Arroz doce de pequeno-almoço | Breakfast Rice Pudding

Breakfast Rice Pudding - iPhone 6 @ http://instagram.com/ondina_maria/

(scroll down for English)

Quem me conhece sabe que a minha refeição favorita é o pequeno-almoço.

1L leite magro
150g arroz carolino biológico
1 limão (apenas a casca amarela)
2 paus canela
Mel a gosto

Those who know me are well aware that breakfast is my favorite meal. From sweet to savoury, anything goes and, like for others meals, this one is different every day. The recipe I share today is one of my favourites and it's a white canvas that allows us to use our imagination. It was prepared for Mercearia Bio, following their invitation to create a recipe using the products from their on-line shop. So, give it a go at the recipe using your favorite toppings.

Breakfast Rice Pudding

1L skimmed milk
150g of bio ground grain starchy rice (arborio-like)
1 lemon (zest only)
2 cinnamon sticks
Honey to taste
Suggested toppings: nectarine, ground coconut, chopped pistachios, bee pollen

Place the milk, rice, lemon zest and cinnamon sticks in a pot and bring to a simmer without boiling for 50mins, constantly stirring. At the end of that time, remove the pot from the stove and add in the honey, stirring to incorporate. Let cool down and serve with your favourite toppings.

Papas de aveia | Porridge

(scroll down for English)

My latest addiction is a honey and cinnamon paste. It could be worse. In fact it could. But at least it's not refined sugar! But this paste is delicious and I have been having if mainly in my whole bread with walnut cheese as well as in my porridge. If pistachios are around, even better :)

Porridge

200g skimmed milk
40g oats
Honey an cinnamon paste (mix both ingredients to your liking)
Chopped pistachios

Place the milk and oats in the Thermomix mixing bowl and cook for 10min / 90º C / reverse / speed 2.5. Pour into a bowl, drizzle with the honey cinnamon paste and sprinkle with the pistachios before serving.

Strudel folhado de maçã, arandos e avelã | Puff-pastry apple, cranberry and hazelnut strudel

(scroll down for English)

1 placa rectangular massa folhada
4 maçãs reineta
100g arandos secos

"Life is too short". It must be related to the weekend. Yes. Those two short days that fly by. Where we hearculeanly try to fit in all the time of the world. Dating. Sightseeing. Cooking. Family. Friends. Gardening. Photographing a lot. Resting. And when we realize, life is over. It's Monday and we have to go to work. Euromillions, where art thou?

Puff-pastry apple, cranberry and hazelnut strudel

1 rectangular sheet puff-pastry
4 Reineta apples (or any sour apples, such as Granny Smith)
100g dry cranberry
Vanilla sugar and cinnamon mix
Water

Remove the pastry from the frigde and keep aside for 15mins. Meanwhile prepare de filling by grating the apples (skin on) and mixing with the cranberries, flour and sugar mix. Open out the pastry sheet and cover with the filling, leaving a margin in one of the largest sides. Roll the pastry, leaving the margin to the outside, in order to close the roll and place in the middle of the baking sheet. Brush with water (or egg, milk, etc.) and, optionally, sprinkle with more sugar mix. Leave in the pre-heated oven at 220º C for 45mins or until golden.

Tapioca com limão e canela | Tapioca with lemon and cinnamon

scroll down for English)

Acúçar baunilhado a gosto

In between the Holidays there's a return to normality that is much awaited. While the tables are still filled with Xmas delicacies our minds have started wondering about New Year's Eve. Therefore, it is imperative to keep our mental sanity and stop the scale from complaining about the heavy weight that climbed on top of it.

Tapioca with lemon and cinnamon

50g tapioca
250ml skimmed milk
Vanilla sugar to taste
1 small cinnamon stick
1 small stripe of lemon zest

Hidrate the tapioca with plenty water for at least 2h (mine stayed overnight). In a small saucepan, place the drained tapioca with the rest of the ingredients and cook for 5 mins after started boiling (it might be necessary to add more milk, depending on how you like your tapioca's consistency). Serve sprinkled with cinnamon powder.

Rabanadas grelhadas | Grilled French Toasts

(scroll down for English)

3 laranjas (sumo)

Xmas is just around the corner. Soon we'll be together, gathering around a table with plenty delicacies. Family traditions that pass from generation to generation or new ones that start to rise. We will tucked in, with hugs and smiles, in a warm house where there's a bit of everything. I wish everyone could just say the same thing...
The holidays are an invitation for gluttony and if some of us are a bit more controlled, others may not be so. For those who seek a healthier alternative without giving up on much, here's a recipe for grilled French Toasts (Rabanadas, in Portuguese). Yes, grilled. But the flavor is all there.

Grilled French Toasts

500ml skimmed milk (or soya, almond, rice, etc.)
1/2 small bio lemon (zest)
2 cinnamon stick
Honey to taste (agave syrup, or brown/moscovado sugar)
2 eggs, beaten
8 thick whole bread (at least two 2 days old) slices
Brown sugar and cinnamon mix to sprinkle

3 oranges (juice)
Port wine (same amount as orange juice)
2 aniseed stars
1 cinnamon stick
Brown or moscovado vanilla sugar (or honey, agave syrup, etc.)

Boil the milk with lemon zest, cinnamon and honey. Keep aside. Beat the eggs and slice the bread. Meanwhile, heat a anti-adherent frying pan just greased with olive oil. Dip the bread in the milk until tender. Pass each slice by the beaten eggs and grill in the pan until golden on both sides. Sprinkle all slices with the sugar and cinnamon mix and place them in a large dish or large bowl.

If you like, serve the French Toasts with a syrup: boil the orange juice with Port, aniseed, cinnamon and vanilla sugar. Drizzle the French Toasts with the syrup or keep the syrup aside in a gravy boat so each person can choose between dry or moist French Toasts.

Guest Post: Gelado de figos e amêndoa com crocante de alfarroba | Fig and almond ice cream with carob crisp

(scroll down for English)

Remova do lume e deixe arrefecer.

Our second guest post on mediterranean cuisine comes from the talented Ana Braga, in her Sweet Affair unique style. Who doesn't like to be delighted by the perfect photos and delicious recipes from this charming blog?
Thank you so much Ana, for the cool dessert and lovely photos that you sent us. The ice cream is already in the freezer, but made with mascarpone! :)

Fig and almond ice cream with carob crisp
(8 servings)

Ice cream:
400g fresh figs
400ml cream
125ml water
1/2 tbsp lemon juice
120g + 1 tbsp sugar
125g greek yoghurt
1/2 tbsp carob flour
1 tbsp ground almonds

Carob crisp:
100g carob flour
220g wholewheat flour
1 egg
100g moscovado sugar
120g butter
1 tbsp cinnamon
1 tsp baking powder
1/2 tsp salt

Start by making the cookies. Mix the sugar with the egg and add the melted butter, incorporating well. Add the rest of the ingredients and knead. Form small thick cookies (around 20) and place in a baking tray covered with baking paper. Put in the pre-heated oven at 180º C for 10 to 12 mins. Remove from the oven and leave to cool in a rack.

For the ice cream, place some peeled almonds in a oven tray and lightly toast them. Leave to cool down, ground them and keep aside.
In a saucepan, place the sliced figs, 120g of sugar, almonds and water. Bring to a boil, mixing until you have a slightly thick jam. Remove from the heat and leave to cool down. When cold, add 250ml of cream, the lemon juice and blitz very well. Keep aside.
Meanwhile, in a bowl, mix the carob flour with the remaining sugar and cream, with the yoghurt and mix well until you have an even creamy mixture.
In a container proper for freezing, pour the fig mix and the carob mix in alternate layers. Sprinkle with the crushed cookies, or leave them for when serving the ice cream.

Almôndegas de pescada guisadas | Stewed fishballs

(scroll down for English)

I like our curiosity in cooking everyday ingredients in a different way. I like our thirst for search and inovation for different meals that are, many times, surprising. I like when we both make the effort of presenting something that we know the other will enjoy. And I like to see the smile in our faces when we try something we thought to taste good that, indeed, is tastes wonderfully. I really like it. Loads.
Stewed fishballs
(adapted from "The best fish recipes" in World Kitchens - JN)

800g frozen hake
1 egg
Dry parsley
3 onions
1 large can peeled tomato
2 garlic cloves
1 large can peas
Flour
Olive oil
Cinamon (powder)
Salt and pepper

Boil the fish in water and salt, remove, drain well and leave to cool down. Mash the hake with a fork and mix with a beaten egg, a pinch of cinamon, salt, pepper, dry parsley and 2 tbsp of flour. With your hands form the fishballs (add 1 more tbsp flour if necessary), coat with flour and brown them in a pan with olive oil. In a large pot, soften the onions and garlic with olive oil and add the chopped tomatos. Season with salt and pepper, bring to a boil and add the fishballs. Leave to simmer for 20mins. Add the peas, cook for 10mins and serve the fishballs with plain rice.

(scroll down for English)

Canela a gosto

On a day where everything is thought for moments for two, we think about the solitary moments. Just because not all our meals are with company. Many times we find ourselves on the couch grabbing something quick to eat. On those days we don't even feel like cooking at all and we try to ease our hunger with somethings quick, easy and painless. On a day where everything is thought for two, we think about those who are just one.

1 persimmon
Cinnamon to taste

2 slices homemade whole bread
Garlic and herbs cheese spread
3 peppers cheese spread

The weekend slowly lies ahead. Firtly, it looks far away but when we realize, here it comes, foot by foot, to meet us. And when it surprises us like that there's nothing better than welcoming it with a cake, still steamy, of warm and spicy flavours. Who wouldn't want to be greeted like that? Please be welcome Mr. Weekend :)

Picadinho de carne com puré caseiro

Lembram-se das beringelas recheadas? Pois bem.

Ralar noz-moscada, adicionar pimenta a gosto e mexer bem. Provar e rectificar os temperos, se necessário. Entretanto, aquecer o picadinho e servir com o puré.
