Arroz doce de pequeno-almoço | Breakfast Rice Pudding

Breakfast Rice Pudding - iPhone 6 @ http://instagram.com/ondina_maria/

(scroll down for English)

Quem me conhece sabe que a minha refeição favorita é o pequeno-almoço.

1L leite magro
150g arroz carolino biológico
1 limão (apenas a casca amarela)
2 paus canela
Mel a gosto

Those who know me are well aware that breakfast is my favorite meal. From sweet to savoury, anything goes and, like for others meals, this one is different every day. The recipe I share today is one of my favourites and it's a white canvas that allows us to use our imagination. It was prepared for Mercearia Bio, following their invitation to create a recipe using the products from their on-line shop. So, give it a go at the recipe using your favorite toppings.

Breakfast Rice Pudding

1L skimmed milk
150g of bio ground grain starchy rice (arborio-like)
1 lemon (zest only)
2 cinnamon sticks
Honey to taste
Suggested toppings: nectarine, ground coconut, chopped pistachios, bee pollen

Place the milk, rice, lemon zest and cinnamon sticks in a pot and bring to a simmer without boiling for 50mins, constantly stirring. At the end of that time, remove the pot from the stove and add in the honey, stirring to incorporate. Let cool down and serve with your favourite toppings.

As you probably might have noticed, we have been quite silent. During this pre-holiday weeks time seems to simply disappear into a black hole and we accomplish very little apart from our jobs. But we didn't want to leave for our two-week holiday break without sharing with you something perfect for these scorching days. And what a treat we have here!!!! Inspired by the super talented couple of Green Kitchen Stories, we got carried away by one of their latest creations and we achieved this dense mousse with plenty flavour. Ah, and packed with good stuff! :)

400g black beans, boiled
10 soft dates, pitted
2 tbsp coconut oil
180ml strong coffee (3 expressos)

Pistachios, finelly chopped

Place the chocolate in the Thermomix bowl and grate for 10s on speed 8. With the spatula, clean the bowl walls. Add the milk and gently melt for 2mins at 50º C on speed 3. Add in the rest of the ingredients and mix very well for 20s on speed 7. Pour the mousse into cups and leave in the fridge for at least 2h. Serve sprinkled with pistachios and top with a cherry.

(scroll down for English)

My latest addiction is a honey and cinnamon paste. It could be worse. In fact it could. But at least it's not refined sugar! But this paste is delicious and I have been having if mainly in my whole bread with walnut cheese as well as in my porridge. If pistachios are around, even better :)

Porridge

200g skimmed milk
40g oats
Honey an cinnamon paste (mix both ingredients to your liking)
Chopped pistachios

Place the milk and oats in the Thermomix mixing bowl and cook for 10min / 90º C / reverse / speed 2.5. Pour into a bowl, drizzle with the honey cinnamon paste and sprinkle with the pistachios before serving.

Conchiglie verdes | Green conchiglie

(scroll down for English)

Sábado. Almoço. Duas bocas famintas.

Saturday. Lunchtime. Two hungry people. In the fridge a generous amount of spinach and in the mind Mª João's recipe. Off we go to the kitchen and, suddenly, a delicious smell spreads around the house.
Saturday. After lunch. Two very satisfied tummies and two very happy people.

1 tsp salt
Freshly ground pepper
80g pistachios
100g Azores Island cheese
120g evoo
200g Emmental cheese, grated
500g Conchiglie tricolor

In a food processor place 1/3 spinach, garlic, salt, pepper, pistachios, cheese and 1/3 evoo. Process well until you have a smooth misture. Add another spinach and evoo 1/3 and process again. Repeat with the remaining spinach and evoo, taste and, if necessary, adjust the seasoning.
Meanwhile, boil the pasta in plenty salty water. Drain, return to the pan and mix with half of the pesto amount (keep the other half in the fridge for another meal). Sprinkle with the grated Emmental, season with more freshly ground pepper and serve.

Salada rosa de couscous | Couscous pink salad

(scroll down for English)

400g couscous
Azeite
Sal marinho
Pimenta 5 bagas moída na hora
Água a ferver
300g beterraba cozida
1 romã (apenas os bagos)
250g queijo feta

During the week it's important to simplify the meals without loosing deliciousness, presentation (remember the eyes also eat!) nor our principles when it comes to food.
Todays suggestions can be a side dish or can also be the main course if we add boiled chickpeas to it. It's ready in no time so there are no excuses :)

Couscous pink salad

400g couscous
Evoo
Sea salt
Pepper freshly ground
Boiling water
300g boiled beet
1 pomegranate (just the berries)
250g feta cheese
80g pistachios
Raspeberry vinegar

In a large serving bowl mix the couscous with evoo, salt and pepper. Add the boling water until all the couscous is covered. Keep aside for 5mins. Meanwhile cut the beat in tiny cubes, the pistachios in halves and crumble the feta.
Mix the couscous to loosen the grains, add the beet, pistachios, feta, pomegranate berries and drizzle with evoo and vinegar. Mix well, taste and adjust the seasoning before serving.

Crumble integral de maçã e frutos silvestres | Apple and dark berry whole crumble

(scroll down for English)

It's apple time! After months of inactivity, out oven erupted. And all weekends it will bring us sweet or savoury delicacies, bread made with TLC, all that is good. Still in the Summer-Autumn limbo, the very first apples paired with the last berries and, with some cereals, turned this simples crumble into a true surprise.

Apple and dark berry whole crumble

4 granny smith apples, cored, in cubes
300g blueberries and blackberries
50g vanilla sugar
80g whole wheat flour
2 tbsp almond flour
60g unsalty butter, cold and cube
2 tbsp brown sugar
60g oat flakes
60g pistachios, sliced
40g quinoa

Mix the fruit with the vanilla sugar. In a bowl, mix the rest of the ingredients and work fast with your fingertips until you have a crumbled dough. Cover the fruit with the cumbled dough and put in the oven, previously heated to 180º C, for about 50mins or until the crust is golden.

Esparguete cor de rosa | Pink spaghetti

(scroll down for English)

It's wonderful when color invades life. On the tree leaves, in the cloudy sky, on the city skyline. Indoors the colors cuddle and comfort, wether through small or larger details. But if there's a place where colors have another dimension, it's on the plate. Because we also eat with our eyes!
Beetroot pesto was a great finding and it's here to stay. After searching online for recipes, I ended up with one of my own and I'm also looking forward to try it with hazelnuts instead of walnuts.
The biggest of the suprises it that this pesto does not taste of beetroot so it's perfect even for those who are not very fond of this herbaceous!

Pink spaghetti

400g boiled beetroot, cubed
1 cup crumbled walnuts
1 large garlic clove
1 lime (juice)
1 cup grated Azorean cheese
Evoo
Salt and pepper (5 berries) freshly ground
500g spaghetti
2 goat hard cheeses, crumbled
Grated pistachios

For the pesto, place the beetroot, garlic clove, lime juice and cheese in a food processor. Pulse 3 or 4 times and then blend in a medium-slow speed while adding the evoo. Stop when you have the desired consistency. Divide the pesto in two: reserve one half in the fridge to use on another day and the other half to use immediatly.
Meanwhile, cook the spaghetti in boiling water with salt. Drain, return to the pan and mix with the pesto - the spaghetti will absorve the pink color!
Serve topped with the crumbled goat cheese, sprinkled with the pistachios and seasoned with more freshly ground pepper.

Iogurte grego com compota fria de framboesa | Greek yoghurt with raw raspberry jam

(scroll down for English)

Embalada nesta canção triste rendo-me à preguiça e deixo-me ficar. Sem pressas, sem distracções. Apenas eu e o torpor que me adormece...

The cold wind blows furious through the windows. Apart from the stormy weather outside, the house remains nice, warm, comfy. I cuddle again in the sheets and, protected in this tranquility, close my eyes to better listening the crying of the nature. Lulled by this sad song I surrender to slumber and stay in bed. No hurries, no distractions. Just me and the numbness that rocks me to sleep...
Some time after (how much time? doesn't matter, it felt soooo good... that's what's important!) I return to life: open the blinders, open the window and... amongst the grey clouds the sun insists on shining through! It's breakfast time :)

Greek yoghurt with raw raspberry jam

300g raspberries
2-3 tbsp chia seeds
1-2 tbsp vanilla sugar (honey, agave syrup, etc.)
Greek yoghurt
Grated pistachios

With a fork, crush well the raspeberries until you have a smooth paste. Add the sugar and the chia seeds mixing well. Leave overnight in the frigde for the jam to gelify.
Next day, serve the greek yoghurt with the jam and the pistachios.

Um doce sem pecado | A sweet without sin

(scroll down for English)

Os doces também podem ser saudáveis. Sim? Não? Talvez? Ajuda do público?

Voltar a fechar o SoupMaker, escolher a opção varinha-mágica e reduzir o doce a puré.

Can sweets be healthy? Yes? No? Maybe? Help from the audience?
There are a few days that we can only go by with one of those sinful sweets, full of peanut butter, dark chocolate and everything else we are entitled to!
On the other hand, there are also those days that we could live with something a bit sweet, just to the finish off the day in a special way. And since the latter are a bit more frequent than the former, here's a suggestion to be enjoyed without guilt, without thinking about the scale's agony when we weigh ourselves or the crying of our jeans zipper!!!!

Meanwhile, this kitchen is going on holidays. Two weeks of pure leisure, no laptop, no mobile, no phone, no TV. It'll come back renewed, inspired and with excellent news!

See you pretty soon! :)

Nectarine and plum sugar-free jam

3 nectarines, de-stoned
4 plums, de-stoned
4 stalks lemony-thyme (leaves only)

Slice the fruit in large cubes and place it in the Philips SoupMaker, together with the thyme leaves. Fill with water until the minimum mark, close and select the Jam program. At the end, open the SoupMaker, remove the excess liquid and keep it aside in the fridge. Close the SoupMaker, choose the Blender program and reduce the fruit to a purée.

Note: since the fruit is already sweet, there's very little need to add extra sweetness.

Summer Tricolor

125g greek yoghurt
2 tbsp rosemary honey
8 tbsp nectarine and plum jam
1 tbsp ground pistachios
1 tsp bee polen

In a bowl, place the whipped greek yoghurt followed by the honey and gently topped with the jam. Sprinkle with the pistachios and season with the polen. Serve immediately, together with the juice kept in the fridge (if it's not cool enough, add ice cubes. The sweet-tooth ones can sweeten it with brown sugar, honey or agave syrup).

Pistácios para um pequeno-almoço e pêras! | Pistachios and pears for breakfast

(scroll down for English)

Simplesmente divinais!

Wake up early in the morning, with the grey haze of the undecided days, and be able to photograph is something that makes me happy. But being able to savor a light but fulfilling breakfast, packed with good things is something that makes my day infinitely better. And there's nothing better than a bowl of cereals, fruit and yoghurt, a chaise-long on the balcony and those minutes (that seem like hours) that are only mine. Tell me if you wouldn't like to start all of your days this way...

Millet with pears and pistachios

30g puffed millet
2 small pears (Dª Joaquina variety)
125g greek yoghurt
2 tbsp physalis jam
1 tbsp grated pistachios

Place the puffed millet in a bowl. Top with the pears sliced in small pieces. Whip the yoghurt and pour on top of the pears. Top with the jam and sprinkle with the pistachios and serve.

Note: we would like to thank Diana's mum for the delicious jams she sent us: one made with roses and another one made with physalis. Simply wonderful!
