeks time seems to simply disappear into a black hole and we accomplish very little apart from our jobs. But we didn't want to leave for our two-week holiday break without sharing with you something perfect for these scorching days. And what a treat we have here!!!! Inspired by the super talented couple of Green Kitchen Stories, we got carried away by one of their latest creations and we achieved this dense mousse with plenty flavour. Ah, and packed with good stuff! :)

Coffee and dark chocolate mousse

400g black beans, boiled
10 soft dates, pitted
2 tbsp coconut oil
180ml strong coffee (3 expressos)
160ml milk (of your preference)
200g dark chocolate 70% roughly chopped
Pistachios, finelly chopped
Cherries

Place the chocolate in the Thermomix bowl and grate for 10s on speed 8. With the spatula, clean the bowl walls. Add the milk and gently melt for 2mins at 50º C on speed 3. Add in the rest of the ingredients and mix very well for 20s on speed 7. Pour the mousse into cups and leave in the fridge for at least 2h. Serve sprinkled with pistachios and top with a cherry.

Creme de arroz, coco e baunilha | Coconut vanilla rice pudding

Quem nos acompanha pelo instagram sabe que sou fã do pequeno-almoço a preceito em qualquer dia da semana. Prefiro ter que me levantar mais cedo e sair de casa já no ultimo minuto, só para ter o prazer de me sentar à mesa com uma bela refeição, diferente todos os dias. Confesso que me faz confusão comer sempre a mesma coisa ao pequeno-almoço. Se não faço isso ao almoço nem ao jantar, certamente que não o farei com a principal refeição do dia! Gosto de ter tempo para saborear com calma este despertar dos sentidos. Claro que a minha cara-metade é o oposto: café e basta! Quando calha de tomarmos o pequeno-almoço juntos diz sempre: de facto, tu não morres à fome!
E porque gosto tanto, tanto, tanto de um bom pequeno-almoço, tento preparar algumas das coisas no dia anterior para de manhã ter tempo de qualidade sem andar a correr de um lado para o outro.

Creme de arroz, coco e baunilha

600g leite gordo
400ml leite coco (1 lata)
150g arroz carolino
1 vagem de baunilha
1 pitada sal
2 c.sopa mel de flor de laranjeira

Colocar no copo o leite, o arroz, a vagem de baunilha (cortada ao meio juntamente com o interior raspado) e o sal envolvendo bem com a espátula. Cozinhar durante 50mins a 90º C na velocidade-colher inversa. Findo o tempo, adicionar o mel, misturar bem e colocar numa travessa (ou distribuir por tacinhas). 
Servir acompanhado de fruta fresca, frutos secos, sementes, pólen, etc!

Those who follow us on instagram know that I'm a breakfast lover. I rather wake up a bit earlier and leave the house in the last minute just for the pleasure of seating at the table and enjoy a lovely different meal every day. I'm not fond of eating the same breakfast over and over again, since it's the most important meal of the day and we should give it the same attention and effort we have for lunch of dinner. My other half is totally the opposite: coffee and he's ready to go! When we have breakfast together he normally stares at me and says "you surely will not go hungry!"
And because I really love a proper delicious breakfast, some of the things are prepared ahead, so that in the morning I have enough quality time to simply enjoy :)

Coconut vanilla rice pudding

600g full fat milk
400ml coconut milk (1 can)
150g arborio rice
1 vanilla pod
1 pinch salt
2 tbsp orange blossom honey

Place the milk, rice, vanilla pod (the pod and the scrapped paste) and salt in the TM bowl and mix well using the spatula. Cook for 50mins at 90º C on reverse spoon. Mix in the honey and pour the rice pudding into a large plate (or divide for several bowls).
Topping suggestions: fresh fruit, dried fruits, seeds, polen, etc.

Arroz negro doce | Black rice pudding

Eu sei... chegou a primavera e, de repente, apresentamos receitas escuras. Até parece que gostamos de contrariar! E gostamos, mas não é essa a razão. A verdade verdadinha é que esta receita do My New Roots estava marcada para ser feita desde o dia em que foi publicada pela Sarah B. Mas como mais vale tarde do que nunca, há que partilhar aquele que é o meu (arroz doce não é com o Vel!) mais recente vício e esperar que fiquem igualmente fãs :)

Arroz negro doce

200g arroz negro 
400ml leite côco
125ml de água
1/4 c.chá sal fino
1/2 c.chá pasta de baunilha
1 c.sopa mel de laranjeira

Lavar bem o arroz, colocar numa taça coberto com água e deixar de molho durante a noite (ou durante o dia!). Lavar bem e escorrer.
No copo da Bimby colocar o arroz com o leite de côco, a água e o sal envolvendo bem com a espátula.  Cozinhar durante 50mins a 90ºC, colher inversa. Findo este tempo adicionar o mel, misturar bem com a espátula e colocar numa taça para servir.

Nota: para servir utilizei leite de soja e a fruta perfeita é a manga, embora fique bem com morangos, kiwis, etc. Podem também adicionar frutos secos (os pistácios fazem um lindo contraste de cor) e ainda côco ralado.

I know, I know... spring arrived and we share dark recipes with you. It's almost as if we like to contradict! We do, but that's not the main reason. The truth is that this recipe was marked since the day it was published by Sarah B. on her My New Roots. And, once it's better late than never, we finally share with you my (Vel is not fond of rice pudding) latest addiction and I hope you love it just as much  :)

Black Rice Pudding

Ingredients:
200g black rice
400ml full-fat coconut milk
125ml water 
¼ tsp. fine grain sea salt
½ vanilla bean paste
1 tbsp orange blossom honey

Measure out rice, rinse and cover with water. Let soak overnight or for up to 8 hours. Drain and rinse well again.
Place rice in the Thermomix with coconut milk, salt, vanilla paste and the indicated amount of water. Cook for 50mins at 90ºC in reverse spoon. Add the honey and fold to combine and pour into a serving bowl.

Note: I served the black rice pudding with soya milk and fruit, mango being the best combination and but strawberries or kiwi worked well too. Add some dried fruits (pistachios add a nice colour contrast) and some flaked coconut.

Panettone is the new cake!

Mais de um mês depois voltamos ao blogue. O tempo voa e quando damos por ela passaram-se semanas! Por cá tivemos aniversários para festejar e com tanto em que pensar acabamos por ir deixando as receitas para depois. Mas claro, quem nos segue no instagram sempre está mais actualizado!
Entretanto, temos um novo amor. É verdade... o panettone. É o nosso novo bolo de eleição e qualquer combinação é brilhante. Este pão quase bolo é adocicado mas não muito e conquistou o nosso coração. Esperamos que também conquiste o vosso :)

Panettone de arandos, pistácios e chocolate negro
(revista Bimby n.º 49)

180g leite magro
100g açúcar amarelo
25g fermento padeiro fresco
3 ovos
1+1/2 c.chá pasta de baunilha
500g farinha T65
1 c.chá sal
200g manteiga em cubinhos à temp. ambiente
60g arandos secos
80g pistácios s/ casca
1 laranja (raspa)
100g pepitas chocolate negro

No copo, colocar o leite, o açúcar e o fermento e aquecer 1min / 37º C / vel. 1.
Adicionar os ovos e a baunilha e bater durante 5s / vel. 4.
Juntar a farinha e o sal e amassar 2min / vel. espiga. Deixar a massa levedar dentro do copo, num local morno, durante cerca de 50mins (ou até dobrar o volume).
Baixar com a espátula o que tiver ficado nas paredes do copo, adicionar a manteiga, os arandos, os pistácios, a raspa da laranja e as pepitas de chocolate e amassar 1min30s / vel. espiga.
Retirar a massa para uma forma redonda, previamente untada e forrada com papel vegetal, e deixar levedar cerca de 40mins (ou até dobrar de volume).
Levar ao forno pré-aquecido a 180º C durante cerca de 50mins, ou até estar cozido e dourado. Deixar arrefecer em cima de uma rede antes de servir.

Over a month later we return to the blog. Time flies and when we realize weeks have gone by! Around here we had anniversaries to celebrate and with so much going on we ended up leaving the recipes for later. But, of course, those who follow our instagram account are totally updated!
Meanwhile, we have a new crush. True... the panettone. It's our new cake of choice and any flavour combination is a winner. This caky bread is sweet but not much and won our hearts. So we hope it wins your heart too :)

Dark chocolate, cranberries and pistachios panettone
(Bimby magazine n.º 49)

180g skimmed milk
100g light brown sugar
25g fresh yeast
3 eggs
1+1/2 tsp vanilla paste
500g bread flour
1 tsp salt
200g butter, in cubes at room temperature
60g dried cranberries
80g shelled pistachios
1 orange (zest)
100g dark chocolate chips

In the bowl, place milk, sugar and yeast and heat up 1min / 37º C / vel. 1.
Add eggs and vanilla and whisk for 5s / vel. 4.
Add flour and salt and knead for 2min / vel. ear. Leave to proof in the bowl, in a warm place, for 50min or until doubled in size.
With the spatula, lower what's attached to bowl and add the butter, cranberries, pistachios, orange zest and chocolate chips. Knead for 1min30s / vel. ear.
Remove the dough into a round spring tin, previously coated with grease paper, and leave proofing for 40mins (or until doubled in size).
Place in the pre-heated oven at 180º C for 50mins, or until cooked and golden. Leave to cool on a wire-rack before serving.

Creme de chocolate | Chocolate cream

Numa manhã solarenga, morna e preguiçosa o pequeno-almoço foi tardio, ainda no silêncio hibernal. Folhear um livro, ver as imagens bonitas do Instagram, planear o dia que se estende à nossa frente: aproveitar o calor fraco do sol que nos veio dizer bom dia e calcorrear os locais favoritos da cidade.
Mas antes, há tempo para o pequeno-almoço! E nada melhor do que uma tacinha de creme de chocolate para nos deixar de sorriso na cara!

Creme de chocolate

1 abacate maduro
2 bananas maduras
1 c.sopa cacau
Mel (opcional)

Colocar a polpa do abacate, a banana e o cacau num copo alto e bater com a varinha mágica até obter um creme (se estiver muito espesso, juntar um pouco de leite). Dividir por duas taças e, se necessário, adoçar com um pouco de mel.

On a sunny, warm and lazy morning breakfast was late, still in the hibernation silence. To browse a book, to daydream with the Instagram beautiful photos, to plan the day unfolding in front of us: enjoy the weak sun that came out to greet us and stroll around our favorite places in town. But, before that there's always time for breakfast! And nothing better than chocolate cream to put a smile on our faces!

Chocolate cream

1 ripe avocado
2 ripe bananas
1 tbsp cacao
Honey (optional)

Place the avocado pulp, the banana and the cacao in a blender and blitz until you have a smooth paste (if it's too thick, add a splash of milk). Pour into two bowls and, if necessary, sweeten with honey to you liking.

Arroz Doce | Rice pudding

Este mês estamos de parabéns, o blogue faz 3 anos. Queríamos festejar com grande pompa e circunstância mas a verdade é que a falta de tempo estacionou por aqui e parece não ir mais embora. Ainda assim vamos ter direito a alguns festejos. Começamos por um arroz doce pouco doce, com travo a limão e polvilhado de canela. E quase que cheira a Natal...


Arroz doce
(adaptado do livro ABC da Bimby)

1000g leite magro
150g de arroz carolino
4 tiras de casca de limão (apenas a parte amarela)
1 pau de canela
1 pitada de sal
100g açúcar amarelo
4 gemas de ovo
Canela para polvilhar

Colocar no copo o leite, o arroz, a casca de limão, o pau de canela e o sal e programar 15min/90°C/função inversa/velocidade-colher.
Retirar a tampa e envolver com a espátula.
Programar 25min/90°C/função inversa/velocidade-colher.
Adicionar o açúcar, as gemas previamente desfeitas num pouco de arroz doce e envolver com a ajuda da espátula.
Programar 10min/90°C/função inversa/velocidade 1,5.
Deitar num recipiente grande ou em taças pequenas e deixar arrefecer.
Quando estiver frio polvilhar com canela em pó.


November is a celebration month for the blog is 3 years old. We wanted to celebrate in big style but the lack of time seems to have parked around here for good. Still, we are entitled to some nice things. And we start off with a lovely rice pudding (or sweet sticky rice, as I like to call it), with hints of lemon and sprinkled with cinnamon. It almost smells like Xmas...


Rice Pudding
(adapted from the Thermomix Basic Book)

1000g skimmed milk
150g carolino rice
4 stripes of lemon zest (the yellow only)
1 cinnamon stick
1 pinch of salt
100g light brown sugar
4 egg yolks
Cinnamon powder for sprinkling

Place the milk, rice, lemon zest, cinnamon stick and pinch of salt inside the mixing bowl and set for 15min/90°C/stirring/lowest speed.
Remove the lid and mix with the spatula.
Set for 25min/90°C/stirring/lowest speed.
Add the sugar, the yolks previously mixed with 4 tbsp of the rice mix and stir with the spatula.
Set for 10min/90°C/stirring/vel. 1,5.
Place the rice pudding in a large bowl or distribute by small cups and leave to cool.
When cold, sprinkled with cinnamon powder to your liking.

Halloumi, grão de bico e Z'aatar | Halloumi, chickpeas and Z'aatar

Ultimamente temos andando ausentes. Com o blogue a meio-gás. Primeiro foram as férias de Junho. Depois 2 meses de muito trabalho. Depois as férias de Setembro. Pelo meio, as tentativas frustadas de coincidir os horários. E as tentativas frustadas de aproveitar o bom tempo. E com isto o outro tempo fugiu-se-nos por entre os dedos e damos por nós no Outono sem que o Verão alguma vez tenha chegado. E, nós que até somos mega-fãs do Outono, ainda não nos sentimos preparados para as sopas de abóbora, para os camisolões, para as mantas no sofá e as chávenas fumegantes. E por isso presenteamos a estação das estações com um petisco que ainda puxa a brasa para outras sardinhas!


Wraps de alface com grão de bico, Z'aatar e halloumi

1 barra queijo halloumi
400g grão de bico cozido
1 c.sopa z'aatar
Pimenta moída na hora
2 c.sopa azeite
1 alface muito fria

Separar as folhas da alface, lavar muito bem e colocar no centrifugar de legumes para retirar a água. Manter as folhas dentro de uma caixa, no frigorífico, até à hora de servir.
Cortar a barra de halloumi em fatias com cerca de 1 cm de espessura e grelhar numa frigideira anti-adererente pincelada com umas gotinhas de azeite.
Entretanto, colocar o grão de bico numa taça e temperar com o azeite, a pimenta e o z'aatar (não necessitar de levar sal pois o queijo já é bastante salgado).
Virar as fatias de queijo e, quando douradinhas de ambos os lados colocar num prato.
Colocar as folhas de alface num outro prato e servir.
Para degustar fazem-se wraps de folha de alface com o grão de bico e as fatias de halloumi.


Lately we have been a bit absent. With the blog simmering away. First it was the June holidays. Then 2 months of intense work. Afterwards the September holidays. In between, the frustrated attempts to synchronize schedules. And the frustrated attempts to get hold of Summer. And so time slipped through our fingers and we find ourselves in the presence of Autumn without having met Summer. So, even though we are Autumn lovers, we're not quite ready for the pumpkin soups, jumpers, couch blankets nor smoking hot cups. And that's why we welcome our beloved season with a snack that still feels quite summery.


Halloumi, chickpeas and Z'aatar with lettuce wraps

1 halloumi slice
400g boiled chickpeas
1 tbsp z'aatar
Freshly ground pepper
2 tbsp evoo
1 lettuce (very cold)

Separate de lettuce leaves, wash very well and centrifuge to remove the excess water. Keep the lettuce leaves in a box, in the fridge until serving time.
Cut the halloumi in 1cm slices and grill in a frying pan previously greased with evoo until golden.
Put the chickpeas in a bowl, drizzle with the evoo and season with pepper and Z'aatar (no salt is needed and the cheese is already quite salted).
Turn the halloumi slices and, when golden on both sides, set aside on a plate.
Place the lettuce leaves on another plate.
For the wraps, place a generous amount of chickpeas a slice of halloumi in each lettuce leaf and fold it.

Pizza de beringela e courgette amarela | Aubergine and yellow courgette pizza

Da visita semanal ao mercado biológico vieram beringelas e courgettes amarelas. Lindas. E já durante as compras a mente fervilhava: rechear e assar? Rechear e estufar? Cortar à rodelas? Ai ai ai...
Uma das courgettes foi cortada em tirinhas e, juntamente com rúcula, queijo feta, oregão secos, pimenta moída na hora e azeite, animou um belo esparguete. A outra foi recheada e estufada num molho delicioso. E a ultima courgette casou com uma das beringelas nesta deliciosa pizza.

Pizza de beringela e courgette amarela

6 pães pita (caseiros ou congelados)
1 courgette amarela redonda
1 beringela
2 queijos de cabra Bilores
Oregãos secos
Pimenta moída na hora
Azeite

Colocar os pães pita num tabuleiro untado com azeite. Dispor em cada pão rodelas de courgette e beringela, alternadas. Polvilhar com o queijo esfarelado e temperar com oregãos e pimenta. Salpicar com azeite e levar ao forno pre-aquecido a 220º C até estarem douradinhas (cerca de 15 a 20 mins).


From the weekly visit to the organic farmers market came the aubergines and yellow courgettes. Just beautiful. During the shopping the mind was already sizzling with ideas: stuff and roast? Stuff and stew? Slice? Ai ai ai... decisions!
One of the courgettes was sliced at length in a mandoline and, together with arugula, feta cheese, dry oregano, freshly ground pepper and evoo turned a simple spaghetti dish into a star. The other was stuffed and stewed in a delicious sauce and the last one paired with one of the aubergines in this delicious pizza.

Aubergine and yellow courgette pizza

6 pita breads (homemade or frozen)
1 yellow round courgette
1 aubergine
2 hard small goat cheeses
Dried oregano
Freshly ground pepper
Evoo

Place the pita breads in a tray greased with evoo. Top each pita with alternated slices of courgette and aubergine. Sprinkle with the crumbled cheese and season with oregano and pepper. Drizzle with evoo and leave in the pre-heated oven at 220º C until golden (15-20mins).

Bolo Picado de Abelha | Bee Sting Cake

Um clássico cá de casa com cara renovada. Inverno ou Verão, não há estação que lhe seja indiferente. Um bolo perfeito. Sempre!

Picado de Abelha
(adaptado pela minha mãe da revista Vaqueiro n.º 35 de Janeiro de 1997)

Massa:
100g Vaqueiro líquida
100g açúcar
1 ovo
Sal
3 c. sopa de leite
250g farinha
1 c. chá fermento em pó

Cobertura:
125g manteiga
150g açúcar
150g amêndoa palitada
5 c. sopa de leite

Bater a Vaqueiro líquida com o açúcar. Juntar o ovo, uma pitada de sal, o leite e misturar bem. Adicionar a farinha peneirada com o fermento e mexer para ligar os ingredientes. Deitar a massa numa forma de tarte previamente forrada com papel vegetal e untada. Preparar a cobertura levando ao lume a manteiga com o açúcar, as amêndoas palitadas e o leite. Deixar levantar fervura e deitar sobre a massa que se encontra na forma. Levar ao forno durante cerca de 30 mins a 220º C (a meio da cozedura poderá ser necessário cobrir com folha de alumínio para as amêndoas não torrarem demais).


An all times favorite with a facelift. Winter or Summer, no season is complete without it. A perfect cake. Always.

Bee Sting Cake
(adapted by my mother from the magazine Vaqueiro n.º 35 January 1997)

Cake:
100g liquid margerine
100g sugar
1 egg
Salt
3 tbsp milk
250g flour
1 tsp baking powder

Topping:
125g butter
150g sugar
150g flaked almonds
5 tbsp milk

Beat the liquid margerine with the sugar. Add the egg, pinch of salt, the milk and mix thoroughly. Sift in the flour and whisk to bond the ingredients. Pour the dough into a previously greased spring form tin with baking paper. Prepare the topping by heating the butter with the sugar, almonds and milk. Leave to boil and remove from the heat straight away. Pour over the cake dough and leave in the pre-heated oven at 220º C for 30mins (midway, iy might be necessary to cover the cake with foil, to avoid burning the almonds).

Sopa púrpura | Purple soup

Chovisca. Chove. Troveja. Cá dentro há calor, protecção, coisas boas. A cozinha cheira bem e a magia acontece em cada pequeno passo, em cada movimento. Da mercearia da esquina veio a couve-flor. Roxa. Linda, linda, linda. As cebolas, roxas também, fizeram-lhe logo olhinhos. Foi paixão assolapada à primeira vista. E à primeira colherada!


Sopa de couve-flor e cebola roxas

500g de couve-flor roxa
2 cebolas roxas
Água
Sal e pimenta
Azeite

Partir a couve-flor em raminhos e cortar cada cebola em 8 partes. Colocar no copo da Philips Soup Maker, temperar com sal e pimenta moída na hora e cobrir com água até à marca inferior. Escolher o programa para Sopa Passada. Servir com um fiozinho de azeite.


It drizzles. It rains. It roars. Inside there's warmth, protection, great things. The kitchen smells heavenly and the magic happens in each little step, in each movement. From the grocery came the cauliflower. Purple. Beautiful. The onions, purple as well, glanced over them. It was love at first sight. And at first spoonful!


Purple cauliflower and onion soup

500g purple cauliflower
2 purple onions
Water
Salt and pepper
Evoo

Break the cauliflower into florets and slice each onion in 8 parts. Place them in the Philips Soup Maker vessel, season with salt and freshly ground pepper and cover with water until the lower mark. Choose the Creamy Soup Program. Serve drizzled with evoo.

Mousse de lima com maracujá | Lime mousse with passion fruit

A Primavera indecisa que nos assola faz-nos suspirar por dias melhores. Dias quentes de sol, sal, areia e mar. Dias de férias em que o carro desliza pelas estradas de Portugal em busca daqueles recantos paradisiacos para um picnic e descansar o corpo.
Mas enquanto a Primavera continua indecisa, já com queda para bipolar, viajamos pelos sabores tropicais de uma mousse de lima com maracujá. Levezinha, pois claro, que o bikini está mortinho por sair da gaveta!


Mousse de lima com maracujá

6 limas (sumo e raspa)
1 lata leite condensado magro
500g iogurte grego
10 maracujás
Mel
1 c.sopa sementes chia
Pólen de abelha

Para a compota fria de maracujá, cortar os frutos ao meio e retirar a polpa para uma tacinha. Adoçar com mel a gosto e misturar com as sementes chia. Levar ao frigorífico durante a noite.
Para a mousse, colocar a raspa e o sumo das limas numa taça grande e misturar bem com o leite condensado (a mistura vai engrossar). Envolver bem o iogurte e distribuir por copos ou taças. Levar ao frigorífico pelo menos 4h.
Na altura de servir, dividir a compota fria de maracujá pelas taças de mousse e polvilhar com pólen de abelha.


This indecisive Spring that has settled down makes us dream of better days. Warm days of sun, salt sand and sea. Days of holidays when the car slides on the Portuguese roads only to find those paradisiac spots for a picnic and slumber.
But while the Spring remains borderline bipolar, we travel through the tropical flavours with a lime mousse with passion fruit. A light one, since the bikini is dying to come out of the drawer!


Lime mousse with passion fruit

6 limes (juice + zest)
1 can condensed milk
500g greek yogurt
10 passion fruits
Honey
1 tbsp chia seeds
Bee pollen

For the passion fruit raw jam, cut the fruits in half and scoop the pulp into a small bowl. Sweeten with honey to taste and mix in the chia seeds. Leave in the fridge, overnight.
For the mousse, whisk the lime zest and juice with the condensed milk in a large bowl. As you whisk the mix will thicken. Incorporate the yogurt and distribute into bowls, cups or glasses. Leave in the fridge at least for 4h.
Right before serving, divide the passion fruit jam for each glass of mousse and sprinkle with bee pollen.

Bolo de Azeite, Alecrim e Chocolate | Olive Oil, Rosemary and Chocolate Cake

Cá em casa temos uma paixão assolapada por azeite. E como o fim de semana está à porta, nada melhor do que um delicioso bolo que não pesa na consciência e que é uma ode ao azeite. E neste caso um azeite excelente, que nos foi entregue em mãos pelo talentoso Filipe, do Chilli com Todos


Bolo de Azeite, Alecrim e Chocolate

3/4 chávenas farinha integral T150
1 1/2 chávenas farinha T55
3/4 chávenas açúcar amarelo
1 1/2 c.chá fermento
3/4 c.chá sal
3 ovos
1 chávena azeite
3/4 chávena leite magro
1 1/2 c.sopa alecrim fresco, finamente cortado
150g pepitas de chocolate negro (70% cacau)

Untar com azeite uma forma redonda de mola. Peneirar os ingredientes secos para uma taça grande, devolvendo-lhe todos os pedacinhos de grão que ficarem retidos na peneira. Noutra taça, bater bem os ovos. Juntar o azeite, leite, alecrim e misturar. Com uma espátula, envolver os ingredientes líquidos dos secos, misturando gentilmente apenas o suficiente para os combinar. Adicionar o chocolate. Deitar a massa na forma, espalhar por por igual e alisar o topo. Levar ao forno pré-aquecido a 180º C durante cerca de 40mins ou até o topo estar arredondado e dourado, ligeiramente mais escuro nos rebordos e desde que o teste do palito esteja ok. O bolo pode ser comido morno ou frio.


Around here we have a crush on olive oil. And since the weekend is just around the corner, nothing better than a delicious and (kind of) healthy cake which is also an ode to olive oil. And in this case and excellent olive oil handed to us by the talented Filipe, from Chilli com Todos.


Olive Oil, Rosemary and Chocolate Cake

3/4 cups whole wheat flour
1 1/2 cup all-purpose flour
3/4 cups brown sugar
1 1/2 tsp baking powder
3/4 tsp salt
3 eggs
1 cup evoo
3/4 cups whole milk
1 1/2 tbsp fresh rosemary, finely chopped
150g bittersweet chocolate (70% cacao) chips

Rub a fluted tart pan with olive oil. Sift the dry ingredients into a large bowl, pouring back into the bowl any bits of grain or other ingredients that may remain in the sifter, and set aside. In a large bowl, whisk the eggs thoroughly. Add the evoo, milk, and rosemary and whisk again. Using a spatula, fold the wet ingredients into the dry ingredients, gently mixing until just combined. Stir in the chocolate. Pour the batter into the pan, spreading it evenly and smoothing the top. Bake in a pre-heated oven at 180º C for about 40mins, or until the top is domed, golden brown, and darker around the edges, and a skewer inserted inserted into the center comes out clean. The cake can be eaten warm or cool from the pan.

Millet, iogurte e maracujá | Millet, yogurt and passion fruit

O dia começa de mansinho. Com uma luz brilhante reflectida pelo céu azul. Finalmente o sol brilha, aquece e apetece. Finalmente o Inverno começa a levantar o seu manto, revelando uma Primavera-menina que em breve será uma bela jovem. A nós cabe aproveitar cada minuto precioso, morno e solarengo, sorrir ao ver os rebentos que brotam da terra que ainda cheira a molhado. A nós cabe sentir este pulsar vigoroso que anuncia o regresso da vida que se manteve latente, trabalhando em segredo debaixo da terra para agora nos deslumbrar. A nós cabe acordar e descobrir um mundo novo nos sabores de sempre. 


Millet, iogurte e maracujá

Millet tufado
Iogurte grego
Compota fria de maracujá:
10 maracujás (polpa)
2 c.sopa sementes chia
2 c.sopa mel de rosmaninho
1 c.chá pólen de abelha

Preparar a compota na noite anterior: misturar a polpa dos maracujás com as sementes e o mel. Colocar no frigorífico overnight.
Numa taça colocar millet tufado, iogurte grego batido e compota fria de maracujá. Polvilhar com pólen de abelha e servir.
Nota: a compota fria pode ser feita com qualquer fruta. Vejam aqui a nossa versão com framboesa.

All we have to do is feel this vigorous pulse announcing the return of the life that remained latent, secretly working in the underwold to finally dazzle us. All we have to do is wake up and find a new world in the all-time flavors.


Millet, yogurt and passion fruit

Puffed millet
Greek yogurt
Raw passion fruit jam:
10 passion fruits (pulp)
2 tbsp chia seeds
2 tbsp rosemary honey
1 tsp bee polen

Prepare the jam on the night before: thoroughly mix the passion fruit with the seeds and honey. Keep in the fridge overnight.
In a bowl place the puffed millet, the whipped greek yogurt and the raw passion fruit jam. Sprinkle with the polen and serve.
Note: this jam can be made with any fruit you like. Check here our version with raspberry.
