Estamos de volta, com bananas! | We're back, with bananas!

Faz mais de 3 meses que por aqui passei para partilhar convosco uma receita. Durante esta ausência a vida não parou, muito pelo contrário, passou à velocidade da luz. Foram as férias de verão, foi o regresso a um trabalho em mudanças, foram muitas receitas (muitas mesmo!) por fotografar, foi um workshop de fotografia e que me fez ficar ainda com mais saudades de ter tempo para o que realmente gosto, foi o ajustar ao trabalho antigo em casa nova, e foi, acima de tudo, aproveitar o pouco tempo de descanso para estar com as pessoas do coração, para passear, aproveitar o sol e recuperar energias. Mas espero estar de volta, pois já tenho saudades vossas :)

Granola de banana 
(adaptado de "Chunky Banana Bread Granola" do livro "My New Roots")

80ml azeite Gallo Frutado
3 bananas maduras
100ml mel multifloral
300g flocos de aveia
185g trigo sarraceno em grão
65g coco laminado
70g sementes de girassol
2 c.chá canela
1/2 c.chá sal marinho
140g avelãs grosseiramente picadas

Num processador, misturar bem o azeite com as bananas e o mel. Numa taça, misturar os restantes ingredientes e adicionar os liquidos, mexendo até estarem bem incorporados. Reservar uma parte para os queques e colocar o restante num tabuleiro revestido com papel vegetal. Levar ao forno pré-aquecido a 180º C durante 15-20mins, até dourar. Remover do forno e soltar a granola com a ajuda de uma espátula. Voltar a colocar no forno e virar a granola a cada 3-4mins durante cerca de 15min (num total de 30mins). A granola deve ficar seca e crocante. Retirar a granola e deixar arrefecer completamente antes mexer. Guardar num frasco hermético até 1 mês (duvido que vos dure 1 semana!)

Queques de banana e chocolate 

60ml de leite magro
6 c.sopa de azeite Gallo Frutado
6 c.sopa mel multifloral
1 c.chá pasta baunilha
5 bananas maduras esmagadas
150g farinha + 150g farinha integral
1 c.chá bicarbonato de soda
1 c.chá fermento em pó
1/2 c.chá sal marinho
125g de amendoins torradas, partidos
100g de chocolate negro 85%, em pedaços

Num processador, misturar o leite, azeite, mel, pasta de baunilha e as bananas até obter uma mistura macia. Numa taça, combinar os ingredientes secos e adicionar a mistura de banana, misturando o mínimo possível. Envolver os amendoins e o chocolate e deitar dividir a massa por 12 forminhas de queques. Terminar cada queque com uma porção da Granola de Banana reservada e levar ao forno pré-aquecido a 180º C durante 20-25mins.

It's been more than 3 months since I last shared a recipe with you. During my absence life didn't stop, on the contrary, it went as fast as light speed. There were the holidays, then going back to a changing work, many many recipes unfotographed, then a fotography workshop that really made me miss having time for the things I enjoy the most, then it was settling in my work's new house but, above all it'll came down to enjoy the little free time to be around my lovely people, travel a bit, enjoy the sun and recharge batteries. But I sincerely hope I'm back, as I miss you guys a lot :)

Banana bread granola 
(adapted from "Chunky Banana Bread Granola" in "My New Roots" cookbook)

80ml fruity evoo
3 ripe bananas
100ml multifloral honey
300g rolled oats
185g buckwheat groats
65g coconut flakes
70g sunflower seeds
2 tsp cinnamon
1/2 tsp sea salt
140g hazelnuts, coarsley chopped

In a food processor, blend the evoo with the bananas and honey until smooth. In a bowl mix the rest of the ingredients and add the liquid mix, stirring well to coat. Keep some aside and pour the rest of the granola onto to a linned baking tray. Leave in the pre-heated oven at 180º C during 15-20mins, until golden. Remove from the oven and flip the granola in large chunks returning to the oven and flipping every 3-4mins for about 15mins (for a total of 30mins). The granola should be dry and crispy. Leave to completely cool down before storing in an airtight container, where it'll last for a month (though I doubt it'll last a week!).

Banana and chocolate muffins

60ml skimmed milk 
6 tbsp fruity evoo
6 tbsp multifloral honey
1 tsp vanilla paste
5 mashed ripe bananas
300g flour (equal parts light + whole)
1 tsp baking soda
1 tsp baking powder
1/2 tsp sea salt
125gg chopped peanuts
100g chopped dark chocolate

Put the milk, evoo, honey, vanilla, and bananas in a blender and blend until smooth. In a large bowl combine dry ingredients. Add banana mixture and combine using as few stroked as possible. Fold in nuts and chocolate. Pour into muffin molds pan and smooth the top. Top with the reserved Banana Bread Granola and bake at 180º C until a toothpick inserted in the center comes out clean (for about 20-25mins).

Pizza enrolada de "spanakopita" | "Spanakopita" rolled pizza

Esta zona Atlântico-Mediterrânica onde vivemos é sem dúvida é nossa preferida, tanto para viajar como para comer. Perdemo-nos pelos sabores ancestrais, pela sua riqueza e variedade, pela componente saudável. Temos sem dúvida o nosso coração bem enraizado nesta terra, nas suas gentes tão diferentes e mas de costumes e valores tão iguais, nas suas comidas que, apesar do ar por vezes moderno, são tão tradicionais. E foi assim que nasceu esta receita. Da nossa vontade de uma spanakopita sem massa filo. Era para ser uma quiche mas fomos assaltados pelo desejo de pizza e voilá! Cá está ela! Sem dúvida uma receita que vai passar a ser um dos clássicos cá de casa pois ficamos absolutamente fãs da combinação da base da pizza e o recheio da tradicional spanakopita.

Massa de pizza

220g água
1 c.chá açúcar amarelo
2 c.chá fermento padeiro seco
400g farinha T65
30g azeite
1 c.chá sal
3 c.chá sementes de nigella
6 c.chá sementes de sésamo
1 ovo batido

No copo da Bimby colocar a água, o açúcar e o fermento e misturar tudo durante 20s / 37º C/ vel 2.
Adicionar a farinha, o azeite e o sal e amassar 2min/vel espiga. Retirar a massa para uma taça polvilhada com farinha (rodar a lâmina para soltar melhor a massa) e cubrir com película aderente. Deixar levedar até dobrar de volume (aprox. 1 hora) dentro do microondas desligado (que tinha sido aquecido, vazio, durante 1min na potencia máxima).

Recheio tipo Spanakopita

400g espinafres frescos
10 cebolinhas com rama
50g azeite
500g queijo feta
Pimenta moída na hora
3 c.chá endro seco

No copo por lavar, colocar 500g de água e cozer os espinafres a vapor na varoma durante 20min / varoma ºC / vel 1. No final, escorrer bem os espinafres e reservar. Descartar a água do copo e colocar as cebolinhas juntamente com o azeite. Picar durante 5s / vel 5 e, com a ajuda da espátula, baixar o que tiver ficado nas paredes do copo. Seguidamente, refogar durante 5min / 100º C/ vel 2. Adicionar os espinafres e cozinhar durante 2min / 100º C / vel 1 e reservar no copo.

Assim que a massa da pizza tiver levedado, juntar o feta em pedaços, o endro e a pimenta ao preparado de espinafres e misturar 4s / vel 4. Entretanto, untar um tabuleiro de forno com azeite e estender nele a massa da pizza com as mãos. Deitar o recheio por cima da massa e enrolar a partir de um dos lados pequenos. Neste momento a pizza pode ir ao forno ou pode levedar durante mais 30min. Antes de colocar no forno pré-aquecido a 200º C, pincelar o rolo com o ovo batido e polvilhar com sementes de sésamo. Cozer durante cerca de 45min (verificar cozedura com o teste do palito) e servir ainda morna.


This Atlantic-Mediterranean area where we live in is by far our favourite, wether for traveling as for eating. We loose ourselves in the ancestral flavours, its richness and variety, its healthiness. We surely have our hearts well deep-rooted into this land, in its people that are so different but with similar traditions and values, in its food that, despite the sometimes modern look, is so traditional. And that's how this recipe was born. From our cravings for a spanakopita without the philo pastry. It was supposed to have been a quiche but we got hit by a pizza desire and voilá! Here it is! Definitely a recipe that will become a classic at our house was we became instant fans of the pizza and spanakopita filling combo.

Pizza dough

220g water
1 tsp golden caster sugar
2 tsp active dry yeast
400g strong bread flour
30g evoo
1 tsp salt
3 tsp nigella seeds
6 tsp sesame seeds
1 egg, beaten

In the Thermomix mixing bowl place the water, sugar and yeast and mix for 20s / 37º C/ vel 2. Add the flour, evoo and salt and knead for 2min/vel dough. Remove the dough (rotate the blade to loosen the dough) into a bowl sprinkled with flour and cover with cling film. Leave to rise until doubled in size (about 1h) inside the microwave (that had been previously heated, empty, for 1 min in the max potency).

Spanakopita-type filling

400g fresh spinach
10 spring onions
50g evoo
500g feta cheese
Freshly ground pepper
3 tsp dried dill

In the unwashed mixing bowl pout 500g of water and steam the spinach in the varoma for 20min / varoma ºC / vel 1. Remove the spinach, drain well and set aside. Dispose of the cooking water and put the spring onions with the evoo in the mixing bowl. Chop for 5s / vel 5 and, with the spatula, lower the bits left int he mixing bowl walls. Braise for 5min / 100º C/ vel 2. Add the drained spinach and cook for more 2min / 100º C / vel 1. Leave in the Thermomix to cool down.

When the dough has risen, add the feta in pieces, the dill and the pepper to the spinach paste and mix for 4s / vel 4. Meanwhile, grease a oven tray with more evoo and spread the dough in it with your hands. Top the dough with the filling and roll from one shorter side to the other. The pizza is now ready for the oven or it can be left to rise for 30 more mins. Before placing into the pre-heated oven at 200º C, swab the roll with the beaten egg and sprinkle with sesame seeds to your liking. Bake for about 45min or until golden and cooked (check with a skewer). Serve while warm.

Granola básica | Basic granola

Estamos de volta aos básicos. Porque se os conseguirmos dominar "o céu é o limite"! Esta receita de granola é o ponto de partida para se adicionar o que se quiser, o que a imaginação ou as vontades ditarem. Para começar, é uma granola que não necessita de forno, pelo que podemos fazer quantidades pequenas. E para terminar, é perfeita para estes dias de calor, em que não dá vontadinha nenhuma de ter o forno a bombar mas em que uma granola com iogurte e fruta é o melhor pequeno-almoço!


Granola

8 c.sopa flocos aveia
2 c.sopa de avelã grosseiramente picada
2 c.sopa sementes sésamo
2 c. sopa sementes linhaça
2 c.sopa sementes girassol
1 c.sopa azeite
2 c. sopa mel de rosmaninho

Numa frigideira, tostar levemente os flocos de aveia e a avelã. De seguida adicionar as sementes e deixar tostar. Regar com o azeite e o mel, misturando muito bem. Retirar do lume e deixar arrefecer. Guardar num frasco hermético.
Servir a granola com iogurte e fruta (neste caso foi iogurte grego e a última das nectarinas).

Nota: esta é uma receita super versátil. Podemos fazer as versões que quisermos, adicionar especiarias ou ervas aromáticas, frutas secas ou cristalizadas, diferentes flocos de cereais, etc.. Depois de fria, podemos juntar pepitas de cacau, que ligam super bem com a avelã!


We're back to basics. Because if we can master them "the sky is the limit"! This granola recipe is the starting point to add whatever we want. To start with, it's a no-bake so we can make as much or as little as we want. And to finish off, it's perfect for this blazing hot days, when using the oven is a torture but having granola and fruit with yogurt for breakfast is the best thing!


Granola

8 tbsp oats
2 tbsp coarsely chopped hazelnuts
2 tbsp sesame seeds
2 tbsp flaxseeds
2 tbsp sunflower seeds
1 tbsp evoo
2 tbsp rosemary honey

In a frying pan, lightly golden the oats and hazelnuts. Add the seeds and leave to toast. Drizzle with the evoo and honey and mix thoroughly. Remove from the heat and leave to cool down. Store in an airtight container or jar.
Serve the granola with yogurt and fruit (in today's recipe we used greek yogurt and the last of the nectarines).

Note: this a a super versatile recipe. We can use up anything we like, from spices to herbs, cristalized or dried fruit, different cereal oats, etc.. When cold, stir-in cocoa nibs, that will go wonderfully with the hazelnuts!

Só para contrariar | Just to counteract

Domingo passado celebrou-se o World Baking Day. Em 2013 fizemos um bolo delicioso de azeite, limão e manjericão. Este ano o WBD calhou no dia do aniversário do Vel. Sim, podia ter havido bolo. Sim, podíamos ter cantado os parabéns. Sim, ele podia ter soprado as muitas velinhas a que tinha direito. Mas estávamos muito ocupados a passear e a aproveitar o dia maravilhoso.
Já em casa, há noite, saiu uma granola no-bake. Só para contrariar!


Granola no-bake

8 c.sopa flocos aveia
2 c.sopa de amêndoa palitada
2 c.sopa sementes sésamo
2 c. sopa sementes linhaça
2 c.sopa sementes girassol
1 c.sopa azeite
2 c. sopa mel de rosmaninho
2 c.sopa bagas goji

Numa frigideira, tostar levemente os flocos de aveia e a amêndoa. De seguida adicionar as sementes e deixar tostar. Regar com o azeite e o mel, misturando muito bem. Retirar do lume e deixar arrefecer. Misturar as bagas de goji. 
Servir a granola com iogurte e fruta (neste caso foi iogurte grego e puré de morangos).

Nota: esta é uma receita super versátil. Podemos fazer as versões que quisermos, adicionar especiarias ou ervas aromáticas, frutas secas ou cristalizadas, diferentes flocos de cereais, etc.. Uma das versões favoritas é com pistácios, arandos secos e raspas de chocolate branco!


Last Sunday was the celebration of the World Baking Day. In 2013 we baked a delicious olive oil, lemon and basil cake. This year the WBD was on Vel's birthday. Yes, we could've had cake. Yes, we could have had a party. Yes, we could've blowned the many candles we has entitled to. But we we're too busy strolling along the coastline and enjoying the lovely day.
Later in the day, already at home, a no-bake granola came around. Just to counteract!



No-bake granola

8 tbsp oats
2 tbsp sliced almond
2 tbsp sesame seeds
2 tbsp flaxseeds
2 tbsp sunflower seeds
1 tbsp evoo
2 tbsp rosemary honey
2 tbsp goji berries

In a frying pan, lightly golden the oats and almond. Add the seeds and leave to toast. Drizzle with the evoo and honey and mix thoroughly. Remove from the heat, leave to cool down and mix in the goji berries.
Serve the granola with yogurt and fruit (in today's recipe we used greek yogurt and strawberry purée).

Note: this a a super versatile recipe. We can use up anything we like, from spices to herbs, cristalized or dried fruit, different cereal oats, etc.. One of our favourites is with pistachios, dried cranberries and white chocolate chips!

Mousse de lima com maracujá | Lime mousse with passion fruit

A Primavera indecisa que nos assola faz-nos suspirar por dias melhores. Dias quentes de sol, sal, areia e mar. Dias de férias em que o carro desliza pelas estradas de Portugal em busca daqueles recantos paradisiacos para um picnic e descansar o corpo.
Mas enquanto a Primavera continua indecisa, já com queda para bipolar, viajamos pelos sabores tropicais de uma mousse de lima com maracujá. Levezinha, pois claro, que o bikini está mortinho por sair da gaveta!


Mousse de lima com maracujá

6 limas (sumo e raspa)
1 lata leite condensado magro
500g iogurte grego
10 maracujás
Mel
1 c.sopa sementes chia
Pólen de abelha

Para a compota fria de maracujá, cortar os frutos ao meio e retirar a polpa para uma tacinha. Adoçar com mel a gosto e misturar com as sementes chia. Levar ao frigorífico durante a noite.
Para a mousse, colocar a raspa e o sumo das limas numa taça grande e misturar bem com o leite condensado (a mistura vai engrossar). Envolver bem o iogurte e distribuir por copos ou taças. Levar ao frigorífico pelo menos 4h.
Na altura de servir, dividir a compota fria de maracujá pelas taças de mousse e polvilhar com pólen de abelha.


This indecisive Spring that has settled down makes us dream of better days. Warm days of sun, salt sand and sea. Days of holidays when the car slides on the Portuguese roads only to find those paradisiac spots for a picnic and slumber.
But while the Spring remains borderline bipolar, we travel through the tropical flavours with a lime mousse with passion fruit. A light one, since the bikini is dying to come out of the drawer!


Lime mousse with passion fruit

6 limes (juice + zest)
1 can condensed milk
500g greek yogurt
10 passion fruits
Honey
1 tbsp chia seeds
Bee pollen

For the passion fruit raw jam, cut the fruits in half and scoop the pulp into a small bowl. Sweeten with honey to taste and mix in the chia seeds. Leave in the fridge, overnight.
For the mousse, whisk the lime zest and juice with the condensed milk in a large bowl. As you whisk the mix will thicken. Incorporate the yogurt and distribute into bowls, cups or glasses. Leave in the fridge at least for 4h.
Right before serving, divide the passion fruit jam for each glass of mousse and sprinkle with bee pollen.

Millet, iogurte e maracujá | Millet, yogurt and passion fruit

O dia começa de mansinho. Com uma luz brilhante reflectida pelo céu azul. Finalmente o sol brilha, aquece e apetece. Finalmente o Inverno começa a levantar o seu manto, revelando uma Primavera-menina que em breve será uma bela jovem. A nós cabe aproveitar cada minuto precioso, morno e solarengo, sorrir ao ver os rebentos que brotam da terra que ainda cheira a molhado. A nós cabe sentir este pulsar vigoroso que anuncia o regresso da vida que se manteve latente, trabalhando em segredo debaixo da terra para agora nos deslumbrar. A nós cabe acordar e descobrir um mundo novo nos sabores de sempre. 


Millet, iogurte e maracujá

Millet tufado
Iogurte grego
Compota fria de maracujá:
10 maracujás (polpa)
2 c.sopa sementes chia
2 c.sopa mel de rosmaninho
1 c.chá pólen de abelha

Preparar a compota na noite anterior: misturar a polpa dos maracujás com as sementes e o mel. Colocar no frigorífico overnight.
Numa taça colocar millet tufado, iogurte grego batido e compota fria de maracujá. Polvilhar com pólen de abelha e servir.
Nota: a compota fria pode ser feita com qualquer fruta. Vejam aqui a nossa versão com framboesa.

Finally the Winter starts pulling its veil to reveal a baby Spring that soon will be a beautiful young lady. All we have to do is to enjoy each precious, warm and sunny moment, smile to the sight of the shoots sprounting from the earth. All we have to do is feel this vigorous pulse announcing the return of the life that remained latent, secretly working in the underwold to finally dazzle us. All we have to do is wake up and find a new world in the all-time flavors.


Millet, yogurt and passion fruit

Puffed millet
Greek yogurt
Raw passion fruit jam:
10 passion fruits (pulp)
2 tbsp chia seeds
2 tbsp rosemary honey
1 tsp bee polen

Prepare the jam on the night before: thoroughly mix the passion fruit with the seeds and honey. Keep in the fridge overnight.
In a bowl place the puffed millet, the whipped greek yogurt and the raw passion fruit jam. Sprinkle with the polen and serve.
Note: this jam can be made with any fruit you like. Check here our version with raspberry.

Iogurte grego com compota fria de framboesa | Greek yoghurt with raw raspberry jam

O vento frio uiva furioso nas janelas. Apesar do temporal desabrido que faz lá fora, a casa continua quente, confortável. Enrosco-me novamente nos lençóis e, protegida nesta tranquilidade, volto a fechar os olhos para escutar melhor os lamentos da natureza. Embalada nesta canção triste rendo-me à preguiça e deixo-me ficar. Sem pressas, sem distracções. Apenas eu e o torpor que me adormece...
Algum tempo depois (quanto? não interessa, soube tão bem... isso é que importa!) retorno à vida: subir persiana, abrir janela e... pelo meio das nuvens negras o sol teima em despontar! É tempo de pequeno-almoço :)


Iogurte grego com compota fria de framboesa

300g framboesas
2-3 c. sopa de sementes chia
1-2 c. sopa de açúcar baunilhado (ou mel, geleia de agave, etc.)
Iogurte grego
Pistácios ralados

Com um garfo, esmagar bem as framboesas até se obter uma pasta. Adoçar com o açúcar, incorporando bem e adicionar as sementes chia, muito bem misturadas. Colocar no frigorífico durante a noite, para a compota gelificar.
No dia seguinte, servir o iogurte com a compota e os pistácios ralados.


The cold wind blows furious through the windows. Apart from the stormy weather outside, the house remains nice, warm, comfy. I cuddle again in the sheets and, protected in this tranquility, close my eyes to better listening the crying of the nature. Lulled by this sad song I surrender to slumber and stay in bed. No hurries, no distractions. Just me and the numbness that rocks me to sleep...
Some time after (how much time? doesn't matter, it felt soooo good... that's what's important!) I return to life: open the blinders, open the window and... amongst the grey clouds the sun insists on shining through! It's breakfast time :)


Greek yoghurt with raw raspberry jam

300g raspberries
2-3 tbsp chia seeds
1-2 tbsp vanilla sugar (honey, agave syrup, etc.)
Greek yoghurt
Grated pistachios

With a fork, crush well the raspeberries until you have a smooth paste. Add the sugar and the chia seeds mixing well. Leave overnight in the frigde for the jam to gelify.
Next day, serve the greek yoghurt with the jam and the pistachios.

Rosa verde e os benefícios da dieta mediterrânica | Greeny pink and the mediterranean diet beneficts

Chamam-lhe dieta, mas na verdade é um estilo de vida. Um pelo qual temos uma grande admiração e somos muito influenciados. 
Segundo um estudo científico (Willet et all, 1995), esta dieta é baseada nos padrões típicos de alimentação da ilha de Creta, bem como da restante Grécia e Sul de Itália durante o início dos anos 60. Neste período, é caracterizada pela abundância de alimentos plantados (fruta, vegetais, pães e outras formas de cereais, batatas, feijões, frutos secos e sementes), por alimentos locais frescos e sazonais com o mínimo de processamento, fruta fresca como sobremesa diária típica, por doces com açúcares concentrados ou mel consumidos apenas algumas vezes por semana, por azeite como a principal fonte de gordura, por produtos lácteos (principalmente queijo e iogurte) consumidos diariamente em quantidades baixas ou moderadas, por peixe e carne de aves consumidos em quantidade baixas ou moderadas, por um máximo de 4 ovos consumidos semanalmente, por carne vermelha consumida em baixas quantidades e por vinho, consumido em quantidades baixas ou moderadas, sempre acompanhando as refeições. Tudo isto marcado ainda por actividade física regular. O estudo conclui que a dieta mediterrânica constitui uma tradição centenária que contribui para uma saúde excelente, promove o bem-estar e o prazer e é uma parte vital da herança cultural colectiva mundial. Este estilo de vida pode, para as populações da bacia do Mediterrâneo, ser facilmente preservado e revitalizado nos dias de hoje. 
Com tantos benefícios e facilidade em conseguirmos adoptar este estilo de vida, seria insensato da nossa parte não o continuar a aplicar no nosso dia-a-dia. Aproveitem e juntem-se a nós nesta caminhada :)


Sumo de morango, melancia e menta

Morangos
Melancia sem sementes
Folhas de menta
Água fresca

Nas quantidades desejadas, colocar todos os ingredientes no liquidificador, misturando até estar homogéneo.


Tostas de queijo de nozes e rabanetes

2 fatias de Life-changing-loaf-of-bread (feito com azeite)
Queijo fresco de nozes para barrar

Torrar o pão, barrar com o queijo e cobrir com as fatias de rabanetes. Temperar com os coentros, sal e pimenta.


They call it a diet but in fact it is a lifestyle. One that inspire us and that we greatly admire. 
Accordingly to a scientífic paper (Willet at al, 1995) the Mediterranean diet is based on food patterns typical of Crete, much of the rest of Greece, and southern Italy in the early 1960s. During this period, it can be described by the following broad characterístics: abundance of plant foods (fruit, vegetables, breads, other forms of cereals, potatoes, beans, nuts, and seeds); minimally processed, seasonally fresh and locally grown goods; fresh fruit as the typical daily dessert, with sweets containing concentrated sugars of honey consumed a few times per week; olive oil as the primary source of fat; dairy products (mainly cheese and yoghurt) consumed daily in low to moderate amounts; fish and poultry consumed in low to moderate amounts, maximum of 4 eggs consumed weekly, red meat consumed in low amounts and wine consumed in low to moderate amounts, normally with meals. All of this with regular physical activity. The study concludes that the Mediterranean diet constitutes a centuries-old tradition that contributes to excellent health, provides a sense of pleasure and well-being, and forms a vital part of the world's collective cultural heritage. For Mediterrean people, the dieat can be readily preserved and revitalized within a modern lifestyle.
With so many beneficts, it would be higly unwise for us not to continue adopting this lifestyle on a daily basis. Care to join us in this journey? :)


Strawberry, watermelon and mint juice

Strawberries
Watermelon (deseeded)
Fresh mint leaves
Ice-cold water

Put all the ingredients in the liquifier and blitz until smooth. Serve cold.


Walnut cheese and radish toasts

2 slices of Life-changing loaf of bread (made with olive oil)
Walnut cream cheese
2 radishes, thinly sliced
Coriander and cilantro
Salt and pepper mixed freshly ground

Toast the bread, spread with the cheese and top with the radishes slices. Sprinkle with the herbs and season with the salt and pepper.

O pão e as repetições da vida | Bread and the repetitions in life

Nunca se deve voltar aos sítio onde se foi feliz. Discordamos. Em absoluto. Porque podemos voltar aos sítios onde já fomos felizes e sê-lo ainda mais. Porque se há momentos que queremos esquecer a todo o custo, outros há que queremos reviver ou até melhorar. E com a comida, aí sim, é impossível não querer voltar aos sabores que fizeram as nossas delícias. Certo que nenhuma repetição é clone da anterior, mas queremos sempre voltar a saborear esta ou aquela, ou a outra ou as muitas (infindáveis!) receitas que nos fizeram felizes. E este pão que muda vidas não é excepção. É, sim, para repetir em loop!


Life-changing loaf of bread

70g sementes de girassol
70g sementes de abóbora
90g sementes de linhaça
65g avelãs
145g flocos de aveia
2 c.sopa de sementes de chia
3 c.sopa de psilio em pó
1 c.chá de sal fino
1 c.sopa de geleia de agave
3 c.sopa de azeite frutado
350ml água

Numa forma de silicone misturar bem todos os ingredientes secos. Misturar a geleia, o azeite e a água adicionando depois aos ingredientes secos. Misturar muito bem até estarem todos demolhados e a massa começar a ficar espessa (se ficar espessa demais para continuar a misturar, adicionar 1 ou 2 c.chá de água). Alisar o topo com as costas da colher e reservar durante 24h (ou um mínino de 2h - para se ter a certeza que a massa está pronta, esta deve reter o formato sempre que se puxar os lados da forma de silicone).
Pré-aquecer o forno a 180º C. Colocar a forma no centro do forno durante 20mins. Retirar o pão da forma, colocá-lo ao contrário directamente na grelha central do forno e cozer por mais 30-40mins. O pão está pronto quando soar a oco. Deixar arrefecer completamente antes de cortar.


You should never return to the place were you were happiest. We utterly disagree. We can return to the places where we once were happy and be even happier. Because if there are moments that we try hard to forget, other moments we wish to perpetuate of even try to improve. And when it comes to food, it is impossible not wanting to eat more of something we found delicious. Certainly none of the repetitions is exactly the same, but we'll want to taste this, or that, or the other (countless!) recipes that made us happy. And this bread is no exception. It is in fact, to repeat on and on again!


Life-changing loaf of bread

70g sunflower seeds
70 pumpkin seeds
90g flax seeds
65g hazelnuts
145g rolled oats
2 tbsp chia seeds
3 tbsp psyllium husk powder
1 tsp fine grain sea salt
1 tbsp agave syrup
3 tbsp fruity olive oil
350ml water

In a flexible, silicon loaf pan combine all dry ingredients, stirring well. Whisk maple syrup, olive oil and water together in a measuring cup. Add this to the dry ingredients and mix very well until everything is completely soaked and dough becomes very thick (if the dough is too thick to stir, add one or two teaspoons of water until the dough is manageable). Smooth out the top with the back of a spoon. Let sit out on the counter for 24h (or at least 2h). To ensure the dough is ready, it should retain its shape even when you pull the sides of the loaf pan away from it it.
Preheat oven to 180°C. Place loaf pan in the oven on the middle rack and bake for 20 mins. Remove bread from loaf pan, place it upside down directly on the rack and bake for another 30-40 mins. Bread is done when it sounds hollow when tapped. Let cool completely before slicing.

Bolo de azeite, limão e manjericão | Lemon, basil and olive oil cake

Domingo é o Baking Day cá em casa. Por coincidência, o World Baking Day de 2013 celebra-se hoje, domingo. E nós, por coincidência (ou talvez não) juntamo-nos a tantos outros por esse mundo fora. Do forno saíram um Life-changing loaf of bread, uma quiche de delícias do mar e este bolo de azeite, limão e manjericão. O bolo surgiu da nossa maior inspiração: a cozinha mediterrânica. E após ter provado uns biscoitos gregos de limão e manjericão que ficaram aquém das minhas expectativas, pensei "consigo fazer melhor". Assim foi. À vontade de querer um bolo à base de azeite mas que tivesse iogurte grego e fosse aromatizado com o limão e o manjericão, lá fui estudando receitas até chegar a uma que fosse só minha. E este sim, é um grande desafio para mim neste WBD: os bolos são aquilo em que normalmente não arrisco e sigo a receita que tenho à frente sem grandes alterações. Mas quem arrisca, petisca :)


Bolo de azeite, limão e manjericão

250g iogurte grego
30g de azeite frutado
180g açúcar amarelo
1 limão (raspa+sumo)
1 punhado de folhas de manjericão
2 ovos
275g de farinha
1+1/2 c.chá de fermento em pó
1/2 c.chá de sal fino
Sementes de sésamo (brancas e pretas)

Numa taça média misturar o iogurte, azeite, açúcar, raspa+sumo de limão, manjericão rasgado e os ovos. Adicionar a farinha peneirada com o fermento e o sal. Misturar apenas até a massa estar homogénea. Colocar numa forma de mola untada com azeite e polvilhar com a mistura de sementes de sésamo. Levar ao forno pré-aquecido a 180º C durante cerca de 45mins (teste do palito).


Sunday is our baking day. Coincidently, this year's World Baking Day is today: sunday. Coincidently, or not, we join many others across this world. From our oven came out a Life-changing loaf of bread, a quiche and this Lemon, basil and olive oil cake. The cake came from our biggest inspiration: mediterranean cuisine. After tasting some lemon and basil greek biscuit that turned out to be short in flavour I thought "I can do better that this". Driven by the desire of eating a cake olive oil-based with greek yoghurt, lemon and basil I decided to study a few recipes to come out with one entirely mine. And this is my challenge for the WBD: I don't normally take a chance with cakes and always keep to the original recipe with only minor changes. But not this time :)


Lemon, basil and olive-oil cake

250g greek yoghurt
30g fruity olive oil
180g light brown sugar
1 lemon (zest+juice)
1 handful basil leaves
2 eggs
275g fllour
1+1/2 tsp baking powder
1/2 tsp table salt
Sesame seebs (black and white)

In a medium size bowl mix the yoghurt with the olive oil, sugar, lemon zest and juice, tear basil and the eggs. Add the flour sifted with baking powder and salt. Mix only until the batter is smooth. Place in a pre-greased spring-form baaking tin and sprinkle with the sesame seeds. Leave in the pre-heated oven at 180º C for 45mins (skewer test).
