Strudel folhado de maçã, arandos e avelã | Puff-pastry apple, cranberry and hazelnut strudel

"A vida são dois dias". Ora pois devem estar a referir-se ao fim de semana. Sim. Esses dois dias que passam a correr. E nos quais tentamos herculeamente encaixar todo o tempo do mundo. Namorar. Passear. Cozinhar. Família. Amigos. Jardinar. Fotografar muito. Descansar. E quando damos por ela a vida a acabou. É segunda-feira e temos que ir trabalhar. Euromilhões, onde estás tu?


Strudel folhado de maçã, arandos e avelã

1 placa rectangular massa folhada
4 maçãs reineta
100g arandos secos
Mistura de açúcar baunilhado e canela
Água

Retirar a placa de frigorífico e aguardar 15 mins. Entretanto, ralar as maçãs (com casca) e misturar com a farinha de avelã, os arandos e açúcar com canela a gosto. Estender a placa de massa folhada e espalhar o recheio de maçã, deixando uma margem por preencher num dos lados maiores). Enrolar a placa começando do lado oposto ao da margem e posicionar no centro do tabuleiro. Com uma faca afiada, fazer uns cortes na massa. Pincelar com água (ou ovo, ou leite) e, opcionalmente, polvilhar com mais açúcar com canela. Levar ao forno a 220ºC durante cerca de 45mins ou até a massa estar douradinha.

Puff-pastry apple, cranberry and hazelnut strudel

1 rectangular sheet puff-pastry
4 Reineta apples (or any sour apples, such as Granny Smith)
100g dry cranberry
Vanilla sugar and cinnamon mix
Water

Remove the pastry from the frigde and keep aside for 15mins. Meanwhile prepare de filling by grating the apples (skin on) and mixing with the cranberries, flour and sugar mix. Open out the pastry sheet and cover with the filling, leaving a margin in one of the largest sides. Roll the pastry, leaving the margin to the outside, in order to close the roll and place in the middle of the baking sheet. Brush with water (or egg, milk, etc.) and, optionally, sprinkle with more sugar mix. Leave in the pre-heated oven at 220º C for 45mins or until golden.

Bolo triplo de Nutella e panquecas de avelã | Triple layer Nutella and hazelnut pancake cake

Gratidão. Imensa. É assim que terminamos 2013 e damos início a 2014. 
Gratos por todas as coisas boas que nos aconteceram. Pelas menos boas também, pois sempre aprendemos lições valiosas que nos ajudam a crescer. E claro, o que não mata engorda e ainda nos torna mais fortes.
Gratos pelas pessoas de sempre que nos acompanham com orgulho no dia-a-dia e nos ajudam a crescer. Gratos pelas pessoas novas, que esperamos que tenham vindo para ficar. Gratos pelas que de nós se afastaram, pois realmente não eram para ficar.
Gratos pelos dias de sol luminoso e pelos de chuva copiosa.
Gratos pela saúde de todos aqueles que queremos bem e que nos querem bem também.
Gratos pelas viagens e passeios, a sós ou acompanhados, pelas descobertas, pelas paisagens de cortar o fôlego e pelas refeições deliciosas.
Gratos pelas experiências e por termos conseguido atingir muitos dos objectivos a que nos tínhamos proposto. 
Gratos pelas surpresas boas que os dias nos foram trazendo e que nos fizeram tão, mas tão felizes.
E gratos por vocês, que estão do outro lado do ecrã e que, muitas vezes, entram na nossa vida através de comentários, sugestões, mensagens, telefonemas, encontros e passeios.

Bolo triplo de Nutella e panquecas de avelã

1 chávena avelãs inteiras
2 c.sopa açúcar baunilhado
1+1/2 chávenas farinha T-55
2 c.sopa fermento em pó
1 c.chá sal
50g Becel líquida
1 chávena Kefir
2 ovos XL, temp. ambiente
1 c.chá aroma de baunilha
Nutella
Avelãs cortadas
Crocante de amendoim

Tostar as avelãs numa frigideira. Remover do lume e deixar arrefecer. Colocar as avelãs num moinho de cozinha e moer finamente. 
Numa taça, misturar todos os ingredientes secos. Reservar. Noutra traça, misturar bem todos os ingredientes líquidos. Adicionar os secos e misturar apenas o suficiente para se obter uma mistura cremosa e macia.
Numa frigideira anti-aderente, colocar 2 c.sopa de massa por panqueca (para panquecas pequenas) e cozinhar até estarem douradas de ambos os lados. Repetir até a massa terminar.
Para montar o bolo, barrar 3 panquecas com Nutella e polvilhar com avelãs cortadas e crocante de amendoim. Empilhar as panquecas e servir. Repetir este processo com as restantes panquecas para fazer mais bolos.

Triple layer Nutella and hazelnut pancake cake

1 cup whole hazelnuts 
2 tbsp vanilla sugar 
1+1/2 cups all-purpose flour 
2 tbsp baking powder 
1 tsp salt 
50g liquid margerine (Becel)
1 cup Kefir
2 large eggs, at room temperature 
1 tsp vanilla extract
Nutella
Chopped hazelnuts
Peanut crisp

Toast the hazelnuts in a frying pan. Remove from the heat and let cool. Place the hazelnuts in a food grinder to finely grind them. 
In a bowl, whisk to combine all dry ingredients. Set aside. In a separate bowl, thoroughly whisk together all liquid ingredients. Add the dry ingredients and mix until smooth. Do not overmix.
Place a skillet over medium high heat and drop about 2 tablespoons of batter per pancake (for small pancakes) from a ladle into the skillet. Flip when the underside has turned golden brown, and remove from pan when second side is golden brown. Repeat as necessary for the batter.
For the cake, spread a dollop of Nutella in 3 pancakes and sprinkle them with chopped hazelnuts and peanut crisp. Pile the pancakes and serve. Repeat the 3-layer cake with the remaining pancakes.

Tapioca com limão e canela | Tapioca with lemon and cinnamon

Entre as Festas há um regresso à normalidade que é muito aguardado. Enquanto nas mesas ainda bailam iguarias natalícias, na mente já fervilham ideias para a passagem de ano. Mas pelo meio é imperativo manter alguma sanidade mental e impedir que a balança reclame do peso pesado que nela assentou arraiais. 


Tapioca com limão e canela

50g de tapioca
250ml de leite magro
Acúçar baunilhado a gosto
1 pequeno pau de canela
1 casquinha de limão

Deixar a tapioca de molho em bastante água pelo menos durante 2h (neste caso ficou durante a noite). Num tachinho, colocar a tapioca hidratada (e escorrida) com os restantes ingredientes e levar ao lume e cozer durante 5mins após levantar fervura (pode ser necessário adicionar mais um pouco de leite para ajustar a consistência). Servir polvilhada com canela.


In between the Holidays there's a return to normality that is much awaited. While the tables are still filled with Xmas delicacies our minds have started wondering about New Year's Eve. Therefore, it is imperative to keep our mental sanity and stop the scale from complaining about the heavy weight that climbed on top of it.


Tapioca with lemon and cinnamon

50g tapioca
250ml skimmed milk
Vanilla sugar to taste
1 small cinnamon stick
1 small stripe of lemon zest

Hidrate the tapioca with plenty water for at least 2h (mine stayed overnight). In a small saucepan, place the drained tapioca with the rest of the ingredients and cook for 5 mins after started boiling (it might be necessary to add more milk, depending on how you like your tapioca's consistency). Serve sprinkled with cinnamon powder.

Rabanadas grelhadas | Grilled French Toasts

O Natal está mesmo, mesmo ao virar da esquina. Muito em breve estaremos juntos, sentados em volta de uma mesa repleta de iguarias. Tradições de família que se perpetuam ou novas que se vão criando. Estaremos aconchegados, com abraços e sorrisos, em casa quentinhas onde há de tudo um pouco. Pudessem todos ter sorte igual...
As festividades convidam aos exageros gastronómicos e se uns são mais regrados, outros nem por isso. Para quem procura algumas alternativas mais saudáveis sem ter que abdicar de muita coisa, aqui fica uma receita de rabanadas grelhadas. Sim, grelhadas. O sabor, esse, está todo lá!


Rabanadas grelhadas

500ml leite magro (ou de soja, amêndoa, arroz, etc.)
1/2 limão pequeno biológico (raspa)
2 paus de canela
Mel a gosto (ou geleia de agave, ou açúcar amarelo/mascavado)
2 ovos batidos
8 fatias de pão (seco) de mistura, centeio de Padronelo, etc.
Mistura de açúcar amarelo e canela para polvilhar

3 laranjas (sumo)
Vinho do Porto (mesma quantidade do sumo de laranja)
2 estrelas de anis
1 pau de canela
Açúcar amarelo ou mascavado baunilhado (ou mel, geleia de agave, etc.)

Ferver o leite com a raspa de limão, paus de canela e o mel. Reservar. Bater os ovos e partir as fatias de pão. Entretanto, aquecer uma frigideira anti-aderente apenas untada com azeite. Mergulhar o pão no leite até estar molengão. Passar pelo ovo e colocar na frigideira até dourar de ambos os lados. Polvilhar todas as fatias com a mistura de açúcar e canela à medida que vão sendo colocadas numa travessa ou numa taça.

Para quem gostar, servir as rabanadas com calda: levar a ferver o sumo das laranjas com o vinho do Porto, anis, canela e açúcar amarelo baunilhado. Regar as rabanadas com a calda ou reservar numa molheira, para que cada pessoa possa optar entre rabanadas secas ou molhadas.


Xmas is just around the corner. Soon we'll be together, gathering around a table with plenty delicacies. Family traditions that pass from generation to generation or new ones that start to rise. We will tucked in, with hugs and smiles, in a warm house where there's a bit of everything. I wish everyone could just say the same thing...
The holidays are an invitation for gluttony and if some of us are a bit more controlled, others may not be so. For those who seek a healthier alternative without giving up on much, here's a recipe for grilled French Toasts (Rabanadas, in Portuguese). Yes, grilled. But the flavor is all there. 


Grilled French Toasts

500ml skimmed milk (or soya, almond, rice, etc.)
1/2 small bio lemon (zest)
2 cinnamon stick
Honey to taste (agave syrup, or brown/moscovado sugar)
2 eggs, beaten
8 thick whole bread (at least two 2 days old) slices
Brown sugar and cinnamon mix to sprinkle

3 oranges (juice)
Port wine (same amount as orange juice)
2 aniseed stars
1 cinnamon stick
Brown or moscovado vanilla sugar (or honey, agave syrup, etc.)

Boil the milk with lemon zest, cinnamon and honey. Keep aside. Beat the eggs and slice the bread. Meanwhile, heat a anti-adherent frying pan just greased with olive oil. Dip the bread in the milk until tender. Pass each slice by the beaten eggs and grill in the pan until golden on both sides. Sprinkle all slices with the sugar and cinnamon mix and place them in a large dish or large bowl.

If you like, serve the French Toasts with a syrup: boil the orange juice with Port, aniseed, cinnamon and vanilla sugar. Drizzle the French Toasts with the syrup or keep the syrup aside in a gravy boat so each person can choose between dry or moist French Toasts.

Quinoa, iogurte e fruta para o pequeno-almoço | Quinoa, yoghurt and fruit for breakfast

Durante a semana o tempo escapa-se por entre os dedos. São os horários trocados, são as folgas que não coincidem, são os afazeres profissionais e pessoais que nos empurram para a frente. E o tic-tac parece frenético, fugidio e quando damos por ela já acordamos num novo dia. E não há nada melhor do que acordar e ter tempo para um pequeno-almoço tranquilo. Quente ou frio, doce ou salgado, com ou sem fruta. Esta pausa é vital para fortalecer as energias restabelecidas durante o sono reparador. São os meus 10mins relaxantes: eu, uma tranquilidade e silêncio imensos e o meu pequeno-almoço. Para depois poder voltar a entrar no rodopio diário mantendo a sanidade mental! :)


Quinoa, iogurte e fruta

Quinoa cozida
Iogurte grego natural
Doce de pêra e baunilha
Uvas brancas

Para cozer a quinoa, lavar bem em água (3 vezes) e escorrer. Colocar num tacho 1 medida de quinoa e 2 de água e levar ao lume até levantar fervura. Colocar em lume brando até estar cozida. Deixar arrefecer.

Para o doce de pêra e baunilha, descascar e decaroçar 5 pêras Rocha, e cortar em cubos. Colocar a pêra no Soup Maker, adicionar açúcar baunilhado a gosto e cobrir com água até à marca mínima. Escolher o programa Compotas. Findo o programa, retirar a maior parte do líquido de cozedura e reservar. Com a fruta e algum líquido ainda no Soup Maker, escolher a função Varinha-Mágica e pulsar 4 vezes durante cerca de 10s em cada vez. Verter o doce para um frasco previamente esterilizado.

Numa taça colocar 5 c.sopa de quinoa cozida, 100g de iogurte grego, doce de pêra a gosto e enfeitar com uvas brancas cortadas ao meio. Servir acompanhado pelo sumo que sobrou de cozer a fruta.

And the tic-tac seems frantic, fleeting and when we realize it is time to wake up for another day. There's nothing better than waking up and having time for a tranquil breakfast. Hot or cold, sweet or savory, with or without fruit. This break is vital to strengthen the energies restored during the restful sleep. My relaxing 10mins: just me, and immense tranquility, silence and my breakfast. Afterwards I can finally go enter the rats race keeping my mental sanity intact! :)


Quinoa, yoghurt and fruit

Boiled quinoa
Natural greek yoghurt
Pear and vanilla jam
White grapes

To cook the quinoa, wash thoroughly with water 3 times and drain. In a saucepan place 1 measure of quinoa and 2 measures of water and leave to boil. Lower the heat and simmer until cooked. Leave to cool down.

For the jam, peel and core 5 pears, slicing them in cubes. Place the pears inside the Soup Maker, add vanilla sugar to taste and water to reach the minimum mark. Choose the Jam Program. In the end, remove most of the cooking liquid and keep it aside. With the fruit and a bit of liquid still inside the Soup Maker choose the Blender Program and blitz 4 times for 10secs each. Pour the jam into a sterilized jar.

In a bowl place 5 tbsp of cooked quinoa, 100g of greek yoghurt, pear and vanilla jam to taste and garnish with white grapes. Serve together with the remaining juice from cooking the fruit.

Gelado de figos, Porto e mascarpone | Fig, Port and mascarpone ice cream

Uma lufada de calor. Como se o Verão desse os seus derradeiros suspiros antes de recolher às entranhas da Terra. O sol brilha, folgoso, no céu azul e cristalino. E nós vamo-nos deixando levar para onde o bom tempo quiser. Os últimos figos, vinho do Porto, mascarpone. E uma sobremesa fresquinha!


Gelado de figos, Porto e mascarpone

500g figos
150g açúcar baunilhado
150ml água
1 cálice vinho Porto
250g mascarpone
250g iogurte grego

Cortar os figos em quartos e levar ao lume com o açúcar e a água. Deixar cozinhar durante cerca de 30-45mins até obter uma calda. Adicionar o vinho do porto, incorporar bem e retirar do lume. Passar com uma varinha-mágica e deixar arrefecer.
Bater o queijo com o iogurte grego. De seguida, misturar bem com a calda e levar à máquina de gelados. Colocar numa forma ou caixa para congelação e colocar no congelador. Retirar para o frigorífico 1h antes de servir. 
Fica óptimo com molho de chocolate negro derretido (derreter o chocolate num pouco de leite magro aquecido) e/ou com crocante de amendoim.


A gust of heat. As if Summer was breathing its last sighs before returning to the Earth's womb. The sun shines bright in a crystalline blue sky. And we go where the good weather takes us. The last figs, Port, mascarpone. And a refreshing dessert!


Fig, Port and mascarpone ice cream

500g figs
150g vanilla sugar
150ml water
1 shot glass Port wine
250g mascarpone
250g greek yoghurt

Cut the figs in quarters and cook with the sugar and water for about 30-45mins until you get a syrup. Add the Port, remove from the heat and blend. Leave to cool down.
Whisk the mascarpone with the yoghurt, incorporate the fig mix and place in the ice cream maker. Afterwards place in a plastic box and freeze. Place in the fridge for 1h before serving.
It's great to serve with dark chocolate sauce and/or peanut crisp.

Iogurte grego com compota fria de framboesa | Greek yoghurt with raw raspberry jam

O vento frio uiva furioso nas janelas. Apesar do temporal desabrido que faz lá fora, a casa continua quente, confortável. Enrosco-me novamente nos lençóis e, protegida nesta tranquilidade, volto a fechar os olhos para escutar melhor os lamentos da natureza. Embalada nesta canção triste rendo-me à preguiça e deixo-me ficar. Sem pressas, sem distracções. Apenas eu e o torpor que me adormece...
Algum tempo depois (quanto? não interessa, soube tão bem... isso é que importa!) retorno à vida: subir persiana, abrir janela e... pelo meio das nuvens negras o sol teima em despontar! É tempo de pequeno-almoço :)


Iogurte grego com compota fria de framboesa

300g framboesas
2-3 c. sopa de sementes chia
1-2 c. sopa de açúcar baunilhado (ou mel, geleia de agave, etc.)
Iogurte grego
Pistácios ralados

Com um garfo, esmagar bem as framboesas até se obter uma pasta. Adoçar com o açúcar, incorporando bem e adicionar as sementes chia, muito bem misturadas. Colocar no frigorífico durante a noite, para a compota gelificar.
No dia seguinte, servir o iogurte com a compota e os pistácios ralados.


The cold wind blows furious through the windows. Apart from the stormy weather outside, the house remains nice, warm, comfy. I cuddle again in the sheets and, protected in this tranquility, close my eyes to better listening the crying of the nature. Lulled by this sad song I surrender to slumber and stay in bed. No hurries, no distractions. Just me and the numbness that rocks me to sleep...
Some time after (how much time? doesn't matter, it felt soooo good... that's what's important!) I return to life: open the blinders, open the window and... amongst the grey clouds the sun insists on shining through! It's breakfast time :)


Greek yoghurt with raw raspberry jam

300g raspberries
2-3 tbsp chia seeds
1-2 tbsp vanilla sugar (honey, agave syrup, etc.)
Greek yoghurt
Grated pistachios

With a fork, crush well the raspeberries until you have a smooth paste. Add the sugar and the chia seeds mixing well. Leave overnight in the frigde for the jam to gelify.
Next day, serve the greek yoghurt with the jam and the pistachios.

Panna cotta de rosmaninho | Rosemary panna cotta

Numa dessas tardes de sol envergonhado nasceu esta panna cotta. Para animar o dia e arrebitar as cores prateadas que se estendiam no horizonte. Aos poucos a cozinha perfumou-se de uma fragrância suave e nós deixamo-nos levar pelos aromas. Para outras paragens, de cores ténues e primaveris. Fomos sendo levados pelos sonhos, pelas vontades, pelo sentidos que nos guiaram o caminho. Porque uma simples panna cotta pode mudar muita coisa. E pode fazer o nosso dia muito mais feliz! :)


Panna cotta de rosmaninho

300ml leite meio gordo
200ml natas
70g açúcar baunilhado
1 haste de rosmaninho
3 folhas gelatina, hidratadas em água
Coulis de morango e cereja (ver receita aqui)

Num tacho, misturar o leite com as natas, o rosmaninho e o açúcar baunilhado. Levar a lume brando até que ferva. Dissolver a gelatina no preparado quente. Verter a panna cotta para copinhos ou formas (estas últimas previamente untadas com óleo). Refrigerar entre 4 a 24 horas. Desenformar com muito cuidado as panna cottas das formas. Servir com o coulis de morango e cereja.


In one of those shy afternoons this panna cotta was born. To cheer up the day and brighten the silver colors in the horizon. Slowly, the kitchen filled with a soft fragance and we got carried away by the scents. For other stops, with soft and springy colors. We got carried away by dreams, wishes, senses that guided our way. Because a simple panna cotta can change many things. And can make our day even more happy! :)


Rosemary panna cotta

300ml semi-skimmed milk
200ml cream
70g vanilla sugar
1 rosemary sprig
3 gelatine sheets, hydrated with water
Strawberry and cherry coulis (see recipe here)

In a saucepan, mix the milk, cream, rosemary and sugar. Bring to a boil in a low heat. Solve the gelatine in the warm mixture. Distribute the panna cotta in glasses or tins (the latter greased with oil). Refrigerate for about 4h to 24h. Carefully unmold the tinned panna cottas. Serve with the strawberry and cherry coulis.

Bolo de custarda e kefir | Custard and kefir cake

Num desses dias infinitamente cinzentos e chuvosos, o sol brilhou dentro de casa. Radiante, luminoso, quente. Como que uma porção sua imprimisse o ritmo de renovação na natureza, acariciando as sementes que brotam na terra, soprando nas asas das andorinhas. Num desses dias infinitos em tudo, o tempo preguiçou ao nosso lado, acompanhado-nos numa chávena de chá e numa fatia de sol.
Bolo de custarda e kefir

1+1/2 chávena de farinha
3/4 chávena de farinha custarda
2+1/4 c.chá de fermento
3/4 chávena de açúcar baunilhado
150g de manteiga, à temperatura ambiente
2 chávena de kefir espesso (fermentação de 72h)

Colocar todos os ingredientes secos numa taça, mexendo bem. Adicionar o kefir e a manteiga, batendo com uma colher até obter uma massa suave. Colocar numa forma preparada e levar ao forno previamente aquecido 180º C durante cerca de 45mins. Fazer o teste do palito, deixar arrefecer e servir.

As if one of its portions established the rythm of renovation on natura, caressing the seeds that sprout from the earth, gently blowing on the wings of swallows. In one of those infinit days, time idled with us, joining us for a  cup of tea and a slice of sun.
Custard and kefir cake
(adapted from "Bolo custard sem ovo" in Canela Moída)

1+1/2 cup flour
3/4 cup custard flour
2+1/4 tsp baking soda
3/4 cup vanilla sugar
150g butter, room temperature
2 cup thick kefir (72h fermentation)

Place all dry ingredients in a bowl mixing with a wodden spoon. Add kefir and butter, mixing until you have a smooth batter. Pour into a prepared tin and place in the pre-heated oven at 180º C for 45mins. Check with toothpick and leave to cool down before serving.

Panquecas fofas de kefir

As panquecas são sempre bem vindas. Doces ou salgadas, fofas ou finas tipo crepe, de manhã, à tarde ou à noite. Ao fim de semana, são preparadas e saboreadas ainda quentinhas, acabadas de fazer. À semana, são preparadas após o jantar, para nos fazerem companhia ao pequeno almoço ou durante as pausas do trabalho. Claro que não resistimos e algumas são provadas na hora. Mas já por isso é que fazemos estas "pilhas" enormes! :D


Panquecas fofas de kefir
(adaptação da receita de sempre)

2 chávenas de farinha sem fermento (1 integral + 1 normal)
2 colher-chá de fermento em pó
1/3 chávena de açúcar baunilhado
2 ovos
1 1/2 chávena de kefir
70g de margarina líquida (Vaqueiro)

Numa taça média bater os ovos, o kefir e a margarina com um fouet. Adicionar a farinha, o fermento e o açúcar previamente misturados e mexer vigorosamente até se obter uma massa uniforme.
Numa frigideira de pequenas dimensões, colocar 1 concha de sopa de massa para cada panqueca: 2 minutos de cada lado em lume médio e estão prontas a servir. Podem ser acompanhadas com fruta, iogurte, mel, etc. Por cá preferimos barrá-las com manteiga de amendoim (normal, de mel, de chocolate negro ou de chocolate branco) ou com Nutella!
