Almoço paradisiaco | Paradisiac lunch

Com a tempestade que assola a costa, dá vontade de fugir para um local paradisiaco, de sol dourado e vegetação luxuriante. Enquanto isso não acontece, há que trabalhar um pouco a magia dos ingredientes e esperar que o cérebro viaje virtualmente até ao destino de eleição. O sol no formato de uma batido de fruta e a vegetação luxuriante como orla de praias douradas numa fatia de pão com alecrim. Não acreditam em tele-transporte culinário? Então experimentem por vocês próprios! :)


Batido de sol

1 banana madura
4 tangerinas
1 c. chá de polén de abelhas

Descascar a fruta e colocar no liquidificador, juntamente com o pólen. Bater até obter um batido espesso e homogéneo.

Pão de azeite, sultanas e alecrim
(adaptado de 200 Receitas de Pão)

325ml água
100ml azeite
2 c.chá sal grosso
2 c.chá leite em pó
2 c.chá sementes de funcho ligeiramente esmagadas
1 c. sopa alecrim picado
600g farinha T65
1 c.sopa açúcar amarelo
2 c.chá fermento bio seco
100g sultanas

Colocar todos os ingredientes na cuba da MFP seguindo as instruções do fabricante. Escolher o programa Básico para um pão de 900g. Findo o tempo, retirar da cuba e deixar arrefecer sobre uma grade. Servir com queijo Gouda fatiado, fiambre de frango e mostarda Savora.


With the storm hitting the coast we feel like running away to a paradisiac place where the sun is golden and the vegetation is luxurious. While that's not going to happen, we better work the ingredients magic and wait for the brain to virtually travel to the desired destiny. The sun comes in a smoothie and the vegetation borderline the golden sandy beaches comes in slices of rosemary bread. You don't believe in culinary tele-transport? They check it for yourselves! :)


Sunny smoothie

1 banana
4 tangerines
1 tsp bee polen

Peel the fruit and blitz in the blender, together with the polen, until you have a smooth mix.

Olive oil, sultanas and rosemary bread
(adapted from 200 Recipes - Bread)

325ml water
100ml evoo
2 tsp sea salt
2 tsp powder milk
2 tsp fennel seeds slighty crushed
1 tbsp rosemary 
600g strong bread flour
1 tbsp brown sugar
2 tsp active dry yeast
100g sultanas

Place all the ingredientes in the bread machine accordingly to the manufacturer's instructions. Choose the Basic Program for a 900g bread. At the end of the program, remove the bread from the machine and leave to cool in a wire-rack. Serve with sliced Gouda cheese, chicken ham and Savora mustard.

Tapioca de chocolate branco com tangerina | White chocolate and tangerine tapioca

O dia perde-se entre nuvens negras e raios de sol. As horas passam lentas, vagarosas, agarradas a cada segundo como se fosse o último. E enquanto o tempo se entranha em todos os poros da nossa pele, vamos saboreando colher atrás de colher, apreciando cada detalhe desta sobremesa.


Tapioca de chocolate branco com tangerina

50g de tapioca
250ml de leite magro
100g de chocolate belga branco
1/2 tangerina (apenas a casca)
Pólen de abelha
Flor de sal

Deixar a tapioca de molho em bastante água pelo menos durante 2h (neste caso ficou durante a noite). Num tachinho, colocar a tapioca hidratada (e escorrida) com o leite e a casca de tangerina e levar ao lume. Cozer durante 5mins após levantar fervura (pode ser necessário adicionar mais um pouco de leite para ajustar a consistência). Retirar do lume e juntar o chocolate, mexendo sempre para derreter. Servir polvilhada com pólen de abelha e flor de sal.


The day looses itself amongst dark clouds and sunbeams. The hours slowly pass by, lingering in each second as if it was the last. And while time entrenches itself in our skin pores, we savor spoon after spoon, enjoying each detail of this dessert.



White chocolate and tangerine tapioca

50g tapioca
250ml skimmed milk
100g white belgian chocolate
1/2 tangerine (zest only)
Bee polen
Fleur de sel

Hidrate the tapioca with plenty water for at least 2h (mine stayed overnight). In a small saucepan, place the drained tapioca with the milk and tangerine zest. Cook for 5 mins after started boiling (it might be necessary to add more milk, depending on how you like your tapioca's consistency). Remove from the heat and add the chocolate, mixing until it melts completely. Serve sprinkled with the polen and fleur de sel.

Bolo de claras e mascarpone com mirtilos

O dia de hoje está cinzento e preguiçoso. A chuva cai, pesada e triste, esborrachando os seus pingos no chão. Para atenuar os tons monocromáticos, decido fazer um bolo enquanto ele ainda dorme. Claras congeladas para gastar e uma embalagem de mascarpone quase a passar do prazo estabelecem o sentido da marcha. Consulto a Vera, que nunca me falha, e lá encontro inspiração para construir a minha própria receita :)
Bolo de claras e mascarpone com mirtilos

10  claras, descongeladas
250g açúcar baunilhado
350g de farinha
2 c. chá de fermento em pó
250g de mascarpone
1 tangerina grande (raspa + sumo)
100ml leite fresco gordo
50g de mirtilos secos
2 c. sopa de limoncello

Mergulhar os mirtilos no licor e deixar marinar até que o líquido tenha sido absorvido. Entretanto, bater as claras em castelo com uma pitada de de sal e bater o mascarpone com o açúcar. Juntar à mistura de queijo a farinha, o fermento, a raspa e sumo da tangerina, o leite e os mirtilos, misturando muito bem (se a mistura estiver muito espessa, juntar mais um pouco de leite até se obter a consistência ideal). Envolver as claras no preparado e colocar numa forma redonda de mola. Levar ao forno pré-aquecido a 180º C durante cerca de 1h (ao fim de 45 mins fazer o teste do palito).
Today is grey and lazy. The rain falls sad and squashes its drops on the floor. To ease the monochromatic colours I decide to bake a cake while he still sleeps. Frozen egg whites and a mascarpone package almost past the expiracy date set up the direction. I check with Vera, that never fails me, and there I find the inspiration to build my own recipe :)
Egg whites and mascarpone cake, with blueberries
(inspired by "Apple, cinnamon and mascarpone cake" from the blog "Hoje para Jantar")

10  egg whites, unfrozen
250g vanilla sugar
350g flour
2 tsp baking powder
250g mascarpone cheese
1 large tangerine (zest + juice)
100ml whole fresh milk
50g dried blueberries
2 tbsp limoncello

Dip the blueberries in the limoncello and leave to marinate until the liquid has been absorved. Meanwhile, beat the egg whites with a pinch of salt to soft peaks and beat the cheese with the sugar. Add the flour, baking powder, the zest and juice, the milk and the bluberries, mixing well (if the mix is a bit dry, add a bit more of milk). Gently fold the egg whites and place the cake batter in a springform tin. Leave in the pre-heated oven at 180º C for nearly 1h (at 45mins insert a skewer to check if the cake is cooked).
