Arroz doce de pequeno-almoço | Breakfast Rice Pudding

Quem me conhece sabe que a minha refeição favorita é o pequeno-almoço. Desde salgados a doces vale de tudo um pouco e, à semelhança das outras refeições, também esta é diferente todos os dias. 
A sugestão que trago hoje é das minhas favoritas e é de facto uma tela em branco que permite as variações que quisermos. Foi preparada para a Mercearia Bio que, gentilmente, me convidou a criar uma receita com produtos da sua loja on-line. Não deixem de experimentar e adicionar os ingredientes que mais gostarem.

Arroz doce de pequeno-almoço

1L leite magro
150g arroz carolino biológico
1 limão (apenas a casca amarela)
2 paus canela
Mel a gosto
Toppings sugeridos: nectarina, coco ralado, pistácios picados, pólen de abelha

Colocar o leite, o arroz, a casca do limão e a canela num tacho e levar ao lume sem deixar ferver durante 50mins, mexendo frequentemente. Findo este tempo, retirar o tacho do lume e acrescentar mel a gosto, mexendo bem. Deixar arrefecer e servir com os toppings preferidos.

Those who know me are well aware that breakfast is my favorite meal. From sweet to savoury, anything goes and, like for others meals, this one is different every day. The recipe I share today is one of my favourites and it's a white canvas that allows us to use our imagination. It was prepared for Mercearia Bio, following their invitation to create a recipe using the products from their on-line shop. So, give it a go at the recipe using your favorite toppings.

Breakfast Rice Pudding

1L skimmed milk
150g of bio ground grain starchy rice (arborio-like)
1 lemon (zest only)
2 cinnamon sticks
Honey to taste
Suggested toppings: nectarine, ground coconut, chopped pistachios, bee pollen

Place the milk, rice, lemon zest and cinnamon sticks in a pot and bring to a simmer without boiling for 50mins, constantly stirring. At the end of that time, remove the pot from the stove and add in the honey, stirring to incorporate. Let cool down and serve with your favourite toppings.

Bebida de cajú | Cashew drink

Muito trabalho. Férias. Regresso ao muito trabalho. Assim se fez a nossa ausência de 1 mês. Quem nos acompanha no Instagram sempre vai estando mais a par do que por cá se passa. Mas não pensem que temos estado parados. Não senhor! Até foram testadas muitas receitas novas e remodelamos antigas. Mas estivemos a aproveitar bem o tempo (o das férias, que já passou mas há-de voltar em Setembro, e o livre, que é cada vez mais curto) daí que o blogue tenha ficado mais parado. Estamos de volta mas com calma. Com muita calma :)

Bebida de cajú

1 chávena (250ml) de cajús
4 chávenas (1L) de água

Demolhar os cajús em água overnight (8 a 12h). Escorrer e lavar muito bem até a água sair transparente. Colocar os cajús com 2 chávenas de água no liquidificador e misturar bem. Adicionar as restantes duas chávenas de água e voltar a misturar até obter um liquido homogéneo e macio. Está pronto a servir (pode ficar no frigorífico até 4 dias!).
Nota 1: a bebida de cajú não necessita de ser coada pois o cajú dissolve-se totalmente na água.
Nota 2: pode ser aromatizado com o que quisermos  - a imaginação é o limite! A minha versão favorita é fazer um batido com banana e cacau :)

Loads of work. Holidays. Coming back to loads of work. This is why we were away for over a month. Those who follow our Instagram account are a bit more updated to what's going on around here. But don't go thinking that we have been lazy. No Sir!  We have tested a good batch of new recipes and revamped old ones. But we kept ourselves busy enjoying our time together (the holidays, gone by but hopefully back in September, and the leisure, which grows shorter like the days!) so we left the blog unatended. We're back but taking it easy. Deadly easy :)

Cashew drink

1 cup (250ml) raw cashews
4 cups (1L) water

Soak the cashews in water overnight (8 to 12h). Drain and rinse well until the water runs clear. Place cashews and 2 cups of water in a blender and blitz until smooth. Add the remaining 2 cups of water and blitz again until the liquid is smooth and homogenous. It is ready to serve (it'll keep in the fridge until 4 days!).
Note 1: there's no need to drain the cashew drink as cashews totally dissolve in the water.
Note 2: you can flavour it as you wish - the sky is the limit! My favourite is using it in a milkshake with banana and cacao :)

Mousse de café e chocolate negro | Coffee and dark chocolate mousse

Como devem ter reparado, andamos meio fugidos. Nesta altura de pré-férias o tempo desaparece num buraco negro e para além do trabalho pouco conseguimos adiantar. Mas não queriamos partir (naquela estrada!!!) sem vos deixar uma sugestão perfeita para estes dias de calor abrasador. E que sugestão!!!! Inspirados pela talentosa dupla Green Kitchen Stories, deixamo-nos levar por uma das suas mais recentes criações até chegarmos a esta mousse densa e repleta de sabor. Ah, claro, e repleta de coisas boas! :)

Mousse de café e chocolate negro

400g feijão preto cozido
10 tâmaras carnudas, descaroçadas
2 c.sopa óleo de côco
180ml café forte (3 "cimbalinos")
160ml de leite (da vossa preferência)
200g chocolate negro 70% partido
Pistácios picados
Cerejas

No copo da Bimby colocar o chocolate e ralar 10s na vel. 8. Baixar das paredes do copo com a ajuda da espátula e adicionar o leite. Derreter 2mins a 50º C na vel. 3. Juntar os restantes ingredientes e misturar muito bem durante 20s na vel. 7. Distribuir a mousse por tacinhas e levar ao frigorifico pelo menos 2h. Polvilhar com pistácios picados e enfeitar com cerejas antes de servir.

As you probably might have noticed, we have been quite silent. During this pre-holiday weeks time seems to simply disappear into a black hole and we accomplish very little apart from our jobs. But we didn't want to leave for our two-week holiday break without sharing with you something perfect for these scorching days. And what a treat we have here!!!! Inspired by the super talented couple of Green Kitchen Stories, we got carried away by one of their latest creations and we achieved this dense mousse with plenty flavour. Ah, and packed with good stuff! :)

Coffee and dark chocolate mousse

400g black beans, boiled
10 soft dates, pitted
2 tbsp coconut oil
180ml strong coffee (3 expressos)
160ml milk (of your preference)
200g dark chocolate 70% roughly chopped
Pistachios, finelly chopped
Cherries

Place the chocolate in the Thermomix bowl and grate for 10s on speed 8. With the spatula, clean the bowl walls. Add the milk and gently melt for 2mins at 50º C on speed 3. Add in the rest of the ingredients and mix very well for 20s on speed 7. Pour the mousse into cups and leave in the fridge for at least 2h. Serve sprinkled with pistachios and top with a cherry.

Panettone is the new cake!

Mais de um mês depois voltamos ao blogue. O tempo voa e quando damos por ela passaram-se semanas! Por cá tivemos aniversários para festejar e com tanto em que pensar acabamos por ir deixando as receitas para depois. Mas claro, quem nos segue no instagram sempre está mais actualizado!
Entretanto, temos um novo amor. É verdade... o panettone. É o nosso novo bolo de eleição e qualquer combinação é brilhante. Este pão quase bolo é adocicado mas não muito e conquistou o nosso coração. Esperamos que também conquiste o vosso :)

Panettone de arandos, pistácios e chocolate negro
(revista Bimby n.º 49)

180g leite magro
100g açúcar amarelo
25g fermento padeiro fresco
3 ovos
1+1/2 c.chá pasta de baunilha
500g farinha T65
1 c.chá sal
200g manteiga em cubinhos à temp. ambiente
60g arandos secos
80g pistácios s/ casca
1 laranja (raspa)
100g pepitas chocolate negro

No copo, colocar o leite, o açúcar e o fermento e aquecer 1min / 37º C / vel. 1.
Adicionar os ovos e a baunilha e bater durante 5s / vel. 4.
Juntar a farinha e o sal e amassar 2min / vel. espiga. Deixar a massa levedar dentro do copo, num local morno, durante cerca de 50mins (ou até dobrar o volume).
Baixar com a espátula o que tiver ficado nas paredes do copo, adicionar a manteiga, os arandos, os pistácios, a raspa da laranja e as pepitas de chocolate e amassar 1min30s / vel. espiga.
Retirar a massa para uma forma redonda, previamente untada e forrada com papel vegetal, e deixar levedar cerca de 40mins (ou até dobrar de volume).
Levar ao forno pré-aquecido a 180º C durante cerca de 50mins, ou até estar cozido e dourado. Deixar arrefecer em cima de uma rede antes de servir.

Over a month later we return to the blog. Time flies and when we realize weeks have gone by! Around here we had anniversaries to celebrate and with so much going on we ended up leaving the recipes for later. But, of course, those who follow our instagram account are totally updated!
Meanwhile, we have a new crush. True... the panettone. It's our new cake of choice and any flavour combination is a winner. This caky bread is sweet but not much and won our hearts. So we hope it wins your heart too :)

Dark chocolate, cranberries and pistachios panettone
(Bimby magazine n.º 49)

180g skimmed milk
100g light brown sugar
25g fresh yeast
3 eggs
1+1/2 tsp vanilla paste
500g bread flour
1 tsp salt
200g butter, in cubes at room temperature
60g dried cranberries
80g shelled pistachios
1 orange (zest)
100g dark chocolate chips

In the bowl, place milk, sugar and yeast and heat up 1min / 37º C / vel. 1.
Add eggs and vanilla and whisk for 5s / vel. 4.
Add flour and salt and knead for 2min / vel. ear. Leave to proof in the bowl, in a warm place, for 50min or until doubled in size.
With the spatula, lower what's attached to bowl and add the butter, cranberries, pistachios, orange zest and chocolate chips. Knead for 1min30s / vel. ear.
Remove the dough into a round spring tin, previously coated with grease paper, and leave proofing for 40mins (or until doubled in size).
Place in the pre-heated oven at 180º C for 50mins, or until cooked and golden. Leave to cool on a wire-rack before serving.

Scones

Se há coisa que ultimamente não dispensamos são os scones. Desde que temos a Bimby a tarefa ficou facilitada, mas acredito que podem seguir esta a receita utilizando um processador de alimentos normalíssimo. Portanto já sabem: Domingo é dia de scones cá em casa, quer faça chuva, quer faça sol. 
Fica aqui registada a receita base mas já experimentamos um pouco de tudo, dos salgados aos doces, incorporando queijo, ervas aromáticas, especiarias e/ou frutos secos, com farinhas diferentes, etc. O que não falta é imaginação! 
E vocês, têm alguma receita que está sempre nas luzes da ribalta? Partilhem connosco! :)

Scones
(adaptado de ABC da Bimby)

500g farinha
60g manteiga fria
50g açúcar amarelo
200g leite
2 ovos
2 c.chá fermento em pó
1 c.chá sal

Colocar todos os ingredientes no copo da Bimby e misturar durante 15s na vel.6. Com a ajuda de 2 colheres de sopa, deitar pequenos montes de massa num tabuleiro previamente forrado com papel vegetal. Levar ao forno pre-aquecido a 200º C durante cerca de 15 a 20mins. Servir ainda quentes, com uma boa manteiga dos Açores e um chá fumegante!

Lately there's something we cannot live without: scones! Since we bought a Thermomix this job became easier but I'm sure you can use the same recipe in a regular food processor. So, now you know: wether it's sunny or rainy, Sunday is the Scone Day around here! We share the basic recipe but we have tried many combos: with cheese, herbs, spices and/or dried fruits and even with different flowers. The sky is the limit!

Scones
(adapted from Thermomix ABC)

500g flour
60g cold butter
50g light brown sugar
200g milk
2 eggs
2 tsp baking powder
1 tsp salt

Place all ingredients in the Thermomix bowl and mix for 15s on speed 6. With the help of 2 tablespoons, pour small batches of dough on a baking tray with grease-proof paper. Bake in the pre-heated oven at 200º C for about 15 to 20mins. Serve warm, with a good Azorean butter and a hot tea!

Arroz doce tropical | Tropical rice pudding

O Natal já lá vai mas na nossa memória continuam bem gravados os momentos, as pessoas, os abraços, os petiscos, as sobremesas. E sempre que nos apetece relembrar, abrimos a pasta das fotos ou simplesmente descemos pela nossa conta do Instagram até encontrar este delicioso arroz doce tropical, entre as outras iguarias que partilhamos convosco na altura :)

Arroz doce tropical
(adaptado de o ABC da Bimby)

600g leite gordo
400ml leite coco (1 lata)
150g arroz carolino
1 lima (casca verde)
2 pau canela
1 pitada sal
4 gemas ovo
120g açúcar amarelo
Canela em pó para polvilhar

Colocar no copo o leite, o arroz, a casca da lima, o pau de canela e o sal envolvendo bem com a espátula. Cozinhar durante 40mins a 90º C na velocidade-colher inversa.
Colocar as gemas numa tacinha e, findo o tempo de cozedura, retirar 4 c.sopa do leite quente e misturar bem nas gemas com um garfo. 
Adicionar a gemas e o açúcar ao arroz e envolver bem com a espátula. Deixar cozinhar por mais 10mins a 90º C na velocidade 1.5 inversa.
No final, colocar numa travessa (ou distribuir por tacinhas) e polvilhar com canela em pó.

Even though Christmas is far behind, our memories are still vivid, with all the moments, the people, the love, the snacks and the desserts. And whenever we want a trip down memory lane, we open the photos file or scroll down our Instagram account only to find this deliciously sticky tropical rice pudding :)

Tropical rice pudding
(adapted from Thermomix ABC)

600g full fat milk
400ml coconut milk (1 can)
150g arborio rice
1 lime (zest)
2 cinnamon stick
1 pinch salt
4 egg yolks
120g light brown sugar
Cinnamon powder for sprinkling

Place the milk, rice, zest cinnamon stick and salt in the TM bowl and mix well using the spatula. Cook for 40mins at 90º C on the reverse lowest speed.
With the yolks in a bowl, pour in 4 tbsp of the hot milk and mix thoroughly with a fork. 
Add the yolk mix and the sugar to the TM bowl and stir with the spatula. Cook for 10 more mins at 90º C on reverse 1.5 speed.
Finally, pour the rice pudding into a large plate (or divide for several bowls) and sprinkle with cinnamon powder.

Papas de aveia | Porridge

O meu ultimo vício é uma pasta de mel e canela. Podia dar-me para pior. Sim, podia. Pelo menos não é açúcar! Mas esta pasta é deliciosa e tem sido utilizada principalmente em duas versões do meu muito variado pequeno-almoço: no pão integral com queijo de nozes ou nas papas de aveia. Se tiver pistácios, ainda melhor :)


Papas de aveia

200g leite magro
40g flocos aveia
Pasta de mel e canela (mistura a gosto dos dois ingredientes)
Pistacios picados

Colocar no copo da Bimby o leite com os flocos de aveia e cozer 10min / 90° C / colher-inversa / vel 2.5. Deitar numa taça, regar com a pasta de mel e canela, polvilhar com os pistácios e servir.


My latest addiction is a honey and cinnamon paste. It could be worse. In fact it could. But at least it's not refined sugar! But this paste is delicious and I have been having if mainly in my whole bread with walnut cheese as well as in my porridge. If pistachios are around, even better :)



Porridge

200g skimmed milk
40g oats
Honey an cinnamon paste (mix both ingredients to your liking)
Chopped pistachios

Place the milk and oats in the Thermomix mixing bowl and cook for 10min / 90º C / reverse / speed 2.5. Pour into a bowl, drizzle with the honey cinnamon paste and sprinkle with the pistachios before serving.

Arroz Doce | Rice pudding

Este mês estamos de parabéns, o blogue faz 3 anos. Queríamos festejar com grande pompa e circunstância mas a verdade é que a falta de tempo estacionou por aqui e parece não ir mais embora. Ainda assim vamos ter direito a alguns festejos. Começamos por um arroz doce pouco doce, com travo a limão e polvilhado de canela. E quase que cheira a Natal...


Arroz doce
(adaptado do livro ABC da Bimby)

1000g leite magro
150g de arroz carolino
4 tiras de casca de limão (apenas a parte amarela)
1 pau de canela
1 pitada de sal
100g açúcar amarelo
4 gemas de ovo
Canela para polvilhar

Colocar no copo o leite, o arroz, a casca de limão, o pau de canela e o sal e programar 15min/90°C/função inversa/velocidade-colher.
Retirar a tampa e envolver com a espátula.
Programar 25min/90°C/função inversa/velocidade-colher.
Adicionar o açúcar, as gemas previamente desfeitas num pouco de arroz doce e envolver com a ajuda da espátula.
Programar 10min/90°C/função inversa/velocidade 1,5.
Deitar num recipiente grande ou em taças pequenas e deixar arrefecer.
Quando estiver frio polvilhar com canela em pó.


November is a celebration month for the blog is 3 years old. We wanted to celebrate in big style but the lack of time seems to have parked around here for good. Still, we are entitled to some nice things. And we start off with a lovely rice pudding (or sweet sticky rice, as I like to call it), with hints of lemon and sprinkled with cinnamon. It almost smells like Xmas...


Rice Pudding
(adapted from the Thermomix Basic Book)

1000g skimmed milk
150g carolino rice
4 stripes of lemon zest (the yellow only)
1 cinnamon stick
1 pinch of salt
100g light brown sugar
4 egg yolks
Cinnamon powder for sprinkling

Place the milk, rice, lemon zest, cinnamon stick and pinch of salt inside the mixing bowl and set for 15min/90°C/stirring/lowest speed.
Remove the lid and mix with the spatula.
Set for 25min/90°C/stirring/lowest speed.
Add the sugar, the yolks previously mixed with 4 tbsp of the rice mix and stir with the spatula.
Set for 10min/90°C/stirring/vel. 1,5.
Place the rice pudding in a large bowl or distribute by small cups and leave to cool.
When cold, sprinkled with cinnamon powder to your liking.

Sandes de salmão fumado, mel e ervas | Smoked salmon, honey and herbs sandwich

Os almoços rápidos mas saborosos. Os ingredientes de sempre com novas combinações. Ingredientes novos que casam divinamente com os já existentes. E a lufada de ar fresco perfeita para este calor que finalmente se faz sentir. Primavera, almoça connosco!

Pão escuro

250ml leite magro
5 c.sopa melaço biológico
1 c.chá sal
225g farinha trigo integral T150
225g farinha trigo T65
1+1/4 c.chá de fermento bio seco

Colocar todos os ingredientes na cuba da MFP segundo as indicações do fabricante. Escolher o programa Pão Integral para um pão de 750g com tostagem mínima. Findo o programa, remover cuidadosamente o pão da cuba e deixar arrefecer sobre uma rede.

Sandes de salmão fumado, mel e ervas

Fatias de pão escuro
Queijo de ervas para barrar
Pimenta 5 bagas moída na hora
Salmão fumado da Noruega
Mel de rosmaninho
Mizuna verde (micro e vegetais) Life in a Bag

Barrar as fatias de pão com o queijo de ervas e temperar com a pimenta. Colocar o salmão e regar com um fiozinho de mel. Terminar com a mizuna verde e servir acompanhado de Lancers Rosé bem frio.

Dark bread

250ml skimmed milk
5 tbsp bio dark treacle
1 tsp salt
225g whole wheat flour
225g strong bread flour
1+1/4 tsp active dry yeast

Place all the ingredients in the bread machine accordingly to the manufacturer's insctructions. Choose the whole grain program for a 750g loaf and light toasting. At the end of the program, carefully remove the bread from the pan and leave to cool in a wire rack.

Smoked salmon, honey and herbs sandwich

Dark bread slices
Herbs cream cheese
Freshly ground pepper
Norwegian smoked salmon
Rosemary honey
Green mizuna (micro e vegetables) Life in a Bag

Spread the herb cheese on the bread slices and season with the pepper. Top with the salmon and drizzle with the honey. Garnish with the mizuna and serve together with a good and very cold rosé wine.

Bolo de Azeite, Alecrim e Chocolate | Olive Oil, Rosemary and Chocolate Cake

Cá em casa temos uma paixão assolapada por azeite. E como o fim de semana está à porta, nada melhor do que um delicioso bolo que não pesa na consciência e que é uma ode ao azeite. E neste caso um azeite excelente, que nos foi entregue em mãos pelo talentoso Filipe, do Chilli com Todos


Bolo de Azeite, Alecrim e Chocolate

3/4 chávenas farinha integral T150
1 1/2 chávenas farinha T55
3/4 chávenas açúcar amarelo
1 1/2 c.chá fermento
3/4 c.chá sal
3 ovos
1 chávena azeite
3/4 chávena leite magro
1 1/2 c.sopa alecrim fresco, finamente cortado
150g pepitas de chocolate negro (70% cacau)

Untar com azeite uma forma redonda de mola. Peneirar os ingredientes secos para uma taça grande, devolvendo-lhe todos os pedacinhos de grão que ficarem retidos na peneira. Noutra taça, bater bem os ovos. Juntar o azeite, leite, alecrim e misturar. Com uma espátula, envolver os ingredientes líquidos dos secos, misturando gentilmente apenas o suficiente para os combinar. Adicionar o chocolate. Deitar a massa na forma, espalhar por por igual e alisar o topo. Levar ao forno pré-aquecido a 180º C durante cerca de 40mins ou até o topo estar arredondado e dourado, ligeiramente mais escuro nos rebordos e desde que o teste do palito esteja ok. O bolo pode ser comido morno ou frio.


Around here we have a crush on olive oil. And since the weekend is just around the corner, nothing better than a delicious and (kind of) healthy cake which is also an ode to olive oil. And in this case and excellent olive oil handed to us by the talented Filipe, from Chilli com Todos.


Olive Oil, Rosemary and Chocolate Cake

3/4 cups whole wheat flour
1 1/2 cup all-purpose flour
3/4 cups brown sugar
1 1/2 tsp baking powder
3/4 tsp salt
3 eggs
1 cup evoo
3/4 cups whole milk
1 1/2 tbsp fresh rosemary, finely chopped
150g bittersweet chocolate (70% cacao) chips

Rub a fluted tart pan with olive oil. Sift the dry ingredients into a large bowl, pouring back into the bowl any bits of grain or other ingredients that may remain in the sifter, and set aside. In a large bowl, whisk the eggs thoroughly. Add the evoo, milk, and rosemary and whisk again. Using a spatula, fold the wet ingredients into the dry ingredients, gently mixing until just combined. Stir in the chocolate. Pour the batter into the pan, spreading it evenly and smoothing the top. Bake in a pre-heated oven at 180º C for about 40mins, or until the top is domed, golden brown, and darker around the edges, and a skewer inserted inserted into the center comes out clean. The cake can be eaten warm or cool from the pan.

Leite de avelã com chocolate | Hazelnut milk with chocolate

Em tudo na vida há alternativas. Cada decisão de tomamos é feita com base numa escolha, mesmo que por vezes de forma inconsciente. Se olhamos o céu cinzento e optamos pela liberdade de sair sem guarda-chuva. Se vamos pelo caminho mais rápido ou atravessamos o jardim para sentir o perfume das flores depois da orvalhada matinal. Leite de avelã com chocolate

1 medida de avelãs
4 medidas de água
Nestlé Gold Cacau Instantaneo 

Mergulhar as avelãs em água durante pelo menos 12h. Escorrer, passar por água e colocar no liquidificador. Adicionar 4 medidas de água e triturar até obter um líquido leitoso e a avelã estar completamente ralada. Forrar um coador com um pano fininho (musseline) e apoiá-lo num jarro medidor. Verter a mistura no coador e coar bem todo o liquido, torcendo o pano ao máximo (no jarro fica o leite de avelã e no pano fica farinha de avelã). Aquecer o leite de avelã e juntar cacau a gosto.

Notas: Esta receita é extremamente versátil. Pode usar-se qualquer fruto seco (cajus, pistácios, amêndoas, etc.), qualquer adoçante (mel, agave, açúcar baunilhado, etc.) e qualquer sabor (chocolate, groselha, café, fruta (no caso de batidos), etc.). A farinha resultante deste processo pode ser aproveitada para bolos, pães, crumbles, granolas, etc..

Hazelnut milk with chocolate

1 measure hazelnuts
4 measures water
Nestle Gold Instant Cocoa

Soak the hazelnuts overnight (12h). Drain, rinse and place in the blender with the 4 measures of water. Blitz until you have a milky liquid and the hazelnuts are ground. Line a strainer with cheese-cloth and place it over a measuring jar. Strain the milk, twisting the cloth to obtain the more liquid possible. Heat the milk and flavor with the cocoa to taste.

Notes: this recipe is extremely versatile. You can use any nut (cashews, pistachios, almonds, etc.), any sweetner (honey, agave, vanilla sugar, etc.) and any flavor (chocolate, gooseberry syrup, coffee, fruit (for smoothies), etc.). The resulting hazelnut flour/meal can then be used in cakes, breads, crumbles, granolas, etc..

Tapioca de chocolate branco com tangerina | White chocolate and tangerine tapioca

O dia perde-se entre nuvens negras e raios de sol. As horas passam lentas, vagarosas, agarradas a cada segundo como se fosse o último. E enquanto o tempo se entranha em todos os poros da nossa pele, vamos saboreando colher atrás de colher, apreciando cada detalhe desta sobremesa.


Tapioca de chocolate branco com tangerina

50g de tapioca
250ml de leite magro
100g de chocolate belga branco
1/2 tangerina (apenas a casca)
Pólen de abelha
Flor de sal

Deixar a tapioca de molho em bastante água pelo menos durante 2h (neste caso ficou durante a noite). Num tachinho, colocar a tapioca hidratada (e escorrida) com o leite e a casca de tangerina e levar ao lume. Cozer durante 5mins após levantar fervura (pode ser necessário adicionar mais um pouco de leite para ajustar a consistência). Retirar do lume e juntar o chocolate, mexendo sempre para derreter. Servir polvilhada com pólen de abelha e flor de sal.


The day looses itself amongst dark clouds and sunbeams. The hours slowly pass by, lingering in each second as if it was the last. And while time entrenches itself in our skin pores, we savor spoon after spoon, enjoying each detail of this dessert.



White chocolate and tangerine tapioca

50g tapioca
250ml skimmed milk
100g white belgian chocolate
1/2 tangerine (zest only)
Bee polen
Fleur de sel

Hidrate the tapioca with plenty water for at least 2h (mine stayed overnight). In a small saucepan, place the drained tapioca with the milk and tangerine zest. Cook for 5 mins after started boiling (it might be necessary to add more milk, depending on how you like your tapioca's consistency). Remove from the heat and add the chocolate, mixing until it melts completely. Serve sprinkled with the polen and fleur de sel.

Tapioca com limão e canela | Tapioca with lemon and cinnamon

Entre as Festas há um regresso à normalidade que é muito aguardado. Enquanto nas mesas ainda bailam iguarias natalícias, na mente já fervilham ideias para a passagem de ano. Mas pelo meio é imperativo manter alguma sanidade mental e impedir que a balança reclame do peso pesado que nela assentou arraiais. 


Tapioca com limão e canela

50g de tapioca
250ml de leite magro
Acúçar baunilhado a gosto
1 pequeno pau de canela
1 casquinha de limão

Deixar a tapioca de molho em bastante água pelo menos durante 2h (neste caso ficou durante a noite). Num tachinho, colocar a tapioca hidratada (e escorrida) com os restantes ingredientes e levar ao lume e cozer durante 5mins após levantar fervura (pode ser necessário adicionar mais um pouco de leite para ajustar a consistência). Servir polvilhada com canela.


In between the Holidays there's a return to normality that is much awaited. While the tables are still filled with Xmas delicacies our minds have started wondering about New Year's Eve. Therefore, it is imperative to keep our mental sanity and stop the scale from complaining about the heavy weight that climbed on top of it.

In a small saucepan, place the drained tapioca with the rest of the ingredients and cook for 5 mins after started boiling (it might be necessary to add more milk, depending on how you like your tapioca's consistency). Serve sprinkled with cinnamon powder.

Rabanadas grelhadas | Grilled French Toasts

O Natal está mesmo, mesmo ao virar da esquina. Muito em breve estaremos juntos, sentados em volta de uma mesa repleta de iguarias. Tradições de família que se perpetuam ou novas que se vão criando. Estaremos aconchegados, com abraços e sorrisos, em casa quentinhas onde há de tudo um pouco. Pudessem todos ter sorte igual...
As festividades convidam aos exageros gastronómicos e se uns são mais regrados, outros nem por isso. Para quem procura algumas alternativas mais saudáveis sem ter que abdicar de muita coisa, aqui fica uma receita de rabanadas grelhadas. Sim, grelhadas. O sabor, esse, está todo lá!


Rabanadas grelhadas

500ml leite magro (ou de soja, amêndoa, arroz, etc.)
1/2 limão pequeno biológico (raspa)
2 paus de canela
Mel a gosto (ou geleia de agave, ou açúcar amarelo/mascavado)
2 ovos batidos
8 fatias de pão (seco) de mistura, centeio de Padronelo, etc.
Mistura de açúcar amarelo e canela para polvilhar

3 laranjas (sumo)
Vinho do Porto (mesma quantidade do sumo de laranja)
2 estrelas de anis
1 pau de canela
Açúcar amarelo ou mascavado baunilhado (ou mel, geleia de agave, etc.)

Ferver o leite com a raspa de limão, paus de canela e o mel. Reservar. Bater os ovos e partir as fatias de pão. Entretanto, aquecer uma frigideira anti-aderente apenas untada com azeite. Mergulhar o pão no leite até estar molengão. Passar pelo ovo e colocar na frigideira até dourar de ambos os lados. Polvilhar todas as fatias com a mistura de açúcar e canela à medida que vão sendo colocadas numa travessa ou numa taça.

Para quem gostar, servir as rabanadas com calda: levar a ferver o sumo das laranjas com o vinho do Porto, anis, canela e açúcar amarelo baunilhado. Regar as rabanadas com a calda ou reservar numa molheira, para que cada pessoa possa optar entre rabanadas secas ou molhadas.

We will tucked in, with hugs and smiles, in a warm house where there's a bit of everything. I wish everyone could just say the same thing...
The holidays are an invitation for gluttony and if some of us are a bit more controlled, others may not be so. For those who seek a healthier alternative without giving up on much, here's a recipe for grilled French Toasts (Rabanadas, in Portuguese). Yes, grilled. But the flavor is all there. 


Grilled French Toasts

500ml skimmed milk (or soya, almond, rice, etc.)
1/2 small bio lemon (zest)
2 cinnamon stick
Honey to taste (agave syrup, or brown/moscovado sugar)
2 eggs, beaten
8 thick whole bread (at least two 2 days old) slices
Brown sugar and cinnamon mix to sprinkle

3 oranges (juice)
Port wine (same amount as orange juice)
2 aniseed stars
1 cinnamon stick
Brown or moscovado vanilla sugar (or honey, agave syrup, etc.)

Boil the milk with lemon zest, cinnamon and honey. Keep aside. Beat the eggs and slice the bread. Meanwhile, heat a anti-adherent frying pan just greased with olive oil. Dip the bread in the milk until tender. Pass each slice by the beaten eggs and grill in the pan until golden on both sides. Sprinkle all slices with the sugar and cinnamon mix and place them in a large dish or large bowl.

If you like, serve the French Toasts with a syrup: boil the orange juice with Port, aniseed, cinnamon and vanilla sugar. Drizzle the French Toasts with the syrup or keep the syrup aside in a gravy boat so each person can choose between dry or moist French Toasts.
