Arroz doce de pequeno-almoço | Breakfast Rice Pudding

Quem me conhece sabe que a minha refeição favorita é o pequeno-almoço. Desde salgados a doces vale de tudo um pouco e, à semelhança das outras refeições, também esta é diferente todos os dias. 
A sugestão que trago hoje é das minhas favoritas e é de facto uma tela em branco que permite as variações que quisermos. Foi preparada para a Mercearia Bio que, gentilmente, me convidou a criar uma receita com produtos da sua loja on-line. Não deixem de experimentar e adicionar os ingredientes que mais gostarem.

Arroz doce de pequeno-almoço

1L leite magro
150g arroz carolino biológico
1 limão (apenas a casca amarela)
2 paus canela
Mel a gosto
Toppings sugeridos: nectarina, coco ralado, pistácios picados, pólen de abelha

Colocar o leite, o arroz, a casca do limão e a canela num tacho e levar ao lume sem deixar ferver durante 50mins, mexendo frequentemente. Findo este tempo, retirar o tacho do lume e acrescentar mel a gosto, mexendo bem. Deixar arrefecer e servir com os toppings preferidos.

Those who know me are well aware that breakfast is my favorite meal. From sweet to savoury, anything goes and, like for others meals, this one is different every day. The recipe I share today is one of my favourites and it's a white canvas that allows us to use our imagination. It was prepared for Mercearia Bio, following their invitation to create a recipe using the products from their on-line shop. So, give it a go at the recipe using your favorite toppings.

Breakfast Rice Pudding

1L skimmed milk
150g of bio ground grain starchy rice (arborio-like)
1 lemon (zest only)
2 cinnamon sticks
Honey to taste
Suggested toppings: nectarine, ground coconut, chopped pistachios, bee pollen

Place the milk, rice, lemon zest and cinnamon sticks in a pot and bring to a simmer without boiling for 50mins, constantly stirring. At the end of that time, remove the pot from the stove and add in the honey, stirring to incorporate. Let cool down and serve with your favourite toppings.

Água aromatizada | Flavoured water

Se a vida nos dá limões (e/ou qualquer outra fruta!) fazemos uma água aromatizada :)
Fresquinha, saborosa, perfeita para matar a sede em qualquer dia. Somos super fãs! E vocês, já experimentaram?

Água aromatizada

1 limão, cortado em fatias
1 punhado de frutos vermelhos congelados
Folhas de menta
Água

Mais simples impossível: misturar todos os ingredientes num jarro e levar ao frigorífico durante pelo menos 2h antes de servir.
Para levar: colocar numa garrafa de vidro :)

Flavoured water

1 lemon
1 handful frozen berries
Mint leaves
Water

Dead easy: mix all ingredients in a jar and leave in the fridge for a couple of hours before serving.
To go: place in a glass bottle :)

Arroz Doce | Rice pudding

Este mês estamos de parabéns, o blogue faz 3 anos. Queríamos festejar com grande pompa e circunstância mas a verdade é que a falta de tempo estacionou por aqui e parece não ir mais embora. Ainda assim vamos ter direito a alguns festejos. Começamos por um arroz doce pouco doce, com travo a limão e polvilhado de canela. E quase que cheira a Natal...


Arroz doce
(adaptado do livro ABC da Bimby)

1000g leite magro
150g de arroz carolino
4 tiras de casca de limão (apenas a parte amarela)
1 pau de canela
1 pitada de sal
100g açúcar amarelo
4 gemas de ovo
Canela para polvilhar

Colocar no copo o leite, o arroz, a casca de limão, o pau de canela e o sal e programar 15min/90°C/função inversa/velocidade-colher.
Retirar a tampa e envolver com a espátula.
Programar 25min/90°C/função inversa/velocidade-colher.
Adicionar o açúcar, as gemas previamente desfeitas num pouco de arroz doce e envolver com a ajuda da espátula.
Programar 10min/90°C/função inversa/velocidade 1,5.
Deitar num recipiente grande ou em taças pequenas e deixar arrefecer.
Quando estiver frio polvilhar com canela em pó.


November is a celebration month for the blog is 3 years old. We wanted to celebrate in big style but the lack of time seems to have parked around here for good. Still, we are entitled to some nice things. And we start off with a lovely rice pudding (or sweet sticky rice, as I like to call it), with hints of lemon and sprinkled with cinnamon. It almost smells like Xmas...


Rice Pudding
(adapted from the Thermomix Basic Book)

1000g skimmed milk
150g carolino rice
4 stripes of lemon zest (the yellow only)
1 cinnamon stick
1 pinch of salt
100g light brown sugar
4 egg yolks
Cinnamon powder for sprinkling

Place the milk, rice, lemon zest, cinnamon stick and pinch of salt inside the mixing bowl and set for 15min/90°C/stirring/lowest speed.
Remove the lid and mix with the spatula.
Set for 25min/90°C/stirring/lowest speed.
Add the sugar, the yolks previously mixed with 4 tbsp of the rice mix and stir with the spatula.
Set for 10min/90°C/stirring/vel. 1,5.
Place the rice pudding in a large bowl or distribute by small cups and leave to cool.
When cold, sprinkled with cinnamon powder to your liking.

Bolo de azeite e espinafres | Olive oil and spinach cake

O verde que nos inspira e que se respira. Subidas à serra admirando os prados verdejantes que se entendem no vale. Repastos ao ar livre, numa manta aos quadrados e cesta de verga recheada com os petiscos de que mais gostamos. Os dias deviam ser todos assim!


Bolo de azeite e espinafres

175g espinafres
180ml de azeite virgem extra
2 c.sopa sumo de limão
1 c.chá extracto baunilha
3 ovos
350g açúcar amarelo
250g farinha
225g farinha integral
3 c.chá fermento em pó

Num processador de alimentos, colocar os espinafres, azeite, extracto e sumo de limão, misturado em puré. Adicionar os ovos e o açúcar, continuando a processar. Numa taça, misturar as farinhas com o fermento. Fazer uma cova nos ingredientes secos e deitar o puré de espinafres, misturando até obter um preparado homogéneo. Deitar numa forma de bolo inglês untada e levar ao forno pré-aquecido a 180ºC durante 30mins. Fazer o teste do palito para ver se está cozido, retirar do forno e deixar arrefecer antes de servir.

Olive oil and spinach cake

175 g spinach
180ml evoo
2 tbsp lemon juice
1 tsp vanilla extract
3 eggs
350g brown sugar
250g flour
225g whole wheat flour
3 tsp baking powder

Add spinach, evoo, vanilla and lemon juice to food processor and blend to a puree. Add eggs and sugar. In a separate bowl whisk together flours and baking powder. Make a well in the dry ingredients and add the spinach mixture. Fold together until uniform. Pour into greased loaf pan.
Bake for about 30mins in a preheated oven to 180ºC. Check with a skewer to see if fully cooked.
Allow to cool before slicing.

Iogurte de caju | Cashewgurt

O ano começou mas há hábitos de sempre que se mantém. Um bom pequeno-almoço é a melhor forma de iniciar o dia. E se, durante a semana, nem sempre há tempo para preparar esta refeição a preceito, ao fim de semana ele não nos escapa. E há sempre um pouco de tudo. E se por vezes revisitamos os clássicos, noutras perdemo-nos de amores pelas novidades que vamos descobrindo...


Iogurte de caju
(receita original de Green Kitchen Stories)

1+1/2 chávenas de cajus, demolhados overnight (8-12h)
2 c.sopa sumo de limão
10 c.sopa água
2 tâmaras demolhadas, descaroçadas
1 pitada de sal
1/2 c.chá psilio em pó + 1/2 chávena água

Misturar o psilio com a água, mexendo até engrossar. Colocar os cajus demolhados num processador de alimentos juntamente com o sumo de limão, água, tâmaras e sal e processar até obter uma pasta macia. Colocar a pasta numa taça e misturar bem com 2 c.sopa de gel de psilio. Dividir por duas taças e levar ao frigorífico por 10mins. Servir com compota de physalis e pólen de abelha.

And if, during the week, we hardly have time to prepare this meal as we love, during the weekend things are different. There's always a little bit of everything. And, if some days we return to the old faves, some other days we fall in love by new discoveries...


Cashewgurt
(original recipe by the Green Kitchen Stories)

1+1/2 cups raw cashew nuts, soaked overnight (8-12 hours)
2 tbsp lemon juice
10 tbsp water
2 soaked dried dates, pitted
1 pinch sea salt
1/2 tsp psyllium husks powder + 1/2 cup water

Combine psyllium husks powder and water in a small bowl and stir until it thickens. Place soaked cashew nuts in a high speed blender (or in a bowl and use an immersion hand blender). Add lemon juice, water, dates and sea salt and blend until completely smooth. Pour into a bowl and add 2 tbsp psyllium gel and stir to combine. Scoop into two serving bowls or glasses, chill in the fridge for 10 minutes. Serve with physalis jam and bee polen.

Tapioca com limão e canela | Tapioca with lemon and cinnamon

Entre as Festas há um regresso à normalidade que é muito aguardado. Enquanto nas mesas ainda bailam iguarias natalícias, na mente já fervilham ideias para a passagem de ano. Mas pelo meio é imperativo manter alguma sanidade mental e impedir que a balança reclame do peso pesado que nela assentou arraiais. 


Tapioca com limão e canela

50g de tapioca
250ml de leite magro
Acúçar baunilhado a gosto
1 pequeno pau de canela
1 casquinha de limão

Deixar a tapioca de molho em bastante água pelo menos durante 2h (neste caso ficou durante a noite). Num tachinho, colocar a tapioca hidratada (e escorrida) com os restantes ingredientes e levar ao lume e cozer durante 5mins após levantar fervura (pode ser necessário adicionar mais um pouco de leite para ajustar a consistência). Servir polvilhada com canela.


In between the Holidays there's a return to normality that is much awaited. While the tables are still filled with Xmas delicacies our minds have started wondering about New Year's Eve. Therefore, it is imperative to keep our mental sanity and stop the scale from complaining about the heavy weight that climbed on top of it.


Tapioca with lemon and cinnamon

50g tapioca
250ml skimmed milk
Vanilla sugar to taste
1 small cinnamon stick
1 small stripe of lemon zest

Hidrate the tapioca with plenty water for at least 2h (mine stayed overnight). In a small saucepan, place the drained tapioca with the rest of the ingredients and cook for 5 mins after started boiling (it might be necessary to add more milk, depending on how you like your tapioca's consistency). Serve sprinkled with cinnamon powder.

Rabanadas grelhadas | Grilled French Toasts

O Natal está mesmo, mesmo ao virar da esquina. Muito em breve estaremos juntos, sentados em volta de uma mesa repleta de iguarias. Tradições de família que se perpetuam ou novas que se vão criando. Estaremos aconchegados, com abraços e sorrisos, em casa quentinhas onde há de tudo um pouco. Pudessem todos ter sorte igual...
As festividades convidam aos exageros gastronómicos e se uns são mais regrados, outros nem por isso. Para quem procura algumas alternativas mais saudáveis sem ter que abdicar de muita coisa, aqui fica uma receita de rabanadas grelhadas. Sim, grelhadas. O sabor, esse, está todo lá!


Rabanadas grelhadas

500ml leite magro (ou de soja, amêndoa, arroz, etc.)
1/2 limão pequeno biológico (raspa)
2 paus de canela
Mel a gosto (ou geleia de agave, ou açúcar amarelo/mascavado)
2 ovos batidos
8 fatias de pão (seco) de mistura, centeio de Padronelo, etc.
Mistura de açúcar amarelo e canela para polvilhar

3 laranjas (sumo)
Vinho do Porto (mesma quantidade do sumo de laranja)
2 estrelas de anis
1 pau de canela
Açúcar amarelo ou mascavado baunilhado (ou mel, geleia de agave, etc.)

Ferver o leite com a raspa de limão, paus de canela e o mel. Reservar. Bater os ovos e partir as fatias de pão. Entretanto, aquecer uma frigideira anti-aderente apenas untada com azeite. Mergulhar o pão no leite até estar molengão. Passar pelo ovo e colocar na frigideira até dourar de ambos os lados. Polvilhar todas as fatias com a mistura de açúcar e canela à medida que vão sendo colocadas numa travessa ou numa taça.

Para quem gostar, servir as rabanadas com calda: levar a ferver o sumo das laranjas com o vinho do Porto, anis, canela e açúcar amarelo baunilhado. Regar as rabanadas com a calda ou reservar numa molheira, para que cada pessoa possa optar entre rabanadas secas ou molhadas.


Xmas is just around the corner. Soon we'll be together, gathering around a table with plenty delicacies. Family traditions that pass from generation to generation or new ones that start to rise. We will tucked in, with hugs and smiles, in a warm house where there's a bit of everything. I wish everyone could just say the same thing...
The holidays are an invitation for gluttony and if some of us are a bit more controlled, others may not be so. For those who seek a healthier alternative without giving up on much, here's a recipe for grilled French Toasts (Rabanadas, in Portuguese). Yes, grilled. But the flavor is all there. 


Grilled French Toasts

500ml skimmed milk (or soya, almond, rice, etc.)
1/2 small bio lemon (zest)
2 cinnamon stick
Honey to taste (agave syrup, or brown/moscovado sugar)
2 eggs, beaten
8 thick whole bread (at least two 2 days old) slices
Brown sugar and cinnamon mix to sprinkle

3 oranges (juice)
Port wine (same amount as orange juice)
2 aniseed stars
1 cinnamon stick
Brown or moscovado vanilla sugar (or honey, agave syrup, etc.)

Boil the milk with lemon zest, cinnamon and honey. Keep aside. Beat the eggs and slice the bread. Meanwhile, heat a anti-adherent frying pan just greased with olive oil. Dip the bread in the milk until tender. Pass each slice by the beaten eggs and grill in the pan until golden on both sides. Sprinkle all slices with the sugar and cinnamon mix and place them in a large dish or large bowl.

If you like, serve the French Toasts with a syrup: boil the orange juice with Port, aniseed, cinnamon and vanilla sugar. Drizzle the French Toasts with the syrup or keep the syrup aside in a gravy boat so each person can choose between dry or moist French Toasts.

Guest Post: Truta assada com chips e molho de iogurte

O guest post de hoje traz-nos o mar. Esse mar tão nosso, que nos torna tão únicos. Esse mar que nos inspira, alimenta, diverte. 

Do gourmets {amadores} veio a simplicidade, a sazonalidade, a boa qualidade dos ingredientes. E quando assim é, a refeição quase que se faz por si só. 

É com muito prazer que hoje partilhamos a mesa, ainda que virtualmente, com a Suzana, que só é uma das nossas inspirações mais antigas. As suas fotos convidam, ou melhor, convidam-se elas próprias a entrar na nossa casa e na nossa vida, quando um par de mãos nos serve uma sobremesa, uma salada, um chili con carne. É como se a família gourmets {amadores} se sentasse à mesa connosco, numa partilha íntima de saberes, sabores e boa conversa. 

Sintam-se convidados para esta mesa!

Cozinhar em cozinha alheia é sempre uma aventura. Hoje trago o almoço quase pronto para uma tarde de gargalhadas e dois dedos de conversa. Liga-se o forno e o almoço está pronto sem necessidade de muita atenção. É que eu e a Ondina nunca nos encontrámos pessoalmente mas na minha mente é assim que vai ser.


Truta assada com chips e molho de iogurte

serve 2

1 truta com cerca de 750 g, arranjada
1 limão pequeno, em fatias finas
2 colheres (sopa) azeite
6 batatas médias, fatiadas na horizontal (usei metade batata roxa e metade batata vitelotte)
4 colheres (sopa) iogurte grego
1 colher (chá) folhinhas de tomilho-limão
1 colher (chá) sumo de limão
sal e pimenta preta moída na altura

Pré-aqueça o forno a 220ºC. Seque as rodelas de batata num pano de cozinha limpo. Disponha-as numa camada única e com o mínimo de sobreposições num tabuleiro de forno. Pincele-as com 1 colher sopa de azeite. Tempere com sal e pimenta preta moída na altura. Leve ao forno por 10-12 minutos ou até estarem douradas, virando-as a meio.

Limpe a truta e faça 3 cortes de cada lado. Coloque meia rodela de limão em cada corte e as restantes na barriga. Coloque num tabuleiro e tempere com sal. Regue com a restante colher de azeite e adicione 2 colheres de sopa de água no fundo para o tabuleiro não queimar. Leve ao forno 8-10 minutos ou até o peixe estar cozinhado. 

Faça o molho, misturando o iogurte, o tomilho, o sumo de limão e sal e pimenta. Sirva com uma salada de rúcula ou agrião.

From gourmets {amadores} came the simplicity, seasonality, good fresh ingredients. And when that happens the meals almost makes itself.

It is with immense pleasure that today we share our table, even though virtually, with Suzana, who is one of our first inspirations. Her photos invite themselves into our home and into our life, when a pair of hands serves us a dessert, a salad, chili con carne. It is as if the gourmets {amadores}'s family is seating at the table with us, in a intimate share of knowledge, flavors and good conversation.

Cooking on someone else's kitchen is always an adventure. Today I bring an almost ready lunch to an afternoon of laughter and a chat. The oven is turned on and food is ready without the need for a lot of attention. It happens that Ondina and I have never met in person but, in my mind, this is how I see it.

Baked trout with chips e yoghurt sauce

serves 2

1 trout with circa 750 g, manured
1 small lemon, finely sliced
2 tbsp evoo
6 medium potatoes, horizontally sliced (used half purple and half vitelotte)
4 tbsp greek yoghurt
1 tsp lemon-thyme leaves
1 tsp lemon juice
Salt and black pepper freshly ground

Pre-heat the oven to 220º C. Dry the potato slices in a clean kitchen cloth. Display them, in a single layer and with minimal overlaps, in a baking tray. Swab them with a tbsp of evoo. Season with salt and black pepper freshly ground. Put in the oven for 10-12 mins or until golden, flipping them half time through.

Clean the trout and make 3 cuts in each side. Place a lemon slice in each cut and the remaining in the trout's belly. Place in a baking tray and season with salt. Drizzle with the remaing evoo and add 2 tbsp of water to the bottom of the tray, to avoid burning. Leave in the oven for 8-10 mins or until the fish is cooked.

For the sauce, mix tee yoghurt, the thyme, lemon juice and salt and pepper. Serve with an arugula or watercress salad.

Bolo de azeite, limão e manjericão | Lemon, basil and olive oil cake

Domingo é o Baking Day cá em casa. Por coincidência, o World Baking Day de 2013 celebra-se hoje, domingo. E nós, por coincidência (ou talvez não) juntamo-nos a tantos outros por esse mundo fora. Do forno saíram um Life-changing loaf of bread, uma quiche de delícias do mar e este bolo de azeite, limão e manjericão. O bolo surgiu da nossa maior inspiração: a cozinha mediterrânica. E após ter provado uns biscoitos gregos de limão e manjericão que ficaram aquém das minhas expectativas, pensei "consigo fazer melhor". Assim foi. À vontade de querer um bolo à base de azeite mas que tivesse iogurte grego e fosse aromatizado com o limão e o manjericão, lá fui estudando receitas até chegar a uma que fosse só minha. E este sim, é um grande desafio para mim neste WBD: os bolos são aquilo em que normalmente não arrisco e sigo a receita que tenho à frente sem grandes alterações. Mas quem arrisca, petisca :)


Bolo de azeite, limão e manjericão

250g iogurte grego
30g de azeite frutado
180g açúcar amarelo
1 limão (raspa+sumo)
1 punhado de folhas de manjericão
2 ovos
275g de farinha
1+1/2 c.chá de fermento em pó
1/2 c.chá de sal fino
Sementes de sésamo (brancas e pretas)

Numa taça média misturar o iogurte, azeite, açúcar, raspa+sumo de limão, manjericão rasgado e os ovos. Adicionar a farinha peneirada com o fermento e o sal. Misturar apenas até a massa estar homogénea. Colocar numa forma de mola untada com azeite e polvilhar com a mistura de sementes de sésamo. Levar ao forno pré-aquecido a 180º C durante cerca de 45mins (teste do palito).


Sunday is our baking day. Coincidently, this year's World Baking Day is today: sunday. Coincidently, or not, we join many others across this world. From our oven came out a Life-changing loaf of bread, a quiche and this Lemon, basil and olive oil cake. The cake came from our biggest inspiration: mediterranean cuisine. After tasting some lemon and basil greek biscuit that turned out to be short in flavour I thought "I can do better that this". Driven by the desire of eating a cake olive oil-based with greek yoghurt, lemon and basil I decided to study a few recipes to come out with one entirely mine. And this is my challenge for the WBD: I don't normally take a chance with cakes and always keep to the original recipe with only minor changes. But not this time :)


Lemon, basil and olive-oil cake

250g greek yoghurt
30g fruity olive oil
180g light brown sugar
1 lemon (zest+juice)
1 handful basil leaves
2 eggs
275g fllour
1+1/2 tsp baking powder
1/2 tsp table salt
Sesame seebs (black and white)

In a medium size bowl mix the yoghurt with the olive oil, sugar, lemon zest and juice, tear basil and the eggs. Add the flour sifted with baking powder and salt. Mix only until the batter is smooth. Place in a pre-greased spring-form baaking tin and sprinkle with the sesame seeds. Leave in the pre-heated oven at 180º C for 45mins (skewer test).

Panquecas de ricotta e limão | Ricotta and lemon pancakes

Escancarar as portadas de par em par e deixar o sol invadir todas as divisões. Ouvir o chilrear dos pássaros como sinfonia matinal para despertar os sentidos. Amanhã é dia de acordar com tempo e saborear cada momento de forma calma e relaxadamente. Amanhã o pequeno almoço tem mais sabor e podemos prepará-lo a dois. E sabem o que é melhor do que tudo? É que o amanhã está mesmo quase, quase a chegar!


Panquecas de ricotta e limão

250g de ricotta
500ml de leite fresco meio gordo
2 ovos grandes
150g de farinha
150g de farinha integral
1 limão (raspa)
1+1/2 c.chá de fermento
3 c.sopa de açúcar baunilhado

Numa taça misturar o ricotta, o leite, e as gemas dos ovos. Juntar a farinha e o fermento, mexendo bem. Numa tacinha bater as gemas até ficarem brancas e com espuma. Envolver as gemas na mistura anterior e adicionar a raspa do limão e o açúcar. Cozinhar as panquecas numa frigideira anti-aderente.

Nota: estas panquecas são perfeitas com qualquer cobertura mas as nossas versões preferidas do momento são nutella e manteiga de amendoim para doce e queijo frescos, rabanetes, sal, pimenta e coentros para salgado.

Ricotta and lemon pancakes

250g ricotta
500ml of semi-skimmed milk
2 large eggs
150g flour
150g whole-flour
1 lemon zest
1+1/2 tsp baking powder
3 tbsp vanilla sugar

In a large bowl mix the ricotta, milk and egg yolks. Add the flour and baking powder, mixing to a batter. In a small bowl beat the egg whites until white and foamy. Fold the eggs whites in the batter and add the lemon zest and sugar. Cook in a small pan.

Note: these pancakes are perfect for any topping but our favourites for now are nutella and PB for the sweet version and cottage cheese, raddishes, salt, pepper and coriander for the savoury version.

Salmão Saltimbocca e a simplicidade da vida

Porque às vezes não podia ser mais simples. Um raio de sol que despontou por detrás de uma nuvem carregada de chuva. Uma menina que trauteia uma música a caminho da escola. Um cão minúsculo que espreita de dentro da carteira de uma velhota. Um anúncio de um concerto. Uma pinga de um beiral caída bem no meio da testa da pessoa que passa por nós. Um livro acabado de comprar. O cheiro do pão quando sai do forno. Um jantar simples. 
São tantas as pequenas coisas que nos fazem feliz... são mais do que muitos os motivos para termos um sorriso escancarado na cara e agradecermos tudo aquilo de bom que a vida nos trás. Sempre.
Salmão Saltimbocca
(inspirado em "Salmon saltimbocca with gremolata potatoes and crispy sage leaves" de Lorraine Pascale)

2 lombos de salmão
6 folhas de salva
Sal e pimenta moída na hora
8 fatias de bacon
Becel líquida
2 quartos de limão

Secar os lombos salmão. Numa tábua, alinhar 4 fatias de salmão parcialmente sobrepostas e fazer o mesmo com as outras 4 fatias. Colocar os lombos de salmão atravessados sobre uma das pontas das fatias de bacon e dispor 3 folhas de salva ao comprimentos de cada lombo. Temperar com sal e pimenta, enrolar o salmão juntamente com o bacon e colocar numa frigideira previamente aquecida com margarina Becel líquida. Deixar cozinhar em lume médio durante cerca de 3 mins de cada um dos 4 lados. Servir regado com sumo de limão e acompanhado por esparregado de espinafres.
Sometimes it couldn't be more simple. A sunshine ray that pops from behind a dark cloud. A little girl singing a song on her way to school. A tiny dog peeking out of an old lady's bag. A concert outdoor advert. A drop of rain that felt right in the middle of the forehead of someone passing by. A book just bought. The smell of bread coming out of the oven. A simple dinner.
There are so many the little things that make us happy... more than many reasons to have a huge grin glued to the face and be thankful for all the good things that life brings. Always.
Salmon Saltimbocca
(inspired by "Salmon saltimbocca with gremolata potatoes and crispy sage leaves" from Lorraine Pascale)

2 salmon loins
6 sage leaves
Salt and pepper freshly ground
8 bacon slices
Liquid margarine
2 lemon quarters


Lay 4 slices of bacon on a board, overlapping lengthways. Sit a piece of salmon near one short edge. Season with salt and pepper and arrange three sage leaves along the length of the fish. Roll the bacon around the salmon until completely wrapped. Repeat with the rest of the ingredients. Meanwhile, put a large frying pan on a high heat and add a little liquid margarine. Once hot, add the salmon, sage-leaf side down, turn the heat to medium and leave them to cook for about 3 minutes on each of the 4 sides. Serve drizzled with lemon and sided with spinach mess.
