Guest Post: Truta assada com chips e molho de iogurte

O guest post de hoje traz-nos o mar. Esse mar tão nosso, que nos torna tão únicos. Esse mar que nos inspira, alimenta, diverte. 

Do gourmets {amadores} veio a simplicidade, a sazonalidade, a boa qualidade dos ingredientes. E quando assim é, a refeição quase que se faz por si só. 

É com muito prazer que hoje partilhamos a mesa, ainda que virtualmente, com a Suzana, que só é uma das nossas inspirações mais antigas. As suas fotos convidam, ou melhor, convidam-se elas próprias a entrar na nossa casa e na nossa vida, quando um par de mãos nos serve uma sobremesa, uma salada, um chili con carne. É como se a família gourmets {amadores} se sentasse à mesa connosco, numa partilha íntima de saberes, sabores e boa conversa.

Cozinhar em cozinha alheia é sempre uma aventura. Hoje trago o almoço quase pronto para uma tarde de gargalhadas e dois dedos de conversa. Liga-se o forno e o almoço está pronto sem necessidade de muita atenção. É que eu e a Ondina nunca nos encontrámos pessoalmente mas na minha mente é assim que vai ser.


Truta assada com chips e molho de iogurte

serve 2

1 truta com cerca de 750 g, arranjada
1 limão pequeno, em fatias finas
2 colheres (sopa) azeite
6 batatas médias, fatiadas na horizontal (usei metade batata roxa e metade batata vitelotte)
4 colheres (sopa) iogurte grego
1 colher (chá) folhinhas de tomilho-limão
1 colher (chá) sumo de limão
sal e pimenta preta moída na altura

Pré-aqueça o forno a 220ºC. Seque as rodelas de batata num pano de cozinha limpo. Disponha-as numa camada única e com o mínimo de sobreposições num tabuleiro de forno. Pincele-as com 1 colher sopa de azeite. Tempere com sal e pimenta preta moída na altura. Leve ao forno por 10-12 minutos ou até estarem douradas, virando-as a meio.

Limpe a truta e faça 3 cortes de cada lado. Coloque meia rodela de limão em cada corte e as restantes na barriga. Coloque num tabuleiro e tempere com sal. Regue com a restante colher de azeite e adicione 2 colheres de sopa de água no fundo para o tabuleiro não queimar. Leve ao forno 8-10 minutos ou até o peixe estar cozinhado. 

Faça o molho, misturando o iogurte, o tomilho, o sumo de limão e sal e pimenta. Sirva com uma salada de rúcula ou agrião.

From gourmets {amadores} came the simplicity, seasonality, good fresh ingredients. And when that happens the meals almost makes itself.

It is with immense pleasure that today we share our table, even though virtually, with Suzana, who is one of our first inspirations. Her photos invite themselves into our home and into our life, when a pair of hands serves us a dessert, a salad, chili con carne. It is as if the gourmets {amadores}'s family is seating at the table with us, in a intimate share of knowledge, flavors and good conversation.

Cooking on someone else's kitchen is always an adventure. Today I bring an almost ready lunch to an afternoon of laughter and a chat. The oven is turned on and food is ready without the need for a lot of attention. It happens that Ondina and I have never met in person but, in my mind, this is how I see it.

Baked trout with chips e yoghurt sauce

serves 2

1 trout with circa 750 g, manured
1 small lemon, finely sliced
2 tbsp evoo
6 medium potatoes, horizontally sliced (used half purple and half vitelotte)
4 tbsp greek yoghurt
1 tsp lemon-thyme leaves
1 tsp lemon juice
Salt and black pepper freshly ground

Pre-heat the oven to 220º C. Dry the potato slices in a clean kitchen cloth. Display them, in a single layer and with minimal overlaps, in a baking tray. Swab them with a tbsp of evoo. Season with salt and black pepper freshly ground. Put in the oven for 10-12 mins or until golden, flipping them half time through.

Clean the trout and make 3 cuts in each side. Place a lemon slice in each cut and the remaining in the trout's belly. Place in a baking tray and season with salt. Drizzle with the remaing evoo and add 2 tbsp of water to the bottom of the tray, to avoid burning. Leave in the oven for 8-10 mins or until the fish is cooked.

For the sauce, mix tee yoghurt, the thyme, lemon juice and salt and pepper. Serve with an arugula or watercress salad.

Guest Post: Creme de courgette com nougat | Courgette cream with nougat

O frio que faz pela manhã entranha-se nos ossos e faz-nos querer voltar para a cama. Saimos apenas com a promessa de saber que fora do vale dos lençóis há uma panóplia de bebidas quentes para experimentar. 
O frio que faz à noite pede mantas quentinhas no sofã, um chá fumegante para aquecer as mãos e uma malga de sopa quente para aquecer o coração.
E é de coração quentinho, cheio e bem vermelhinho que recebemos o guest post da Samanta numa das receitas deliciosas do lindissimo Eat Love. Quem não se apaixonar por este blogue é um ovo podre sem coração! :p


Creme de courgette com nougat

Para o creme (serve 4 a 5 pratos)
* 2 courgettes médias
* 1 cebola grande
* 1/2 couve-flor pequena
* hortelã (qb)
* sal qb
* pimenta preta qb
* 2 copos de água quente
* 1 colher de sopa de leite de coco 

Para o nougat
* 1 copo médio mel
* a mesma medida de frutos secos (a gosto)
* 1 pitada de sal grosso

Cortar a courgette, a couve-flor e a cebola e colocar numa panela com água quente temperada com sal e pimenta a gosto. Deixar cozinhar até os legumes ficarem tenros (espetar um garfo para ver o ponto de cozedura). Depois de cozidos passar tudo com a varinha mágica até obter um creme homogéneo. Picar a hortelã, colocar no creme e misturar.
Para o nougat, misturar o mel com os frutos secos partidos aos pedaços. Aquecer a mistura numa frigideira e deitar num tabuleiro forrado com papel vegetal. Levar ao forno pré-aquecido a 180º C e vigiar até os frutos secos dourarem ligeiramente. Atenção para não deixar queimar o mel! Retirar do forno e deixar arrefecer. Partir aos pedaços aleatoriamente.
Servir o creme com uma colher de leite de coco no lugar do azeite e o nougat partido aos pedaços.


The morning cold entrenches itself in our bones and all we want is go back to bed. We leave only with the promisse that outside there are smoking hot beverages to try.
The nocturnal cold asks for warm blankets in the sofa, steamy tea cups to warm the hands and a bowl of hot soup to warm the heart.
And it's with our red heart filled with warmth that we receive Samanta's guest post in one of the delicious recipes from the gorgeous Eat Love. If you don't fall in love with this blog you're a heartless rotten egg! :p 


Courgette cream with nougat

For the cream (serves 4 to 5 persons)
* 2 medium courgettes
* 1 large onion
* 1/2 small cauliflower
* mint (to taste)
* salt (to taste)
* black pepper (to taste)
* 2 glasses hot water
* 1 tbsp coconut milk

For the nougat
* 1 medium glass honey
* same measure of nuts (to your liking)
* 1 pinch coarse salt

Slice the courgette, cauliflower and onion and cook in a pan with the hot water, seasoned with salt and pepper. Cook until the vegetables are tender (prick with a fork to check the tenderness). Afterwards blend until you have a smooth cream. Chop the mint and mix with the cream.
For the nougat, mix the roughly chopped nuts with the honey in a frying pan and heat up. Put the nuts in a baking tray lined with paper and leave in the pre-heated oven at 180º C until the nuts are golden. Watch closely to avoid burning the honey! Remove from the oven and leave to cool down. Randomly break the nougat.
Serve the cauliflower cream with a spoon of coconut milk (instead of evoo) and top with the nougat.

Guest Post: Bruschetta de Pimentos Vermelhos | Red Bell Pepper Bruschetta

O guest post de hoje é um mimo da Rosa. Simpática, conversadora e espirituosa, partilha connosco iguarias acompanhadas de fotos que nos deixam com água na boca. Por isso, sejam simpáticos, façam um bolo (Be Nice, Make a Cake) e vão conhecer o excelente trabalho da Rosa! :)

Bruschetta de Pimentos Vermelhos

2 pimentos vermelhos
1 pimento verde
1 courgette pequena
1 colher de chá de orégãos secos
1 punhado de folhas de hortelã
1 limão
Vinagre q.b.
Pimenta Preta moída na hora q.b.
Azeite q.b.
Sal q.b.
Fatias de broa de milho branco (tantas quantas o nível de fome)
Dentes de alho (a gosto)

Comece por ligar o forno a 220ºC. Lavar os pimentos e a curgete e coloçar numa travessa para ir ao forno. Adicione a hortelã finamente picada, e os orégãos secos. Regue com azeite, temperar com sal, pimenta.
Leve ao forno, entre 30 a 45 minutos, ou até os legumes ficarem bem dourados.

Retire do forno e deixar arrefecer. Assim que estejam frios o suficiente, picar os legumes até formar uma pasta com uma consistência própria para barrar. (Pode deixar pedacinhos maiores se gostar)
Numa taça, misture bem a pasta com vinagre e o sumo de limão em quantidades q. b., rectifique o sal e a pimenta se for necessário.

Entretanto, torre as fatias de broa e esfregue meio dente de alho numa das faces. Sirva as fatias regadas com um fio de azeite na superfície do alho, e barrar com a pasta de pimentos.

É delicioso como entrada ou um lanche tardio!
Acompanhe com um bom vinho para aquecer estes dias mais cinzentos.

Red Bell Pepper Bruschetta

2 red bell peppers
1 green pepper
1 small courgette
1 tsp dried oregano
1 handful mint leaves
1 lemon
Vinegar to taste
Freshly ground black pepper
Evoo to taste
Salt to taste
White corn bread slices (as many as your hunger)
Garlic cloves to taste

Turn the oven at 220º C. Wash the peppers and courgette and put in a baking tray. Add the finelly chopped mint and the oregano. Drizzle with evoo and season with salt and pepper.
Put in the oven for about 30 to 45 mins, or until the vegetables are golden.

Afterwards, remove from the oven and leave to cool down. When cold, chop the vegetables as thin as possible, until you have a smooth spreadable paste (you can leave larger bits if you prefer).
In a bowl, mix the paste with vinegar and lemon juice and rectify the seasoning, if necessary.

Meanwhile, toast the bread slices and rub the garlic in each slice. Drizzle the slices with evoo and spread the paste on top.

It is delicious as a starter or a late-snack!
Pair it wit a good wine to warm up these cold grey days.

Guest post: Tarte de ricotta, abóbora e batata doce | Ricotta, pumpkin and sweet potato pie

O Outono que adoro instalou-se com pompa e circunstância, inclusive nas receitas dos nossos convidados. O guest post de hoje chega-nos pelas mãos talentosas da Teresa, com o carimbo do seu Lume Brando, blogue que sigo faz tempo e que me sugeria que a sua mentora fosse uma pessoa tão delicada e especial como os lindos bolos que partilha connosco. E não me enganei. A Teresa, para além de delicada e especial, é simpatica, divertida e uma excelente conversadora. E quando duas matracas se juntam, já sabem, a conversa dá pano para mangas!

Uma tarte com sabores mediterrânicos de Outono, feita com carinho a pensar na Ondina e no seu Coentros&Rabanetes.

Se há uns anos me tivessem dito que um dia iria conhecer pessoalmente muitos dos autores dos blogs de cozinha que vou acompanhando, teria respondido que isso era altamente improvável: por ser céptica em relação a amizades iniciadas através de um computador, por ser tímida, por ser insegura, por nunca ter imaginado que em showcookings ou workshops o meu papel pudesse ser outro que não o de participante, por não levar o blog demasiado a sério.
Mas a vida tem essa coisa chamada surpresa. 
E nos últimos tempos, fruto de boas surpresas, tenho vindo a mudar a minha opinião acerca de conhecer pessoalmente quem está por detrás dos blogs que sigo ou dos comentários que me deixam.
A Ondina (ou direi antes, a Joana) foi uma das food bloggers que conheci recentemente, e com quem desde o início criei uma enorme empatia. Somos ambas doidas por loiça e props (na verdade, é uma característica comum a todos os que têm um blog de cozinha e gostam de investir um pouco na componente fotográfica), por revistas e livros de culinária, e acho que podíamos ficar horas no chat a trocar moradas e indicações para lojas, antiquários e feiras de velharias, links para livros e gadgets de cozinha. Mas como não queremos e não podemos cometer loucuras, temo-nos controlado, não é Ondina?
Fiquei por isso muito contente quando recebi o seu convite para um guest post no Coentros&Rabanetes, inspirado na cozinha mediterrânica. Se fazer um guest post era uma honra, fazê-lo sob inspiração mediterrânica seria um prazer. 
E foi assim que surgiu esta tarte de ricotta, abóbora e batata doce, enriquecida com espinafres, que levou ainda rúcula e parmesão no momento de servir. Feita com algumas das compras que fiz no Mercado de Sabores do Continente / Porto.Come (evento onde pude conversar mais um bocadinho com a Ondina, ou melhor, a Joana), como a abóbora e a tarteira quadrada, que mal avistei na banca da César Castro soube que tinha de trazê-la comigo!

Voltando ao início do post, e depois de ter conhecido tanta gente fantástica e inspiradora ligada a este submundo dos blogs de cozinha, de que a Joana (a esta hora já perceberam que Ondina é um nickname) é um exemplo perfeito, vem-me à memória a famosa frase de Julia Child: "the people who love to eat, are always the best people". E quem sou eu para discordar da senhora dona Julia.


Tarte de ricotta, abóbora e batata doce
(inspirada numa lasanha de Lorraine Pascale)

Para a massa
250g de farinha sem fermento

125g de manteiga ou margarina fria

2 ovos pequenos
1 pitada de sal fino

Para o recheio
250g de queijo ricotta
1/2 embalagem de queijo tipo Philadelphia
2 ovos
1 mão cheia de folhas de espinafres frescos
250g de batata doce cozida e descascada
300g de abóbora bolina limpa e descascada
1 cebola grande (usei roxa)
3 dentes de alho
Pimenta preta acabada de moer
Mistura de Sal c/ Ervas do Mediterrâneo (usei da Margão)
1/4 de copo de vinho branco
Azeite
Pão ralado (opcional)
Rúcula
Nozes
Parmesão ralado na hora


Lave bem as batatas doces e coza-as em água com sal durante cerca de 30 minutos (o tempo vai depender do tamanho das batatas).
Prepare a massa: numa taça coloque a farinha, o sal, a manteiga fria cortada em cubos e os ovos.
Amasse com as pontas dos dedos até obter uma massa uniforme e macia. Se achar que está a colar, junte um pouco mais de farinha. Reserve, embrulhada em película aderente, se possível no frigorífico.
Numa sertã, leve ao lume num fundo de azeite a cebola e os alhos picados. Deixe alourar bem e junte a abóbora cortada em pequenos pedaços. Deixe cozinhar e quando a batata doce tiver cozida e descascada (deixe arrefecer antes de fazê-lo!), junte-a à abóbora. Deixe cozinhar um pouco e refresque com o vinho branco.
Tempere com a mistura de sal e ervas do Mediterrâneo, pimenta preta acabada de moer e mais sal se achar necessário. Deixe cozinhar em lume brando até os ingredientes estarem bem macios. Rectifique os temperos e retire do lume. Com um espremedor manual de batatas, amasse até obter um puré grosseiro e deixe arrefecer.
Entretanto forre uma tarteira com a massa (vai sobrar massa que poderá usar para outras receitas, inclusivamente doces), pique-a e leve-a ao frigorífico cerca de 30 mins.
Prepare o recheio, misturando os queijos com os ovos. Reserve.
Pré-aqueça o forno nos 180º C.
Encha a tarteira com feijões ou pesos próprios para cozedura e leve ao forno cerca de 10-15 mins para uma pré-cozedura.
Retire e recheie: a primeira camada será de puré de abóbora e batata doce, a segunda de espinafres e algumas nozes, a terceira da mistura de queijos e ovo. Termine com pão ralado e leve ao forno cerca de 35 mins ou até estar bem dourada.
Antes de servir, espalhe pelo topo algumas folhas de rúcula, nozes e lascas de parmesão.

Nota: se tiver tempo, pode assar a abóbora e a batata doce e fazer o puré do recheio com estes legumes assados.


The Autumn I love finally settled in with pomp and circumstance, including on our guests’ recipes. Today’s guest post comes from Teresa’s talented hands, with the stamp of her Lume Brando, blog that I religiously follow and that always made me think of its mentor as someone so delicate and special as the cakes she shares with us. And I was right. Teresa is not only delicate and special, she’s also nice, funny and a great chatter. And when two talkative girls get together, you can only imagine!

A pie with Autumn Mediterranean flavors, made with affection while thinking of Ondina and her Coentros&Rabanetes.

If, some years ago, someone told me that one day I would meet many food bloggers that I follow, I would reply it would be highly unlikely: because I’m skeptical about virtual friendships, because I’m shy, insecure, because I had never thought that in show-cookings or workshops my part could be other than the one of attendant, because I don’t take the blog too seriously.
But life has this thing called surprise.
And, lately, the good surprises have been changing my opinion about meeting the people behind the blogs and comments they leave on my blog.
Ondina, or should I say Joana, is one of the food bloggers that I recently met and we had this bond from the beginning. We’re both crazy about tableware and props (actually this is kind of a common things amongst food bloggers that enjoy photography), about magazines and cookbooks and I think we could stay chatting for hours while exchanging addresses and infos for shops, antiques, markets, book links, and gadgets. But because we don’t want nor can go pauper and bonkers about it, we have been controlling ourselves, right Ondina?
I was truly happy when I got the invitation for a guest post at Coentros&Rabanetes, inspired by Mediterranean cuisine. If doing a guest post already was an honor, doing it under such Mediterranean inspiration would be a real pleasure.
And that’s how this pie, with ricotta, pumpkin, sweet potato and spinach, sprinkled with parmesan and arugula, was born. Some ingredients came from my shopping at Mercado de Sabores do Continente / Porto.come (an event where I got to chat a bit more with Ondina, or better saying, Joana), like the pumpkin and the square pie dish that, as soon as I lay my eyes on it, at César Castro’s stall, I knew I had to buy it!

Going back to the start of this post, and after having met so many great and inspiring people of the food bloggers “underworld”, from which Joana (that by now you already guessed that Ondina is just a nickname) is a perfect example, it comes to my mind the famous sentence by Julia Child: “the people who love to eat, are always the best people". And who am I to disagree with Mrs Child.


Ricotta, pumpkin and sweet potato pie
(inspired by a Lorraine Pascale’s lasagna)

For the dough
250g all purpose flour

125g cold butter

2 small eggs
1 pinch of salt

For the filling
250g ricotta cheese
1/2 package of Philadelphia-type cheese
2 eggs
1 handful of fresh spinach leaves
250g boiled and peeled sweet potato
300g deseeded and peeled pumpkin
1 large onion (used a purple)
3 garlic cloves
Freshly ground pepper
Mix of salt and Mediterranean herbs (used from Margão)
1/4 glass white wine
EVOO
Breadcrumbs (optional)
Arugula
Nuts
Freshly grated parmesan


Wash thoroughly the potatoes and boil them in water with salt for about 30 mins (the time will depend on the potatoes size).
Prepare de dough: in a bowl place the flour, salt, butter in cubes and the eggs.
Work with the tips of your fingers until you have a soft and uniform dough. If the dough is sticky, add a bit more flour. Keep, in the fridge, wrapped in cling film.
In a frying pan, heat the onion and garlic in evoo until golden. Add the pumpkin sliced in small cubes and cook. When the potatoes are cooked and peeled (leave to cool down before peeling!), add them to the pumpkin. Cook for a bit more and add the wine.
Season with the mix of salt and herbs, with pepper and, if necessary, a bit more salt. Cook in a low-medium heat until all ingredients are soft. Check the seasoning and remove from the stove. Mash until you have a rough puree and leave to cool down.
Meanwhile, line the pie dish with the dough (you can use the leftovers for other pies, savory or sweet), prick with a fork and leave in the fridge for 30mins.
Prepare the filling by mixing the cheeses with the eggs. Keep aside.
Pre-heat the oven at 180º C.
Cover the pie dough with beans or proper weights for baking and put in the oven for about 10-15mins for pre-cooking.
Remove and fill: the first layer is the potato and pumpkin puree, the second is spinach and some nuts and the third is the egg and cheese mix. Top with breadcrumbs and return to the oven for 35mins, or until golden.
Before serving, sprinkle with arugula, nuts and parmesan shreds.

Note: if you have time, roast and the pumpkin and the potatoes for the puree.

Guest Post: Creme de couve-flor com cebola roxa caramelizada em vinagre balsâmico e crocante de queijo da Ilha | Cauliflower cream with red onion caramelized in balsamic vinegar and Azorean cheese crisp


Continua o desfile dos guest posts sobre as inspirações da cozinha mediterrânica e estamos cada vez mais maravilhados com o talento dos nossos convidados. O Filipe não é excepção: o seu Chilli com Todos é uma lufada de ar fresco! Primeiro é feito por um homem, o que nesta blogosfera de foodies portugueses ainda é uma raridade, e depois tem a capacidade de nos cativar pela simplicidade e bom gosto. Apesar de ser uma descoberta algo recente, mal dei de ecrã com as receitas deliciosas e as fotos inspiradoras (ou serão receitas inspiradoras e fotos deliciosas?) imediatamente fiquei fã. E assim que forem lá espreitar vão perceber do que falo! Se não acreditam, atentem na belíssima sugestão que o Filipe nos trouxe :)

The guest posts parade on the mediterranean cuisine inspiration goes on and we are blowned away by the talent of our guests. Filipe is no exception: his Chilli com Todos is a whiff of fresh air! Firstly, it is written by a man which, amongst the portuguese food bloggers, is still a rarity and secondly it has the ability to charm us with its simplicity and good taste. Even though it's a recent finding, as soon as I set my screen on those delicious recipes and inspiring photos (or should I say inspiring recipes and delicious photos?) I instantly became a fan. And as soon as you guys stop by, you'll see what I mean! If not, just check out the wonderful suggestion that Filipe brought us :)

A minha aventura nestas andanças é relativamente recente. Mas se há alguém que recordo de me acompanhar desde o início é a Ondina. Sempre simpática, prestável e quase sempre a primeira a comentar os meus posts, o que eu acho incrível! Por isso é um prazer estar aqui hoje no seu espaço!
A minha sugestão é uma sopa, porque já apetece vestir umas meias quentes, passar a tarde no sofá a trincar qualquer coisa e porque o corpo pede por comida aconchegante.

My adventure as a food blogger is quite recent. But if there's someone I remember since the begining, it's Ondina. Always nice, helpful and almost always the first to comment my posts, something I find remarkable! And that is why it's a pleasure to be here today!
My suggestion is a soup, because it already feels like wearing warm socks, spend the afternoon on the couch, nibbling, and because the body craves for comfort food.

Creme de couve-flor com cebola roxa caramelizada em vinagre balsâmico e crocante de queijo da Ilha | Cauliflower cream with red onion caramelized in balsamic vinegar and Azorean cheese crisp

Ingredientes | Ingredients
5 a 6 pessoas | people

Azeite q.b. | EVOO
1 alho-francês médio (só a parte branca) cortado às rodelas | medium leek (just the white part), sliced
2 dentes de alho picados | garlic cloves, finely chopped
2 raminhos de tomilho fresco | fresh thyme stalks
1 couve-flor grande picada | large cauliflower, finely chopped
Água a ferver suficiente para cobrir os legumes | boiling water, just enough to cover the vegetables
3 cebolas roxas picadas aos quadradinhos | red onions, finely sliced
4 colheres de sopa de vinagre balsâmico | tbsp balsamice vinegar
Sal e pimenta a gosto | Salt and pepper to taste
60g de queijo da ilha ralado na hora (ou queijo parmesão) | Azorean cheese, grated (or parmesan)

Procedimento | Method

Numa panela grande aqueça um fio de azeite, refoge em lume brando o alho-francês, o alho e as folhas de um raminho de tomilho. 
In a large saucepan, braise the leek, garlic and thyme leaves in the evoo.

Assim que o alho-francês ficar translúcido acrescente a couve-flor, aumente a intensidade do lume e deixe cozinhar até absorver a gordura do refogado.
As soon as the leek is translucid, add the cauliflower and turn the heat up to cook until all the evoo was absorved.

Cobrir os legumes com água a ferver e temperar com uma pitada de sal e pimenta. Cozinhar uns 15 a 20 minutos ou até que a couve-flor esteja macia.
Cover the vegetables with boiling water and season with salt and pepper. Cook for about 15 to 20 minutes or until the cauliflower is tender.


Enquanto a sopa coze pode começar a preparar as cebolas.
While the soup cooks, you can start preparing the onions.

Aquecer uma frigideira média com pouco azeite. Refogar a cebola em lume brando até ficar suave e translúcida. Nessa altura aumente o lume, espere uns segundos e adicione o vinagre balsâmico. Deixar evaporar e cozinhar durante um minuto ou dois para caramelizar. A cebola vai absorver o sabor do vinagre e manter uma textura crocante. Retire do lume e reserve.
Heat up a medium size frying pan with evoo. Braise the onions in a simmer until tender and translucid. Then, turn the heat up, wait a few seconds and add the balsamic vinegar. Leave to evaporate and cook for a minute or two to caramelize. The onion will absorve the vinegar flavors and still be crisp. Remove from the heat and keep aside.

Verifique se a couve-flor está cozida, desligue o lume e reduza a sopa a puré com a ajuda de uma varinha mágica.
Check if the cauliflower is cooked through, turn off the heat and blend to a purée.

Para que a sopa fique sempre com a cremosidade certa, costumo fazer o seguinte: retido praticamente toda a água e reservo-a num recipiente à parte. Depois de reduzir só os legumes a puré, acrescento o caldo, um pouco de cada vez, alternando com a varinha mágica até atingir a textura pretendida.
To get a creamy soup I always do the following: remove almost all the stock to a side bowl. Only then I blend the vegetables, adding the stock a little at the time, while blending until I get the desired level of creamyness.

Por fim, tempere a gosto com mais folhas de tomilho, sal, pimenta e um fio de azeite. Passe novamente com a varinha mágica para incorporar os sabores.
Finally, season with more thyme leaves, salt, pepper and a drizzle of evoo. Blend one last time to incorporate the flavors.

Acho que o tomilho é a alma deste creme, por isso é particularmente importante sentir o seu sabor. Se achar que precisa de mais, não hesite.
I think thyme is the soul of this soup so it is importante to feel its flavor. If you think you need to add more of it, please feel free.


Pode preparar o queijo crocante antes ou depois da sopa uma vez que é servido frio.
The cheese can be prepared before or after the soup, once it's served cool.

Para o queijo, o tamanho da frigideira determinará uma dose individual, por isso use uma frigideira pequena antiaderente sem qualquer tipo de gordura.
For the cheese, the size of the frying pan will determine the dose, so use a small non-sticking pan without any fat.

Ralar o queijo directamente na frigideira até cobrir uniformemente o seu fundo (conforme a fotografia). Não exagere na quantidade de queijo, ficará uma camada muito espessa e demorará mais tempo a derreter.
Grate the cheese directly into the pan until the bottom is all covered up (check the pic). Do not go crazy on the amount of cheese or you'll get a thick layer that will take longer to melt.


Coloque a frigideira em lume médio. O queijo inicialmente vai derreter e só depois começa a ficar crocante. Convém que o processo não seja muito rápido para evitar que queime, se for necessário baixe o lume.
Place the pan on a medium heat. The cheese will start by melting and only afterwards will become crisp. It's advisable that the process is not very quick in order to avoid burning the cheese, so lower the heat if necessary.

Vai notar uma alteração da cor. Quando atingir um amarelo torrado, não muito escuro, e endurecer, provavelmente está pronto. Se observar bem, o queijo começa inclusivamente a descolar-se da frigideira. Nesta altura use um salazar para o soltar completamente. Reserve-o em papel absorvente.
You will see a change in the color. When the cheese becomes golden, not very dark, and hard, it's ready. Use a spatula to remove it. Keep it in kitchen towels. 

Repita o processo até obter o número de rodelas de queijo crocante suficiente para servir, uma por pessoa.
Repeat the processe until you have enough cheese crisp portions (1/person). 

Sirva o creme de couve-flor com um pouco de cebola caramelizada no topo e o queijo crocante.
Serve the cauliflower cream with a bit of caramelized onion on top and the cheese crisp on the side.

Guest post: Lasanha mediterrânica | Mediterranean lasagna

Descobri o Frango do Campo ainda nos seus primeiros suspiros de vida. O nome intrigou-me e achei que a pessoa por detrás dele devia ter um excelente sentido de humor, para além do evidente talento. Leitora assídua, não perco pitada das partilhas da Naida, que nunca deixa de me surpreender quer com as receitas deliciosas quer com as fotos maravilhosas. Hoje trago-a de viagem connosco pelo Mediterrâneo e ela, na sua generosidade infindável, trouxe-nos uma belíssima lasanha vegetariana.
Obrigada Naida, pela inspiração sob as mais variadas formas :)

Por vezes é difícil dizer adeus ao Verão.
Começa a apetecer as bolachinhas, o chá a acompanhar, a mantinha a tapar os pés mas os ingredientes da horta não deixam esquecer o Verão por completo.
Ainda há beringelas, tomates e as últimas courgettes que precisam urgentemente de um rumo.


Lasanha meditarrânica

(receita ligeiramente adaptada da revista Continente Magazine nº 36)

Ingredientes:
cerca de 8 placas de lasanha
1 courgette
1 beringela
2 alhos picados
2 queijos frescos (pode usar mozzarella para um toque ainda mais mediterrânico)
Vinagre de maracujá, sal, azeite e manjericão q.b

Preparação:
Coza as placas de lasanha conforme as instruções da embalagem. Depois de cozidas, escorra-as e coloque-as em água fria.
Num grelhador, grelhe a courgette e a beringela previamente cortadas em fatias finas.
Corte o queijo em fatias e reserve.
Num prato disponha uma placa de lasanha, em cima uma camada de legumes grelhados polvilhados com alho picado e temperado com um pouco de sal, vinagre e azeite.
Coloque por cima uma placa de lasanha e em cima o queijo. Mais uma camada de lasanha e legumes temperados e repita o processo até acabarem os ingredientes.
Decore com manjericão e azeite.


I have found Frango do Campo during it's first steps. The name caught my attention and I wondered if the person behind it really had an excellent sense of humor, apart from the evident talent. As a fan reader, I never miss all the good things that Naida shares and she never stops to amaze me wether with the delicious recipes or the tasty photos. Today she is coming with us on our journey through the Mediterranean and, for that, she brought us an amazing vegetarian lasagna.

Sometimes is hard to say farewell to Summer.
We feel start craving for cookies, tea to go with it, a blanket on the couch to tuck our feet that the garden still reminds us of Summer.
There are aubergines, tomatoes, and the last courgettes that desperately need to be consumed.


Mediterranean lasagna

(recipe slightly adapted from Continente Magazine nº 36)

Ingredients:
around 8 lasagna sheets
1 courgette
1 aubergine
2 garlic cloves, chopped
2 cottage cheeses (or mozzarella for a more mediterranean flavour)
Passion fruit vinegar, salt, evoo and basil to taste

Method:
Boil the lasagna sheets accordingly to the instructions in the package. Drain and place them in cold water.
On a grill, grill the courgette and aubergine finelly sliced.
Slice the cheese and keep aside.
On a plate, place one lasagna sheet, top with a layer of grilled veggies sprinkled with garlic and seasoned with salt, vinegar and evoo.
Top with another lasagna sheet and then a bit of cheese. Repeat the layers again until there's no ingredients left.
Garnish with basil and drizzle with evoo.

Guest post: Tarte Tatin de Tomate Cherry | Cherry Tomato Tatin Tart

A Ginja é especial. Serena, delicada, divertida, amiga. Quando entrei pela primeira vez no seu Ananás e Hortelã, ainda nos inícios, fiquei rendida à simplicidade e bom gosto das receitas. Fui ficando cada vez mais feliz à medida que as fotografias foram fazendo juz à comida e à pessoa. E ainda mais feliz por ver o seu trabalho apreciado e reconhecido.
Hoje traz-nos uma sugestão bem mediterrânica, acompanhada pelas suas fotos sempre inspiradoras.

Gosto de morar no campo e ter uma horta. Cada vez mais. É onde me sinto em casa, onde me sinto mais eu, onde respiro e caminho ao sabor das estações. Gosto de estar aqui, às vezes longe de tudo. Mas sempre bem rodeada. Por aqui há ajuda e partilha entre vizinhos. Podemos contar uns com os outros, um verdadeiro apoio e amizade.
E das nossas hortas há boas partilhas. De nossa casa saem ovos caseiros e limões, e os marmelos para a época das marmeladas. Do quintal da L. chegam as nabiças para a sopa, do pomar da T. chegam uvas docinhas para a sobremesa e da casa da S. e da C. chegam ainda morangos e tomates cherry. Mesmo muitos! Que alegria em tons de vermelho.
Quando a Ondina me convidou para um guest post não tive dúvidas. Quis com ela partilhar um pouco disto. Destas histórias e sabores. Sei que se ela morasse mais perto ia adorar que eu lhe batesse à porta e oferecesse um saco de fruta do pomar ou uma destas tartes acabadinhas de fazer.


Tarte Tatin de Tomate Cherry

Ingredientes:
1 placa de massa folhada
3 chávenas de tomates cherry
Azeite q.b.
Sal q.b.
Manjericão fresco q.b.

Preparação:
Pré-aquecer o forno a 200ºC.
Poderá optar por fazer uma tarte grande ou 3 mini tartes.
Colocar os tomates cherry numa frigideira grande (cabo da frigideira deve poder ir ao forno) ou em pequenas tarteiras redondas (se fizer as mini tartes), com um fio de azeite e um pouco de sal por cima. Arranjar os tomates de forma a que fiquem bem juntinhos e a encher o fundo das tarteiras.
Em seguida, cortar a massa folhada com o mesmo diâmetro da frigideira grande ou das mini tarteiras e colocar sobre os tomates, aconchegando bem a massa nas laterais.
Levar ao forno por uns 20-25 minutos ou até a massa folhar. Retirar do forno e deixar arrefecer um pouco. Virar ligeiramente sobre o lava-loiças, com cuidado, para escorrer o excesso de líquido que os tomates largam.
Colocar um prato sobre a tarte ou mini tartes e inverter, com cuidado. Servir com folhas de manjericão e um fio de azeite.

Ginja is a special person. Peaceful, delicate, funny and friendly. When I first stumbled in her Ananás e Hortelã, right in the beginning, I was rendered by the simplicity and good taste in the recipes. I became happier as the photos started making justice to the food and the person. And even happier to see her work apreciated and recognized by many others.
Today she brings us a very mediterranean meal, well illustrated by her always inspiring photos.

I like living in the counry side and having a garden. More and more. It's where I feel at home, here I feel I'm myself, where I breathe and walk to the taste of seasons. I like being her, away from everything. Mas always well surrounded. Here we have help and share amoinsgt neighbours. We can count on each other, a true support and friendship.
And from all gardens there's plenty to share. From ours there are eggs and lemons, quince for the marmelade season. From L's we have turnips for the soup, from T's we have the sweetest grapes for dessert and from S's and C's there are strawberries and cherry tomatoes. A lot of them! Joy painted in red.
When Ondina invited me for a guest post I had no second thoughts. I wanted to share with her a bit of all this. The stories and flavors. I know that if she lived closer she would love having me knocking on her door offering a bag of fruit or one of this pies right out of the oven.


Cherry Tomato Tatin Tart

Ingredients:
1 roll puff pastry
3 cups cherry tomatoes
Evoo
Salt
Fresh basil

Preparation:
Pre-heat the oven at 200ºC.
You can make a large pie or 3 mini pies.
Place all the tomatoes in a frying pan (that can go to the oven) or in small round pie dishes (if you are making the mini pies) with a drizzle of evoo and sprinkled with salt. Arranje the tomatoes in order to get them close together, completely feeling the bottom of the pie dishes or the frying pan.
Cut the party with the same size of the frying pan or pie dishes and cover the tomatoes with it, tucking the pastry on the sides.
Place in the oven for about 20-25 mins or until the pastry puffs. Remove from the oven and leave to cool down a bit. Slightly turn the pie(s) over the sink to drain the excess of liquid from the tomatoes. 
Place the pie(s) on a dish to remove from the frying pan or from the pie dishes. Server with the tomatoes side up, drizzled with a bit of evoo and garnished with basil leaves.

Guest Post: Pizza de rúcula e tomate seco | Arugula and dry tomato pizza

Foi dos primeiros blogues que comecei a seguir. As cores vívidas e as imagens nítidas prendiam o olhar. Acompanhei, virtualmente, a sua mudança e adaptação a um novo país e fico contente por saber que está bem, feliz, integrada. A Helena, além de ser uma simpatia, traz paz e serenidade ao meu olhar com os seus Sabores de Canela, de onde vem uma das receitas mais apreciada cá em casa: massa fresca de tomate
Obrigada Helena, por partilhares connosco o teu trabalho tão harmonioso e por trazeres estas fatias do Mediterrâneo, perfeitas para partilhar entre ambos os lados do oceano Atlântico :)

Pizza de rúcula e tomate seco

(ingredientes para 1 pizza de 30cm)
150g de farinha sem fermento
50g de farinha de centeio
2 c. sopa de azeite
100ml de água
1/2 cubo de fermento fresco
1/2 c. sopa de sal

Guarnição
8 esferas pequenas de mozzarella fresca
10 tomates secos 
2 c. sopa de molho de tomate e ervas*
16 azeitonas pretas sem caroço
Folhas de rúcula

Preparação

Na taça batedeira dissolva o fermento em água, misture o sal e o azeite e junte a farinha. Bata com o gancho de amassar na velocidade mínima durante 10 minutos. Tape e deixe levedar.
Quando duplicar o volume estenda a massa numa superfície enfarinhada até obter um disco de 30 cm.
Ligue o forno temperatura 220º C.
Pincele com o molho base de tomate e ervas e leve ao forno por poucos minutos, de preferência numa pedra refractária, sem deixar a massa dourar. Retire, rasgue a mozzarella e espalhe por cima, rasgue o tomate seco e distribua pela pizza e por último as azeitonas.
Leve ao forno e quando a massa estiver cozida, retire e regue a pizza com um fio de azeite. Corte as fatias, coloque rucula por cima e sirva.

*molho de tomate e ervas- triture um tomate com oregãos ou manjericão.

I virtually followed her moving and adaptation to a new country and feell happy to see her well, happy, integrated. Helena, apart from being very nice as a person, brings peace and serenity to my eyes with her Sabores de Canela (Cinnamon Flavors), where we found one of our favorite recipes: tomato fresh pasta.
Thank you so much Helena, for sharing with us your harmonious work and for bringing these Mediterranean slices, perfect for sharing between both sides of the Atlantic ocean :)

Arugula and dry tomato pizza

(ingredients for a 30cm pizza)
150g white flour
50g rye flour
2 tbsp evoo
100ml water
1/2 cube fresh yeast
1/2 tbsp salt

Guarnishing
8 small balls fresh mozzarella
10 dry tomatoes 
2 tbsp tomato and herbs sauce*
16 black olives, pitted
Arugula leaves

Preparation

In the food processor's bowl dissolve the yeats in water, mix the salt and evoo, add the flour. With the dough hook knead on a minimum speed for 10 mins. Cover and leave rising.
Once the dough has doubled in size, roll it on a floured surface until you have a 30cm disk.
Turn on the oven at 220º C.
Swab the dough base with the tomato and herb sauce and leave in the oven for a few mins, preferably in a refractary stone, without it being golden. Remove from the oven, tear the mozarrela balls and the dry tomatoes and spread on top of the pizza, together with the olives.
Return to the oven and remove once the pizza is cooked. Drizzle with evoo, slice, cover with the arugula and serve.

*tomato and herb sauce - mash a tomato together with oregano or basil.

Guest Post: Salada {muito simples} de grão de bico | {very simple} Chickpea salad

Desafiamos alguns dos bloggers que seguimos atentamente, e cujo trabalho admiramos, para que nos trouxessem o Mediterrâneo à mesa. Foi com grande alegria que vimos os convites aceites com tanta simpatia e generosidade. E, ao longo dos próximos meses, vamos partilhando convosco as iguarias que saem das cozinhas dos nossos convidados :)

O primeiro guest post vem pelas mãos da Ana Novais, a menina simpática por detrás do Petiscos&Miminhos. As suas receitas são uma fonte de inspiração, pela simplicidade e bom gosto.

Salada {muito simples} de grão-de-bico
(6 a 8 doses)

400g grão-de-bico cozido
2 tomates
1 pepino
Coentros frescos a gosto
50ml azeite extra-virgem
1 c.sopa vinagre balsâmico
2 dentes de alho, picados
Sal e pimenta

Laminar os tomates e pepino, picar grosseiramente os coentros. Misturar muito bem com o grão-de-bico.
Numa taça à parte colocar o azeite, o vinagre balsâmico e os dentes de alho, temperar com sal e pimenta e mexer tudo com um garfo.
Regar a salada com o molho de azeite e servir.

{very simple} Chickpea salad
(serves 6-8 people)

400g chickpeas, boiled
2 tomatos
1 cucumber
Fresh coriander
50ml evoo
1 tbsp balsamic vinegar
2 garlic cloves, minced
Salt and pepper

Finely slice the tomatos and cucumber and coarsley chop the coriander. Mix well with the chickpeas.
In a bowl aside, place the evoo, balsamic vinegar and garlic, seasoned with salt and pepper. Mix with a fork.
Sprinkle the salad with the sauce and serve.
